Chili Rubbed Flank Steak with Corn, Tomato and Avocado Salad image

Steak corn and tomatoes get kicked upstairs.

Provided by Katie Workman

Categories     Main Course

Time 30m

Number Of Ingredients 18

2 teaspoons brown sugar
1 teaspoon ancho chili powder
1 teaspoon paprika (regular, hot or smoked)
½ teaspoon garlic powder
½ teaspoon ground cumin
½ teaspoon kosher salt
½ teaspoon ground coriander
¼ teaspoon cayenne pepper
1 tablespoon olive oil
2 pounds flank steak
3 ears of corn (shucked)
1 cup cherry or grape tomatoes (cut in half)
½ cup sliced scallions (white and green parts)
2 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice (or to taste)
Kosher salt and freshly ground pepper (to taste)
1 avocado (diced)
½ cup roughly chopped fresh cilantro (optional)

Steps:

  • In a small bowl combine the brown sugar, chili powder, paprika, garlic powder, cumin, salt, coriander and cayenne. Rub the olive oil on both sides of the steak, then rub the spice mixture over the steak and set aside.
  • Preheat the grill to medium high. Grill the corn, turning as needed, until the kernels are lightly browned on all sides, about 6 minutes. Cool the corn, then slice the kernels off the cobs and place in a medium bowl.
  • Grill the steak for about 4 minutes on each side, until nicely marked with grill marks, and cooked to your liking. Transfer to a cutting board and let sit for 5 to 10 minutes for the steak to reabsorb its juices. Thinly slice the meat across the grain.
  • While the steak sits, add the tomatoes and scallions to the bowl with the corn. Drizzle over the olive oil, lime juice, and season with salt and pepper. Pour over the salad, and toss. Just before serving add the avocado and cilantro and toss again.
  • Serve the sliced steak with the salad.

CHILI RUBBED STEAK WITH CORN TOMATO SALSA

Chili Rubbed Steak with Corn Tomato Salsa image

Time 40m

Yield 4-6

Number Of Ingredients 20

3 Tbsp. extra-virgin olive oil
1/4 cup honey
Juice and zest of two limes
3 garlic cloves
Salt and pepper
1 flank steak (approx. 1 1/2-2 pounds)
1 1/2 Tbsp. chili powder
1 1/2 Tbsp. cumin
1 Tbsp. paprika
2 tsp. coriander
1 tsp. red pepper flakes
Salt and pepper to taste
2 cups corn
1/4 red onion, finely chopped
1 jalapeño, seeds removed, finely chopped
1 pint cherry tomatoes, halved
1 cup fresh cilantro, coarsely chopped
1/3 cup fresh lime juice
1 tsp. cumin
Kosher salt, freshly ground pepper to taste

Steps:

  • Put evoo, honey, lime juice and zest, minced garlic and salt and pepper in a large ziplock. Seal and shake to combine.
  • Add steak to the bag, seal and shake to coat meat. Let it marinate on counter while you prepare the rub and salsa.
  • Measure all ingredients into a small bowl and stir to combine.
  • If using fresh corn, cut corn off cob.
  • Heat a skillet on medium heat and spread corn kernels evenly around the pan. Heat until corn begins to brown on one side, stir and continue heating until roasted on all sides. *Alternatively you can grill the corn to roast it and then cut it off the kernel.
  • Remove from heat and allow to cool. **Roasting the corn is optional but brings out the flavor.
  • Chop all ingredients and toss together.
  • Drain steak; discard juices. Rub both sides liberally and evenly with dry rub mix.
  • Grill over high heat for 4-5 minutes per side for medium rare. Pull off heat and tent with foil for 10 minutes.
  • Slice against the grain and serve covered with salsa. Serve extra salsa in a bowl.

Yield 4 servings

Number Of Ingredients 13

1/2 lb. ground beef
1/2 lb. ground pork
1/2 tsp. garlic powder
1/2 cup coarsely chopped cilantro leaves and tender stems, divided
2 1/4 tsp. kosher salt, divided
3/4 tsp. chili powder, preferably chipotle, divided
1 Tbsp. vegetable oil, plus more for greasing
2 ears corn on the cob
1 large tomato, chopped into 1/2" pieces
1/2 small red onion, finely chopped
1 avocado, halved, cut into 1/2" pieces
1 serrano chile, seeded, finely chopped
3 Tbsp. fresh lime juice

Steps:

  • Process beef, pork, garlic powder, 1/4 cup cilantro, 1 1/4 tsp. salt, and 1/2 tsp. chili powder in a food processor until evenly distributed and well combined, about 2 minutes. Roll mixture into 4 balls.
  • Rub one 16x12" piece of parchment with a little bit of oil. Place 1 ball of meat on one half of oiled paper, then fold other half over. Using a rolling pin or wine bottle, gently roll meat into a very thin oval between parchment (it should be about 9x6"). Transfer, with parchment, to a rimmed baking sheet. Repeat with 3 more sheets of paper and remaining meat. Chill until ready to use.
  • Slice kernels off ears of corn and transfer to a large bowl. Add tomato, onion, avocado, chile, lime juice, and remaining 1/4 cup cilantro, 1 tsp. salt, and 1/4 tsp. chili powder and stir to combine. Let sit while you cook the patties.
  • Heat 1 Tbsp. oil in a large heavy (preferably cast-iron) skillet until smoking. Working one at a time, peel patty off greased parchment and sear until browned and crisped on the bottom, about 2 minutes. Turn and cook just until cooked through, about 1 minute more. Transfer to a plate and repeat with remaining patties.
  • Top patties with corn salsa.
  • Do Ahead: Patties can be formed 2 days ahead. Chill in parchment on a covered rimmed baking sheet.

Yield Makes 4 servings

Number Of Ingredients 13

3 cups fresh corn (about 3 ears)
4 scallions, white and green parts thinly sliced separately
2 tablespoons unsalted butter
2 garlic cloves, minced
1 1/2 teaspoons kosher salt
1 1/2 teaspoons ground cumin
1 teaspoon chili powder
1/2 teaspoon black pepper
2 plum tomatoes, finely diced
1 to 2 fresh jalapeño chiles, finely diced (including seeds)
1 (2-pound) trimmed boneless sirloin steak, about 1 1/2 inches thick
1/4 cup finely chopped fresh cilantro
Accompaniment: lime wedges

Steps:

  • Prepare grill for cooking.
  • Make corn salsa:
  • Heat a dry large cast-iron skillet over moderately high heat until hot, then pan-roast corn, stirring occasionally, until golden brown, 8 to 10 minutes. Transfer to a bowl.
  • Cook white part of scallions in butter with garlic, 1 teaspoon salt, 1/2 teaspoon each cumin and chili powder, and 1/4 teaspoon pepper in skillet over moderate heat, stirring, until scallions are tender, 3 to 4 minutes. Remove from heat and stir in corn, tomatoes, and jalapeños.
  • Grill steak:
  • Combine remaining 1/2 teaspoon salt, 1 teaspoon cumin, 1/2 teaspoon chili powder, and 1/4 teaspoon pepper and sprinkle on both sides of steak. Grill, turning once, until an instant-read thermometer inserted horizontally into thickest part of meat registers 130°F, 18 to 20 minutes total for medium-rare. Transfer steak to a grooved cutting board and let stand 5 to 10 minutes before slicing.
  • While steak is standing, reheat corn mixture over moderate heat, stirring occasionally. Stir in cilantro and scallion greens.
  • Spoon corn on top of sliced steak and pour over any accumulated juices.

CHILI-RUBBED PAN-ROASTED CHICKEN WITH FRESH TOMATO SALSA

Chili-Rubbed Pan-Roasted Chicken with Fresh Tomato Salsa image

Provided by Food Network Kitchen

Categories     main-dish

Time 39m

Yield 4 servings

Number Of Ingredients 15

2 tablespoons corn oil
4 bone-in chicken breast halves (about 10 ounces each), skin on
2 teaspoons chili powder
Kosher salt
Juice of 2 limes
2 tablespoons honey
1/4 cup chicken stock
2 Tablespoons butter
3 medium tomatoes, roughly chopped
1/2 to 1 jalapeno, stemmed and minced with seeds
1/2 medium red onion, grated
1 teaspoon kosher salt
1 clove garlic, peeled
2 tablespoons extra-virgin olive oil
1/2 cup chopped fresh cilantro, leaves and stems, divided

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a large ovenproof skillet over medium-high heat. Add the oil and heat until shimmering. Season the chicken with chili powder and salt, to taste. Lay the chicken in the skillet skin side down and cook until brown, about 4 minutes. Turn the chicken, transfer the pan to the oven, and cook until firm, basting occasionally with the pan drippings, 15 to 20 minutes.
  • While the chicken cooks, make the fresh tomato salsa: Toss the tomatoes with the jalapeno, onion, and the 1/2 teaspoon salt. Smash the garlic clove, sprinkle with the remaining salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Stir the paste into the salsa with the olive oil and 1/4 cup of cilantro.
  • When chicken is cooked through, transfer the pieces to a plate and cover with foil to keep warm. In the meantime, add the lime juice to the pan. After 1 minute, add the honey along with the chicken stock to heat through. Remove pan from heat and stir in reserved 1/4 cup cilantro and butter.
  • To serve, divide the chicken among 4 plates, drizzle with pan sauce, and spoon some salsa over and around.

ROASTED TOMATO SALSA

Roasted Tomato Salsa image

Fresh salsa is tasty, but broiling the tomatoes and onions first really imparts a smoky flavor and takes salsa to the next level. That's probably why it's such a common culinary practice in Mexico!

Steps:

  • Broil 5 plum tomatoes and 1 sliced red onion, about 6 minutes. Pulse in a food processor with 1 chipotle in adobo plus 1 teaspoon sauce from the can, 2 tablespoons cilantro and 1 teaspoon cider vinegar.

  • PREP: Preheat the grill to 450 degrees F. Once heated, clean the grill grates with a wire brush. Liberally oil the grill (I do this by drenching a paper towel in canola or vegetable oil and, holding tongs, rubbing the paper towel over the grill).
  • CORN: Shuck corn and discard silk. Drizzle corn with olive oil and lightly sprinkle with salt and pepper. Rub the oil and salt/pepper into all sides of the corn. Add the corn to the heated and oiled grill over direct heat. Grill corn about 10-12 minutes total, rotating every 3-4 minutes until bright in color and lightly charred. Let grilled corn cool before cutting it off the cob.
  • STEAK: Prepare the rub by mixing together the garlic powder, ground coriander, cumin, paprika, chili powder, salt, pepper, and brown sugar. Remove the flank steak from packaging and blot dry with a paper towel. Drizzle 1 tablespoon oil on the top of the steak. Sprinkle half the rub on top and gently press in. Flip the steak over. Drizzle remaining 1 tablespoon oil on the bottom of the steak and sprinkle on the remaining rub mixture. Gently press in. Place the spiced-rubbed steak directly on the grill and cook for 4-5 minutes per side, or until the internal temperature is 130-135 degrees F for medium rare or 145 degrees for medium. (I use a meat thermometer here. My grill takes exactly 4 minutes per side at 450 degrees F.) Remove the steak from the grill to a cutting board. Tent with foil and allow to rest for 5-10 minutes. Once the steak has rested, slice it very thinly against the grain (See Note 1).
  • SALSA: While the steak cooks, prepare the salsa. Slice the cooled corn off the cob and add to a large bowl. Dice the veggies -- the avocados, red onion, red pepper and cilantro and add to the corn. Add 1 tablespoon olive oil, 1/4 cup lime juice, 1 teaspoon cumin, minced jalapeno, minced garlic, and, if desired, crushed red pepper flakes to the veggies. Gently toss together. Add salt and pepper to taste (I add 1/4 teaspoon of each). Toss again and serve over steak. If desired, drizzle everything with 1 more tablespoon olive oil. Serve with extra cilantro and lime wedges if desired.
