Number Of Ingredients 9

2 tablespoons finely chopped scallion (white and light green parts only)
Juice of 2 limes
1 anchovy fillet, finely chopped
1 teaspoon capers, finely chopped
1 1/2 cups cilantro leaves, finely chopped
1/4 cup tarragon leaves, finely chopped
1 medium jalapeño, seeded and finely chopped
1/4 cup plus 2 tablespoons extra-virgin olive oil
1/4 teaspoon kosher Salt

Steps:

  • In a medium bowl, mix the scallion with the lime juice and let stand for 10 minutes. Add the anchovy and capers and mash slightly with a fork. Stir in the cilantro, tarragon, jalapeño and olive oil. Season with salt and serve.
  • The salsa verde can be refrigerated overnight.

2 cups mixed fresh herbs, such as basil, parsley, and cilantro
1 garlic clove
1 1/4 teaspoons red-wine vinegar
2 tablespoons capers, rinsed and drained
3 anchovy fillets
1/2 cup extra-virgin olive oil
Coarse salt and ground pepper

Steps:

  • In a food processor, combine herbs, garlic, and vinegar; if desired, add capers and anchovy fillets. Pulse until coarsely chopped, 20 seconds. Transfer to a small bowl and stir in olive oil. Season with salt and pepper.

1 beef flank steak or top sirloin steak, 1 inch thick (about 1-1/4 pounds)
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup salsa verde
1/2 cup fresh cilantro leaves
1 medium ripe avocado, peeled and diced
1 medium tomato, seeded and diced

Steps:

  • Sprinkle steak with salt and pepper. Grill steak, covered, over medium heat or broil 4 in. from heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 160°), 6-9 minutes per side. Let stand 5 minutes., Meanwhile, process salsa and cilantro in a food processor until blended. Slice steak thinly across the grain; serve with salsa mixture, avocado and tomato.

Classic and easy salsa verde that can be thrown together quite quickly. Great for cooking as well as dipping. Don't mistake the ease of the recipe for lack of flavor, as real spice lovers will appreciate the simplicity in taste! I am VERY generous with cilantro and also like to keep many of the seeds. 8 small tomatillos
1/2 cup chopped cilantro
2 cloves garlic, chopped
1/2 large white onion
1 lime, juice of
4 serrano peppers (or 2 jalepenos for less spicey version)

Steps:

  • Chop all ingredients by hand or in food processor.
  • Food processor gives less chunky version, which is easiest to cook with.
  • Squeeze in juice of lime and mix thoroughly.
  • Use for cooking, to top your favorite dishes or for dip.

2 garlic cloves
1/2 cup olive oil
3 teaspoons lime juice
1/4 teaspoon cayenne pepper
1/2 teaspoon ground coriander
Salt, to taste

Steps:

  • For a thicker sauce, chop cilantro and garlic and place in a blender. Puree with 1/4 cup water and the oil. Add lime juice, cayenne pepper, coriander and salt.
  • For a thinner sauce, chop cilantro and garlic very finely. Then stir in 1/4 cup water, oil, lime juice, cayenne pepper, coriander and salt.
  • The emulsified version can be served as a dip with pita bread. Serve the thinner version with fried halloumi or other fried cheese, vegetable fritters or with a salad.

  • In a blender combine the garlic, shallot, poblano, parsley, cilantro, oil, and lemon juice. Blend until smooth. Season with the salt and pepper.

1 whole fresh jalapeno pepper (seeded after roasting)
3/4 cup fresh cilantro leaves (1 bunch without stems)
2 tablespoons fresh key lime juice
1 teaspoon kosher salt
1 teaspoon sugar
1/4 medium onion
1 small garlic clove
1 -2 drop liquid smoke (adds smoky flavor to fresh method, measure carefully into a spoon first)

Steps:

  • FIRE-ROASTED METHOD: Fire-up the broiler; REMOVE tomatillo husks and rinse with warm water; remove stems from fresh jalapeno peppers.
  • ARRANGE whole tomatillos and whole jalapeno pepper(s) on a broiler pan.
  • BROIL until just lightly charred on top surface.
  • REMOVE broiler pan when tomatillo skins are just lightly charred and split: USE a spoon or spatula to remove from broiler pan.
  • SQUEEZE 2 tablespoons juice from kneaded fresh Key limes; remove leaves from 1 bunch fresh cilantro to make 3/4 cup.
  • PLACE tomatilloes and desired remaining ingredients into a food processor.
  • PROCESS until smooth.
  • ADJUST to personal taste, if desired. It is now ready to serve, but may be simmered if desired to mellow flavor.
  • SERVE any way you like.
  • SNAP your fingers and shout,"OLE"!

3 pounds tomatillos, husked, rinsed
2 large jalapeño chiles, stems removed
5 small garlic cloves, peeled
1 1/2 teaspoons ground cumin
1 1/2 bunches fresh cilantro, thick bottom stems trimmed
3/4 cup loosely packed fresh Italian parsley leaves
1/3 cup (packed) fresh mint leaves
1 1/2 tablespoons vegetable oil
1 1/2 teaspoons salt

Steps:

  • Mix first 2 ingredients in large saucepan. Cover with water. Bring to boil. Reduce heat; simmer until soft, about 15 minutes. Remove from heat; let stand 15 minutes. Drain.
  • Coarsely chop tomatillo mixture, garlic, and cumin in processor using on/off turns. Add next 3 ingredients; blend until herbs are chopped and salsa is chunky.
  • Heat oil in heavy large saucepan over medium heat. Add salsa and simmer until slightly thickened and reduced to 4 cups, about 10 minutes. Stir in salt.

  • After you’ve removed the husks and washed your tomatillos, score the bottom of the tomatillos with an X to help them cook evenly. Place the tomatillos, scored side up, on a baking tray with the Anaheim chili, onion, cayenne pepper, and serrano pepper. Drizzle them with avocado oil and toss around so they don’t stick to the pan and place them into the oven. Broil for 7-10 minutes or until the peppers and tomatillos are looking browned. Remove them from the oven and if the peppers are brown and blistered take them off the tray and set aside. If not, filp all the ingredients and place them back in the oven for another 7-10 minutes or until the tomatillos are very soft.
  • Once the peppers are cool enough to handle, remove the skins, which should slide right off. If you like hot salsa, add them straight to the blender with their seeds. If you prefer medium salsa, cut the peppers open and remove half of the seeds with a spoon. If you like mild salsa, remove all of the seeds.
