5 medium fresh beets (about 2 pounds without tops)
Kosher salt
2 cups chicken stock, preferably homemade
16 ounces sour cream, plus extra for serving
1/2 cup plain yogurt
1/4 cup sugar
2 tablespoons freshly squeezed lemon juice
2 teaspoons Champagne vinegar
1 1/2 teaspoons freshly ground black pepper
2 cups medium-diced English cucumber, seeds removed
1/2 cup chopped scallions, white and green parts
2 tablespoons chopped fresh dill, plus extra for serving

Steps:

  • Place the beets in a large pot of boiling salted water and cook uncovered until the beets are tender, 30 to 40 minutes. Remove the beets to a bowl with a slotted spoon and set aside to cool. Strain the cooking liquid through a fine sieve and also set aside to cool.
  • In a large bowl, whisk together 1 1/2 cups of the beet cooking liquid, the chicken stock, sour cream, yogurt, sugar, lemon juice, vinegar, 1 tablespoon salt, and the pepper. Peel the cooled beets with a small paring knife or rub the skins off with your hands. Cut the beets in small to medium dice. Add the beets, cucumber, scallions, and dill to the soup. Cover with plastic wrap and chill for at least 4 hours or overnight. Season, to taste, and serve cold with a dollop of sour cream and an extra sprig of fresh dill.

1 pound beets, peeled and cut into 1/2-inch pieces
2 plum tomatoes, chopped
1 small clove garlic, minced
Pinch of ground cloves
2 cups low-sodium chicken broth
Kosher salt and freshly ground pepper
1 1/4 cups plain whole-milk yogurt
1 tablespoon horseradish
Fresh dill or mint, for topping

Steps:

  • Combine the beets, tomatoes, garlic, cloves, 4 cups water, the chicken broth, 1/2 teaspoon salt and a few grinds of pepper in a pot. Bring to a boil, then reduce the heat to medium low; simmer until the beets are tender, about 30 minutes.
  • Working in batches, puree the soup in a blender until smooth; transfer to a large bowl. Whisk in 1/2 cup yogurt and season with salt and pepper. Let the soup cool slightly, then cover and refrigerate until cold, about 2 hours.
  • Mix the remaining 3/4 cup yogurt with the horseradish in a small bowl; season with salt. Thin the soup with a little water, if necessary. Serve in shot glasses; top with the horseradish yogurt and dill.

1 pound beets with greens (about 2 medium beets)
Kosher salt
2 Kirby cucumbers, peeled, coarsely grated (about 1 cup)
1 kosher dill pickle, coarsely grated (about 1/2 cup), plus 1/2 cup pickle brine
1 1/2 cups buttermilk or kefir (preferably low- or full-fat)
3/4 cup sour cream
2 tablespoons chopped scallions
Freshly ground black pepper
4 hard-boiled eggs, halved
4 teaspoons finely chopped dill

Steps:

  • Using a large knife, separate greens and stems from beets. Thoroughly wash greens and stems; set aside. Scrub beets, transfer to a medium pot, and cover with 1" water. Cover pot and bring to a boil. Reduce heat to medium, uncover, and cook until beets are tender when pierced with a knife, about 10 minutes. Drain beets; discard cooking liquid. Let cool.
  • Meanwhile, chop beet greens and stems. Transfer to a large pot and add 1/2 tsp. salt and 4 cups water. Bring to a boil, then reduce heat to medium and simmer, without boiling, until greens are tender, about 5 minutes. Let cool to room temperature, about 30 minutes.
  • Peel and coarsely grate beets, preferably wearing gloves. Add to pot with cooled greens. Gently stir in cucumbers, pickle, pickle brine, buttermilk, sour cream, and scallions. Season with salt and pepper.
  • Cover pot and chill soup at least 30 minutes. Adjust seasonings, if desired. Divide soup among bowls; top with eggs and dill.

  • Soup can be made 2 days ahead; cover and chill.

My version of a lithuanian cold beet soup. There is nothing better on a hot day. Needs to be served ICE cold (sometimes we even float a few ice cubes in it!) The color is a little unusual, but once you give it a try,the first hot day of summer you'll be thinking...It's time for that pink soup...

28 ounces canned beets
1 large cucumber
2 tablespoons white vinegar
1 1/2 cups sour cream
2 teaspoons dried dill weed

Steps:

  • Drain beets, reserving liquid.If using whole or sliced beets, slice into matchstick pieces.Peel and dice cucumber. (I like fairly large dice.).
  • Hold back about 3/4 cup of julianned beets in a seperate bowl.Add remaining beets and chopped cucumber to a large bowl. Add reserved beet juice,14 oz. of water and 2 tablespoons vinegar.
  • Stir about 1/2 cup of sour cream into the beets you held in the seperate bowl.(this process keeps the sour cream from "breaking up" in the soup and making lumps.)Stir until the sour cream/beet mixture is smooth. Add another 1/2 cup of sour cream. Stir until smooth. Add 1/4 cup of the beet juice from the large bowl and stir until smooth.Stir in the last 1/2 cup of sour cream. Mixture should be without lumps (sour cream should be liqified.)This seems complicated, but once you get the hang of it, it goes quite quickly.
  • Add the beet/sourcream mix to the large bowl and stir to combine. At this point, taste to see if the level of vinegar is to your liking, if not add a little more.
  • Add the dried dill. The 2 tsp is a good place to start, but I usually add more.
  • Cover and chill at least 2 hours.Serve in chilled bowls. My mom adds chopped hard boiled eggs to this soup, so if you want to give that a try it's up to you,.

This Cold Beet Soup aka Cold Borscht is perfect on a hot lazy summer day. It is guaranteed to freshen you up and is really easy to make!

1 quart (liter) kefir, or buttermilk, or 2 parts buttermilk 1 part plain yogurt
2 cups (500ml) water
3 small boiled beets (, grated)
2 small cucumbers (, peeled (if the skin is too thick) and coarsely chopped)
2 eggs (, hard boiled)
handful of scallions (, finely chopped)
splash of lemon juice or vinegar
pinch of salt
pinch of sugar
handful of chopped dill
boiled dill potatoes (, for serving (optional))

Steps:

  • In a pot, add the beets, cucumbers, kefir and water. Add the dill, and stir. Taste and season with salt and pepper. Add a splash of vinegar or lemon juice if required. Refrigerate for few hours.
  • Serve the soup in a bowl with some quartered or chopped boiled egg. Don't add eggs to the pot, because they will soak up the pink color. Sprinkle the scallions on top. Enjoy!

This is a wonderful recipe for hot summer days!. Got this off a www.finecooking.com a wonderful recipe website. Made a little variation from the original since it includes horseradish and I'm not a fan of horseradish. My mother and my grandmother absolutely love this recipe and it keeps for up to five days in the refrigerator. If you love soup creams, orange and sweet beet flavors this is a keeper!

4 -5 medium beets, well scrubbed
4 garlic cloves
3 orange zest, 3 inches long
3 fresh thyme sprigs
2 tablespoons olive oil
2 1/2 cups canned chicken broth
2 teaspoons honey
1/3 cup fresh orange juice
2 tablespoons red wine vinegar
salt & freshly ground black pepper
6 teaspoons sour cream, for garnish

Steps:

  • Heat the oven to 375°F Put the beets and garlic on a large sheet of aluminum foil. Scatter on the orange zest and thyme, season with salt and pepper, and drizzle with the olive oil. Fold up the sides of the foil and crimp to make a tight packet. Put over a baking sheet and get it into an oven for 1 hour.
  • Open the packet and check the beets for tenderness by piercing each beet with the tip of a sharp knife and set aside for 20 minutes. If the beets are hard after piercing, continue baking until tender.
  • Using a tough paper towel, rub the skin off the beets using both hands and cut them into chunks. Peel the baked garlic cloves and discard the thyme springs and the orange zest, saving any juices in the foil.
  • Drop one third of the beet chunks, the garlic, and any juice collected in the foil, some of the honey and chicken broth. Enough to make a smooth puree while blending. Transfer to a soup container. I recommend doing this part in batches, so the puree can blend better.
  • When you are done pureeing, add the orange juice and red wine vinegar, and stir. Also, season to taste with salt and pepper. I like this soup a little tangy so I add a little more of the red wine vinegar.
  • Refrigerate the soup for at least 4 hours or until really chilly, serve in soup bowls or cups with 1 tsp of sour cream and ENJOY!

Lycopene is part of the carotenoid family and gives tomatoes, bell peppers, watermelon and other red vegetables and fruits their color. It's much heralded for its antioxidant properties in the body, meaning it can search for and stabilize damaging free radicals. The body best absorbs lycopene when combined with a little fat, so toss fresh tomatoes with olive oil or add grated Parmesan to your spaghetti with tomato sauce. Betalain is also one of nature's red pigments and is found primarily in red beets and red Swiss chard. Studies have indicated that it also has antioxidant properties and suggest that betalain is better absorbed when paired with vitamin C (the red bell pepper in this soup will help on that front).

6 sun-dried tomatoes, plus 1 tablespoon finely diced
Large pinch hot paprika
1/2 cup jarred sliced pickled beets, plus 1/3 cup pickled beet juice
1/2 cup drained roasted red peppers, plus 1 tablespoon finely diced
1 small clove garlic
Kosher salt
1 medium ripe tomato, chopped
Store-bought beet chips, for garnish, optional
Sour cream or yogurt, for garnish, optional

Steps:

  • Combine the oil, sun-dried tomatoes and paprika in a small skillet. Bring to a low simmer over medium-low heat and swirl until the tomatoes soften, 2 to 3 minutes. Set aside to cool completely.
  • Combine the sun-dried tomatoes and oil with the beets and beet juice, peppers, garlic and 3/4 teaspoon salt in a medium bowl. Let sit at room temperature for at least 30 minutes for the flavors to meld. Puree in a blender with 1 cup cold water until very smooth. Transfer to a bowl or large liquid measuring cup and refrigerate until chilled, at least 1 hour.
  • Divide the soup evenly among four bowls. Sprinkle the chopped sun-dried tomatoes and peppers in each bowl. Garnish with beets chips and a dollop of sour cream, if using.

I have modified this soup from a recipe I got from a blender book. Canned beets are great for this recipe. You can save the juice from the canned beats, freeze it and add it in place of the chilled water or ice. Try serving with a dollop of sour cream.

1 pound roasted or boiled red beets, coarsely chopped
1 cup light coconut milk
2 teaspoons fresh lime juice
1 teaspoon finely grated peeled ginger
1 teaspoon kosher salt
Freshly ground black pepper
4 teaspoons nonfat plain Greek yogurt
4 teaspoons salted, roasted pepitas (hulled pumpkin seeds) or sunflower seeds

Steps:

  • Put the beets, coconut milk, lime juice, ginger, salt and pepper to taste in a blender and puree until very smooth. Transfer to a container and chill until ready to serve, at least 1 hour.
  • To serve, pour about 3/4 cup soup into each of 4 small glasses; top each with 1 teaspoon yogurt and 1 teaspoon pepitas and serve immediately.

2 cups thinly sliced celery
2 tablespoons olive oil
2 teaspoons sugar
1 1/2 pounds beets, peeled and cut into 1-inch pieces
1 tablespoon red-wine vinegar plus additional to taste
3 cups low-salt chicken broth
ice water for thinning soup
sour cream, seasoned with bottled horseradish, and minced fresh chives for garnish

Steps:

  • In a heavy saucepan cook onion and celery in oil with sugar and salt and pepper to taste over moderately low heat, stirring, until softened and add beets, 1 tablespoon vinegar, and broth. Simmer mixture, covered, 35 to 40 minutes, or until beets are very tender.
  • In a blender purée mixture in batches until very smooth, transferring as puréed to a bowl. Chill soup, covered, at least 6 hours or overnight.
  • Thin soup with ice water and season with additional vinegar and salt and pepper.
  • Garnish soup with sour cream and chives.

My mother served this for a Thanksgiving lunch. I admit, I was a little dubious about it at first, since beets have never been my favourite vegetable. (Once upon a time they were my absolutely least-liked food, but I've seen at least a glimmer of the light.) Anyway, this soup was delicious! Just wonderful! I made sure to get the recipe from her before heading home. (She adapted the recipe from Gourmet Magazine.)Note: the celery can be replaced with peeled, chopped celery root.

1 1/2 lbs beets
1 large onion
2 cups celery, thinly sliced
2 tablespoons olive oil
salt and pepper

Steps:

  • Peel the beets and cut them into 1" chunks.
  • Yes, raw.
  • Peel and dice the onion, and chop the celery.
  • In a heavy-bottomed soup pot, cook the onion and celery in the olive oil, with the sugar and a little salt and pepper.
  • When soft, add the beets, vinegar and broth, and simmer, covered, until they are tender- about 40 minutes.
  • Puree the soup, and chill 6 hours to overnight.
  • Adjust the seasoning of the soup by adding a little more salt and pepper, if needed, and lemon juice to taste.
  • Serve with a dollop of yogurt, and a sprinkling of minced chives.

Steps:

  • Heat oil in large nonstick skillet over low heat. Add carrots and onion. Cover; cook until vegetables are just tender, stirring occasionally, about 20 Minutes. Add vinegar, cover and cook until vegetables are very tender, about 10 minutes longer.
  • Working in batches, add beets with their liquid, sugar and carrot mixture to blender. Purée. Transfer to large bowl. Mix in buttermilk. Season with salt and pepper. Chill until cold, about 3 hours. (Can be made 2 days ahead. Cover; keep chilled.)
  • Ladle into bowls or mugs. Top with chives.

2 garlic cloves, minced
1 cup chopped Spanish onion
2 celery ribs, diced
6 cups chicken or 6 cups vegetable stock
1 pint fresh raspberry
2 cups light cream
2 tablespoons chopped fresh dill
1 tablespoon raspberry vinegar
kosher salt & freshly ground black pepper, to taste

Steps:

  • To cook beets:
  • Wash and trim stems from beets.
  • Place in 4-quart pot. Add 3 quarts water.
  • Bring to a boil over high heat. Reduce heat to medium.
  • Simmer, uncovered, for 40 minutes or until beets are tender when pierced with knife.
  • Drain.
  • Place under cold running water.
  • Peel off skins.
  • Cut beets into large chunks.
  • Set aside.
  • To cook soup:
  • Melt butter in stockpot over medium-high heat.
  • Add garlic, onions, celery and beets. Saute for 5 to 7 minutes, stirring frequently.
  • Add chicken stock.
  • Bring to a boil.
  • Reduce heat to medium.
  • Simmer for 30 minutes.
  • To finish soup: Remove from heat. Add raspberries.

1 pound beets, peeled, chopped
1 cup chopped onion
3/4 cup peeled chopped carrot
2 teaspoons chopped garlic
1 teaspoon sugar
2 tablespoons chopped fresh dill or 2 teaspoons dried dillweed
2 tablespoons chopped fresh chives or green onions
Sour cream

Steps:

  • Combine 4 cups broth, beets, onions, carrot and garlic in medium saucepan. Bring to boil. Reduce heat to medium-low; cover and simmer until vegetables are very tender, about 35 minutes. Cool slightly. Puree in blender in batches until smooth. Transfer to bowl. Thin with additional broth if soup is too thick. Mix in sugar. Season with salt and pepper. Cover and chill until cold, at least 4 hours or overnight. (Can be prepared 2 days ahead. Keep refrigerated.)
  • Ladle soup into bowls. Sprinkle with dill and chives. Top with sour cream.

CHILLED BEET, ORANGE AND DILL SOUP



Chilled Beet, Orange and Dill Soup image

For easy serving, ladle the soup into pretty bowls, and set them on the buffet table.

Number Of Ingredients 6

3 15-ounce cans julienne beets, drained, 3/4 cup liquid reserved
1 1/2 cups fresh orange juice
1 1/2 cups reduced-fat (2%)buttermilk
3 tablespoons chopped fresh dill
1 1/2 cups finely diced unpeeled English hothouse cucumber (about 1/2 large)
Additional chopped fresh dill

Steps:

  • Combine half of beets, half of reserved beet liquid and half of orange juice in blender. Blend until smooth. Blend in half of buttermilk and 1 1/2 tablespoons chopped dill. Transfer to large bowl. Repeat with remaining beets, beet liquid, orange juice, buttermilk and 1 1/2 tablespoons dill. Season with salt and pepper. Chill at least 3 hours. (Can be made 2 days ahead. Cover and keep chilled.)
  • Garnish soup with cucumber and additional dill. Ladle into bowls.

CHILLED BEET AND BUTTERMILK SOUP

I got this recipe from Anna Olson's show "Fresh" on the Food Network. When I saw Anna make the soup, it reminded me of the cold beet soup my favorite aunt used to make so I just had to try it! I served it with sliced hard boiled egg on top (like my aunt). Both hubby and I loved it on this hot, summer afternoon. NOTE - I used 3/4 cup (roughly) of mini carrots instead of dicing them. My soup took upwards of 1hour & 15 minutes to cook - so I think it depends on how fresh your beets actually are. Also - I omitted the dill (as dh is "anti-dill" and didn't s & p until just before serving. I also didn't strain the soup as I wanted a more rustic soup. Cooking time does not include chilling time.

  • You can serve the soup hot or let it cool a bit and then refrigerate until it’s thoroughly chilled before serving. If you’ve refrigerated the soup, stir it before serving. Hot or cold, the soup is good with any of the suggested toppings; the strawberries are especially good when the soup is chilled. For the cold version, I like to put a couple of ice cubes in the bowls (or glasses) before I pour in the soup.
