SAVORY SAUSAGE AND CHEDDAR BREAD PUDDING
A holiday favorite, this make-ahead breakfast casserole brimming with sausage and sharp cheddar is perfect for feeding a crowd.

Steps:
- Grease a 9 x 13-inch baking dish with butter.
- In a large sauté pan (preferably nonstick) over medium-high heat, melt 1 tablespoon butter. Add the sausage and cook, stirring with a wooden spoon to break the meat into small clumps, until browned, about 10 minutes. Transfer the sausage to a large mixing bowl, leaving the fat in the pan.
- Turn the heat down to medium, then add the onions to the pan along with 1 tablespoon of butter. Cook the onions, stirring constantly, until soft and translucent, about 5 minutes. Add the onions to the mixing bowl with the sausage, along with the bread cubes, grated cheese and parsley. Toss well, then spread the mixture evenly into the prepared baking pan.
- In a medium bowl, whisk together the eggs, half-and-half, salt and pepper.
- Pour the egg mixture evenly over the bread mixture. Cover tightly with saran wrap and refrigerate for at least a few hours or overnight.
- Preheat the oven to 350°F. Bake for about one hour, uncovered, until puffed and golden brown. Serve immediately.
- Note: The cook time is based on cooking the bread pudding directly out of the refrigerator. If it's left to sit out at room temperature before baking, check for doneness after 45 minutes.

SIMPLE AND RUSTIC SAVORY BREAD PUDDING
This rustic bread pudding goes really well with a raw veggie salad on a crisp bed of lettuce. Feel free to add anything else you would like to have in it. Any hard cheese of your liking that can be grated...oh wait...and maybe dollops of goat cheese...oh my...have fun!

Steps:
- Saute onion in butter until slightly cooked. Add garlic and cook for 2 minutes. Set aside to cool slightly.
- In large bowl, whisk the eggs.
- Add the milk, wine or broth, and whisk again.
- Tear the buns into medium to large pieces and add into the milk mixture.
- Soak for 5 minutes.
- Add the onion mixture, cheeses, dijon, paprika, cayenne and salt/pepper.
- Grease a casserole dish or deep pie plate.
- Bake at 325 degrees for 35 minutes or so.

SAVORY BACON AND CHEESE BREAD PUDDING
Steps:
- Preheat the oven to 350°F.
- Cut the bread into cubes and place the cubes in a single layer on a large baking sheet. Bake for 5 minutes, until just barely toasted. Remove the bread cubes from the oven and set aside.
- Cook the bacon in a skillet over medium heat until very crisp. Remove the bacon to a paper towel-lined plate and set aside.
- Reserve 2 tablespoons of the bacon fat and discard the rest. Add the butter to the bacon fat in the skillet and sauté the garlic and onions for 10 minutes, or until lightly browned. Set aside to cool.
- Whisk the eggs and cream in a large mixing bowl. Add the bread cubes, bacon, garlic and onions, and 2 cups of the Cheddar cheese. Whisk in the salt, pepper, and parsley.
- Butter a 9 x 13 x 2-inch baking pan. Pour the mixture into the pan and sprinkle the top with the remaining 1 cup Cheddar cheese. Bake for 45 minutes, or until firm and brown.

- In a large saucepan over medium heat, melt butter, add diced slices of bread, stirring until coated.
- Add grated Cheddar cheese; stir well.
- Set aside.
- In a medium bowl, with a wire whisk combine milk, egg yolks, salt, dry mustard, worsteshire sauce and cayenne pepper.
- Beat well.
- Pour over the bread cubes.
- In another bowl beat egg whites until stiff, but not dry, fold into bread mixture, toss until mixed.
- Spoon into a lightly greased 9-inch square baking dish.
- Cover and chill overnight.
- Bake, uncovered at 325 for 30 minutes, or until the center is set.
- Serves 6.
