This is a wonderful comfort food and has become one of my family's favorite pork chop recipes --- you may season the breadcrumbs anyway desired adding in Parmesan cheese to your breadcrumb mixture will only improve the flavor --- depending on the size of your pork chops one more won't hurt if you have the room in your baking pan, and baking time will vary depending on the thickness, do not use fast-fry for this -- this is *very* good!

6 pork chops (do not use fast-fry pork chops)
1 teaspoon seasoning salt
1 -2 teaspoon garlic powder
2 large eggs, beaten
1/3 cup all-purpose flour
2 cups seasoned dry bread crumbs (see Kittencal's Seasoned Dry Italian Breadcrumbs)
2 tablespoons oil
2 tablespoons butter
2 (10 3/4 ounce) cans cream of mushroom soup, undiluted
1 (10 ounce) can sliced mushrooms, well drained
3/4 cup milk
1/3 cup dry white wine (can use a few tablespoons more)
1/2 teaspoon fresh ground black pepper
1 pinch cayenne pepper (optional)
1/3 cup grated parmesan cheese (optional)

Steps:

  • Grease a 13 x 9-inch baking dish.
  • Pat the pork chops dry using paper towels, then season with seasoned salt and garlic powder pepper.
  • Place the eggs in a bowl, then flour in another bowl and the breadcrumbs in another bowl.
  • Heat oil and butter in a skillet over medium heat.
  • Dredge the pork chops firstly in flour then in eggs allowing any excess egg to drip off.
  • Lastly coat in seasoned breadcrumbs.
  • Brown the pork chops in hot oil about 4-5 minutes per side or until the breading is light golden brown.
  • Transfer the chops to the baking dish.
  • Cover with foil.
  • Set oven to 350 degrees F.
  • Bake for about 1 hour.
  • Meanwhile in a bowl combine cream of mushroom soup with sliced mushrooms, milk, white wine, black pepper and cayenne pepper (if using).
  • After the 1 hour baking pour the mushroom gravy over the pork chops, then sprinkle with Parmesan cheese.
  • Replace the foil and bake for another 25-30 minutes or until chops are tender.

¾ teaspoon coarse kosher salt, divided
4 small boneless pork loin chops, about 1 ½ pound
2 teasopoons canola oil
1 shallot, minced
2 cloves garlic minced
½ teaspoon dry thyme
1 8-ounce package mushrooms, finely diced
½ teaspoon chopped rosemary
2 tablespoons dry vermouth or white wine
¼ teaspoon freshly ground pepper
2 tablespoons flour
1 ¼ cup reduced-sodium chicken broth
¼ cup half-and-half

Steps:

  • Pat pork dry with paper towels. Sprinkle ¼ teaspoon salt over pork. Heat oil in a large skillet over medium high heat. Add the pork chops and cook until just browned, 2 to 3 minutes. Flip over and cook 2 to 4 minutes longer until the bottom is browned. Set pork on a plate and tent with foil to keep warm.
  • Return the skillet to medium heat. Add shallot, garlic, thyme and the remaining ½ teaspoon salt. Cook, stirring constantly until fragrant and starting to brown, 20 to 45 seconds. Add mushrooms and rosemary and stir to coat with the shallot mixture. Cook, stirring often until the mushrooms have released their juices and the juices have evaporated and the mushrooms have started to brown, about 7 minutes.
  • Add vermouth and pepper and cook, stirring until the liquid has evaporated, 1 to 3 minutes. Sprinkle flour over the mushroom mixture and stir to coat. Add broth and cook, stirring until the flour has dissolved into the broth. Increase heat to medium-high, and bring to a simmer, stirring often until the sauce is thickened. Add the pork back to the skillet and turn to coat in the sauce. Heat the pork, turning often, in the sauce until it is hot and just barely pink in the center, 1 ½ to 3 minutes. Transfer the pork to 4 plates. Stir the half and half into the gravy. Spoon the gravy over the pork chops.

1 tablespoon butter
1 clove garlic, pressed
6 pork chops
salt and pepper to taste
1 (8 ounce) can mushrooms, drained
1 cup dry sherry
1 (10.5 ounce) can beef broth
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt the butter in a large skillet over medium heat. Add garlic, and saute until fragrant. Season pork chops with salt and pepper, then fry them in the skillet just until browned on both sides, about 3 minutes per side. Remove the pork chops to a baking pan or Dutch oven.
  • Pour the mushrooms into the skillet with the pork drippings and garlic, and stir in the sherry and beef broth, scraping any bits of pork that are stuck to the pan. Bring to a boil, then pour over the pork chops in the baking pan. Cover with a lid, or aluminum foil.
  • Bake for 45 minutes in the preheated oven, then remove the lid or foil, and continue to bake for another 15 minutes. Remove the chops from the pan to a serving platter, and place the dish on the stove over medium heat. Stir together the cornstarch and water. When the juices in the pan come to a boil, slowly stir in the cornstarch mixture and cook until thickened, about 2 minutes. Spoon sauce over the chops, and serve.

  • In a large skillet, brown pork chops in 2 tablespoons butter for 2-3 minutes on each side. Remove and keep warm. , Toss mushrooms with lemon juice. 1 tablespoon dried marjoram
1 (10.75 ounce) can condensed cream of mushroom soup
¾ cup water
1 teaspoon salt
½ teaspoon ground black pepper
1 onion, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a small amount of oil in a large skillet, add chops and brown on both sides. When chops are almost done, sprinkle marjoram on both sides.
  • Stir together half the can of soup, water, salt and pepper. Pour into a foil-lined 9x13 inch baking pan.

4 bone-in pork chops
1 teaspoon garlic salt
1 teaspoon ground black pepper

2 tablespoons water

Steps:

  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Sprinkle pork chops with garlic salt and black pepper. Fry pork chops in the hot oil until browned, 5 to 8 minutes per side. Transfer chops to a plate.
  • Heat 1 tablespoon olive oil in skillet; cook and stir mushrooms in the hot oil until soft, 5 to 8 minutes. Scrape up and dissolve any browned bits of food into mushrooms as you stir. Pour golden mushroom soup and water into skillet and stir into mushrooms.

  • Combine bread crumbs and Parmesan cheese in a large resealable plastic bag. Add chops two at a time, and shake to coat.

1 tbsp olive oil
1 tbsp butter
1.5 cups mushrooms (sliced)
1/2 yellow onion (sliced)
1 tbsp all purpose flour
1/2 cup chicken broth
1/2 cup heavy cream
2 tsp Worcestershire sauce
1 tsp Dijon mustard
1 tsp fresh thyme (stems removed; optional for garnish)
1 tsp flat leaf parsley (chopped; optional for garnish)

Steps:

  • Pat 4 pork chops (bone-in or boneless) dry and season generously with salt and pepper on both sides.
  • Heat 1 Tablespoon olive oil and 1 Tablespoon butter in a large skillet over medium-high heat. When the butter melts, add the pork chops and sear for 5 minutes on each side (less for boneless). Remove from the pan and set aside.
  • Without cleaning the pan, add 1 1/2 cups sliced mushrooms and 1/2 a sliced yellow onion and cook until golden brown and caramelized. Add a little more oil if the pan is too dry.
  • Once browned, add 1 Tablespoon all-purpose flour and stir to coat. Cook for 1-2 minutes more.
  • Add 1/2 cup chicken broth, 1/2 cup heavy cream, 2 teaspoons Worcestershire sauce, and 1 teaspoon Dijon mustard to the pan. Whisk gently until it thickens.
  • Add salt and pepper to taste, then place the pork chops back into the pan and cover with the gravy. Allow to heat through.

4 (3/4-inch thick) boneless pork loin chops
2 teaspoons Kosher salt, separated
1 teaspoon garlic powder
1/2 teaspoon black pepper, plus a generous pinch, separated
3 tablespoons canola or avocado oil, separated
3 tablespoons unsalted butter
1 small yellow onion, finely chopped
1 (8-ounce) package sliced button mushrooms
1/3 cup all-purpose flour
2 cups low-sodium chicken broth
1/3 cup heavy whipping cream
2 teaspoons soy sauce

Steps:

  • Pat the pork chops dry with a paper towel and set them aside. Combine 1 1/2 teaspoon salt, the garlic powder, and 1/2 teaspoon pepper in a small bowl and mix.
  • Drizzle the pork chops evenly with 1 tablespoon of oil and rub all over. Then, add the seasoning and rub all over to adhere once more to adhere.
  • Add the remaining 2 tablespoons of oil to a large sauté pan over medium-high heat and allow to come to temperature.
  • Add the pork chops to the pan and cook for 2 1/2 minutes on the first side or until golden-brown. Then, flip and sear and 2 minutes more. Remove from the pan and set aside.
  • Reduce the heat to medium and add the butter. As the butter melts, use it to scrape up any browned bits from the bottom of the pan. Do not allow the butter to burn.
  • As soon as it has melted, add the mushrooms and the diced onions. Sauté about 6-8 minutes, stirring often until the mushrooms and onion are cooked through.
  • Sprinkle the flour across the onions and mushrooms and stir until evenly coated.
  • Add in the chicken broth one big splash at a time, whisking well after each addition. Once all of the broth has been incorporated, add the cream, soy sauce, 1/2 teaspoon Kosher salt, and a generous pinch of black pepper. Stir to combine.
  • Reduce the heat to maintain a slow simmer and add the pork chops back into the pan. Simmer for an additional 8-10 minutes, turning the pork chops half-way through the cooking. Once the pork chops have finished cooking, serve and enjoy.

4 pork chops, center cut, 1 1/2-inches thick
3/4 cup flour
4 tablespoons oil
3 cups chicken broth
1 cup onion, julienned
1 cup mushroom, sliced
4 tablespoons cornstarch
3 tablespoons water
salt and pepper, to taste
1/2 cup butter
1 medium onion, minced
6 slices bacon, chopped
1 stalk celery, minced
1/2 cup fresh spinach, chopped
1 medium apple, diced
2 1/2 cups chicken broth
1/2 tablespoon poultry seasoning
1/2 cup raisins (optional)
3 cups stuffing cubes
salt and pepper, to taste

Steps:

  • To prepare pork chops for stuffing, make a 2-inch-wide slit on edge of chop opposite the bone and cut into center, making a deep enough pocket to hold stuffing in the middle of each chop. Set aside.
  • To make stuffing, saute minced onions, bacon, celery, spinach and apples in butter until onions look translucent. Add chicken broth and poultry seasoning and bring to a boil. Add raisins and cook 3 minutes, or until soft. Remove from heat. Add croutons, or stuffing mix, stir, season with salt and pepper and set aside until cooled to room temperature.
  • Divide stuffing into four equal portions and stuff pork chops. Season stuffed chops with salt and pepper and dust with flour.
  • In a pan large enough to hold the 4 chops, heat oil on medium high heat and brown the chops (about 2 to 3 minutes on each side), then reduce heat to medium. Add chicken broth, julienned onions, and mushrooms. Bring to a boil, then cover with foil, or an oven-proof lid, and bake in 350ºF oven for 35 to 40 minutes. Remove pork chops when done and keep warm while making pan gravy.
  • Place pan with drippings on medium heat and skim off fat. Bring to a boil, then reduce to simmer. Thicken with cornstarch/water mixture by adding gradually until gravy reaches the consistency you like.

1 tablespoon flour (leftover from dredging)

Steps:

  • Heat olive oil in large fry pan.
  • Add onion and cook 5 minutes then add mushrooms and cook 2-3 minutes.
  • Add garlic and cook 1 minute.
  • In the meantime, mix the self rising flour with salt and pepper to taste in a shallow dish and dredge the chops. Save 1 tablespoon of the flour for later.
  • With a slotted spoon, remove the veggies from the pan and set aside.
  • Brown the chops about 2-3 minutes each side and remove from the pan.
  • Return the veggies to the pan, add the chicken stock and place the chops on top, moving them around so they become immersed in the liquid.
  • Bring to a boil then lower the heat. Cover and simmer 10-15 minutes until pork is tender.
  • Remove pork to a plate and keep warm.
  • Mix the leftover tablespoon of dredging flour with the cold water and stir into the pan until thickened.
  • Spoon gravy over chops to serve.

This is my Grandma's recipe that she gave me when I got married. Pork chops are baked the served with a rich mushroom sauce, It takes a little bit of work, but is great for special dinners - my husband loves it!

1 tablespoon butter
1 clove, galic pressed
6 pork chops
salt, to taste
pepper, to taste
1 (8 ounce) can mushrooms, drained
1 cup dry sherry
1 (10 1/2 ounce) can beef broth
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Preheat the oven to 350°F (175°C).
  • Melt the butter in a large skillet over medium heat. Add garlic, and saute until fragrant. Season pork chops with salt and pepper, then fry them in the skillet just until browned on both sides, about 3 minutes per side. Remove the pork chops to a baking pan or Dutch oven.
  • Pour the mushrooms into the skillet with the pork drippings and garlic, and stir in the sherry and beef broth, sraping any bits of pork that are stuck to the pan. Bring to a boil, then pour over the pork chops in the baking pan. Cover with a lid, or aluminum foil.
  • Bake for 45 minutes in the preheated oven, then remove the lid or foil, and continue to bake for another 15 minutes. Remove the chops from the pan to a serving platter, and place the dish on the stove over medium heat. Stir together the cornstarch and water. When the juices in the pan come to a boil, slowly stir in the cornstarch and water. When the juices in the pan come to a boil, slowly stir in the cornstarch mixture and cook until tickened, about 2 minutes. Spoon sauce over the chops, and serve.
  • NOTE: If you do not have a metal pan or small roasting pan, you could pour the juices back to the skillet for makimg the gravy,.

1 ½ pound venison chops (cut into 1 ½ inch pieces)
1 tablespoon soy sauce
1 teaspoon sugar
1 ¾ cups beef broth
¼ ounce dried Shiitake mushrooms
1 pound white mushrooms (sliced ¼ inch thick)
Salt and pepper
2 tablespoons vegetable oil
1 large onion (sliced thin)
4 teaspoons all-purpose flour
1 garlic clove (minced)
¼ teaspoon thyme

Steps:

  • Combine sugar and soy sauce into a medium-size bowl. Toss the venison in the mixture coat and marinate 30 minutes to one hour; tossing occasionally.
  • While venison is marinating place ¼ cup beef broth into a small microwaveable bowl along with the dried mushrooms. Microwave for about 1 minute or until mixture is steaming, cover, and let the mushrooms set until softened. Place a coffee filter into a strainer and drain the liquid though the filter. Reserve the liquid, chop the mushrooms and set them aside separately.
  • Drain any leftover marinate from the chops if necessary. Season the chops with ½ teaspoon pepper. In a large skillet over medium-high heat using 1 tablespoon of the vegetable oil cook the chops until well browned and almost done. Remove the chops to a platter and set aside.
  • In the same skillet over medium-high heat add the other tablespoon of oil, white mushrooms, minced shiitake mushrooms, and ¼ teaspoon salt. Cook string frequently until all liquid is evaporated and mushrooms start to brown. Add the onion and another ¼ teaspoon salt to the mushroom mixture and cook stirring frequently until onion is soft, and starts to brown.
  • Add the flour, garlic, thyme, and continue cooking and stirring until mixture is coated with the flour. Add the remaining broth, and the liquid set aside from the dried mushrooms. Stir to release any dripping from the bottom of the pan. Arrange the chops into the onion and mushrooms along with any juices that settled on the bottom of the platter. Cook over medium-low heat until juices have thickened and chops are cooked to desired doneness. (When I browned the chops I cooked them to the desired done-ness I wanted so they just had to be heated through in the mushroom-onion mixture)
  • Serve over noodles or mashed potatoes

I came up with this recipe because mom likes "soup food", and I get bored with it. Opened the cupboard and fridge and thought blue cheese and nutmeg sounded like they might work together. It sounds weird, but it tastes really good! The blue cheese adds just a little bit of tanginess to contrast with the sweetness from the nutmeg and garam masla (I used a store bought blend from McCormick - how authentic, who knows, but it tastes good!). I also used a cast iron skillet, which browns the meat very well.

2 thick pork chops, bone in is best
1 can cream of mushroom soup
1 jar of baby white pearl onion
1/2 pint sliced fresh mushrooms
3 tablespoons crumbled blue cheese
2 tablespoons butter
2 tablespoons butter
1 teaspoon nutmeg
2 teaspoons garam masala
1 tablespoon onion powder
salt, to taste
pepper, to taste

Steps:

  • Slice mushrooms.
  • On med-high heat, saute in 2 Tbls.
  • butter until cooked through.
  • As mushrooms are cooking, season both sides of the pork chops with the spices evenly and rub the spices into the chop.
  • Remove the cooked mushrooms from the pan.
  • Add the second 2 Tbls.
  • butter and allow to melt, but not smoke.
  • On med-high heat, brown chops well on both sides.
  • Remove from pan; reduce heat to medium.
  • Add cream of mushroom soup and the jar of baby pearl onions WITH the juice to the pan.
  • Stir well, scraping the fond (little brown bits) off the bottom of the pan.
  • Stir in the cooked mushrooms and blue cheese.
  • Continue stirring until the cheese in melted and thoroughly incorporated.
  • Add chops back to pan and simmer in sauce for 20 minutes.
  • Serve with noodles or rice and a vegetable.

3 cloves garlic, thinly sliced

Steps:

  • Season the pork chops with salt and pepper; sprinkle all over with 1 1/2 tablespoons flour. Heat 1/2 tablespoon olive oil in a large nonstick skillet over medium-high heat.   • First, preheat your oven to 350 degrees Fahrenheit
  • Season both sides of your pork chops with salt and pepper

  • Sear the pork chops for 3 to 4 minutes on each side. For thicker pork chops (over 1 inch thick), transfer them to a 9 by 13 baking pan to finish cooking in the preheated oven. Cook until the pork chops reach an internal recipe of 145 degrees (about 15 minutes).
  • To the skillet, add olive oil, onion, and sliced mushrooms. Sauté the mushrooms and onions for 5-7 minutes until soft and translucent.
  • Add in the garlic and butter and cook for another 60 seconds
  • Lightly sprinkle the flour into the skillet and stir for about 1 minute until all of the white flecks of flour have disappeared. Add in the 2 cups of chicken broth and bring the skillet to a simmer, stirring the sauce until it thickens.
