- In a small saucepan, combine the vinegar and sugar over medium low heat. Warm and stir until the sugar has dissolved.
- Add the red onion, white onion and bell pepper. Stir to coat and let sit for one hour. Then transfer to a sealable container and refrigerate to cool for at least 2 hours.

RED ONION RELISH

Steps:
- Chop the red onions into slices
- Melt the butter in a saucepan and add the sliced onion to the melted butter
- Fry for a few minutes, then add the brown sugar and red wine vinegar
- Stir and allow to simmer on a low heat for 20 minutes, stirring regularly to prevent the sugar from burning.
- It should now have reduced to a delicious dark red relish - Serve straight away or pop in a jar and store in the fridge for a later date.

Steps:
- Shred the onions and jalapeno peppers in a food processor, using the shredding blade.
- Combine the onion, jalapeno pepper, vinegar, black pepper, and salt in a large pot and place over medium heat. Stirring frequently, bring to a full boil; cook for 10 minutes.
- Pack the mixture firmly into sterilized pint canning jars to within 3/4 inch of the top. Pour the cooking liquid over the onions to within 1/2 inch of the top and using a spatula, stir gently to remove all air bubbles. Wipe the rims with a clean damp cloth and adjust lids and rings firmly. Process in a boiling water bath for five minutes.

CHILEAN CAZUELA
Steps:
- First cut the meat into six portions. Then pre-heat the vegetable oil in a large pot. Braise the meat for three minutes on each side, and add the onion, seasonings, salt and pepper. Mix well and cook for five minutes.
- When ready, place the potatoes, carrots, celery and pumpkin in the pot. Completely cover the contents with boiling water-about five or six cups and cook for ten minutes. Next incorporate the rice and corn; let simmer for eight minutes. Finally, mix-in the green beans and cook for three more minutes.
- Sample the stew and adjust the seasoning as necessary. Serve hot with one piece of meat, one potato, one piece of pumpkin and a portion of corn in each dish of stew.
- To garnish, sprinkle a little cilantro over each serving.

SWEET VIDALIA ONION RELISH

Steps:
- Roast red, green, and yellow bell peppers over an open flame or in broiler, turning frequently, until skins are charred and blistered. Place in a bowl and cover with plastic; let sit 5 to 10 minutes. Remove skins. Cut peppers in half, lengthwise. Remove seeds and stem, and chop into small pieces. Set aside.
- Place grated onions in a colander to drain liquid. Place them in a large bowl, and sprinkle with 1/4 cup kosher salt. Mix by hand. Mix in cabbage and 3 tablespoons salt by hand. Let sit 1 hour.
- Place onions and cabbage into colander, and squeeze out as much liquid as possible. Place in cheese cloth or towel, and squeeze out additional water.
- Place cabbage and onions into a large pot over medium-high heat. Add roasted bell peppers. Stir in sugar, apple cider vinegar, turmeric, mustard seed, and celery seed. Bring to a low boil, stirring constantly to prevent onions from sticking to the bottom. Reduce heat to medium, and simmer for 45 minutes, stirring often.
- To prepare jars you first need to wash jars then place them into the canning pot with rack and boil them in water to sterilize them. Fill a small pot half way with water and bring to simmer; place the lids into water. Taking one jar out of the water at a time put on canning funnel and fill with hot relish about 1/2 inch from the top. Then take a kitchen knife a stick down to the bottom of jar and work the knife around to remove all air bubbles. Wipe off top of jar very well and clean then place a hot lid on jar the screw ring on top. Repeat until all relish is gone. Jars and relish must stay hot throughout this canning process.
- Place in a bath of simmering water, covering the jars by one inch. Process for 10 minutes, or according to your local extension's guidelines. When jars start to seal and vacuum, the lids will make a pop sound and your canning was a success. Once jars have been opened, store in the refrigerator and use within two weeks.

CHILEAN ONION RELISH

- Place the onion in a bowl with ice water to cover.
- Let stand for 30 minutes, then drain well in a colander and blot dry with a paper towel.
- Combine the vinegar and salt in a bowl and stir or whisk until the salt crystals are dissolved.
- Add the onion, tomato, pepper, cayenne, oil, and cilantro and gently toss to mix.
- Correct the seasoning, adding salt, vinegar, or cayenne; the relish should be highly seasoned.
- The relish is good now; it will be amazing if you let it stand to ripen for a few hours before serving.
- Serve the relish the same day you make it.
- 2 cups is enough to serve 4 to 6.
PEPPER AND ONION RELISH
Steps:
- Add all of the ingredients to a large, study stock pot. I used my dutch oven for this. Stir the ingredients together over medium heat.
- Stirring occassionally, cook for 2 hours until the ingredients break down, and the liquid evaporates. The end result should be deep red in colour and be almost as thick as ketchup.
- During the last 30-40 minutes of cooking, pay close attention to the relish. As the sauce thickens, there's more risk of the sauce burning. Stir more often and lower the heat a bit if you need to do so.
- While the sauce is cooking, prepare your canning jars by washing them thoroughly with hot, soapy water. Be sure to rinse the jars until the soap residue is gone. Set the jars aside. Next, boil a kettle full of water. Place the seals and jar rings into a large bowl. Pour the boiled water over top and let them sit.
- Prepare your canning pot for the water bath method. I use a large stock pot with a round metal cooling rack at the bottom so that the jars do not touch the bottom of the pot. Fill the pot half full with water and bring to full boil.
- Once the relish is cooked, use a ladle to spoon the relish into the prepared jars. I like to use a metal funnel to avoid any of the relish coming into contact with the rim of the jar. This will help to create a better and safer seal. Fill the jar so that only 1/2 inch of head space remains. Remove the funnel and place a hot, sterilized seal on the jar. Screw on the lid until just snug. Be careful! The jar will be hot! Use a kitchen towel to hold the jar in place as you screw on the lid.
- Using a jar lifter, place the filled jars into the large pot of boiling water. Bring the pot back to a boil and allow the jarred relish to remain in the boiling water for 20 minutes. Carefully remove the jars and place on a kitchen towel where they will not be disturbed. As the jars cool, you'll hear a popping sound. This is the hot liquid and air in the jar cooling down and contracting. This will create an air-tight seal and will allow you to store your relish for future consumption.
- For best results, I recommend allowing the jars to sit undisturbed for at least 12 hours. With a damp cloth, wipe down the jars, re-tighten the lids, and store in a dark, cool place. The relish will last for 12-18 months. Lastly, if you notice that a jar has not properly sealed, simply refrigerate that particular jar, and consume within the next 5-7 days. To test whether or not the jars are sealed, lightly press down on the seal. If the seal pops downward, the sealing process did not work.
