HEALTHY BANANA BREAD MUFFINS
A banana bread muffin so light, fluffy and tender, you'd never guess it's made with mostly whole-wheat flour. Using very ripe bananas keeps the muffins moist and minimizes the amount of sugar you add.

- Position an oven rack in the center of the oven and preheat to 400 degrees F. Line a 12-cup muffin pan with paper liners. Whisk together the whole-wheat flour, all-purpose flour, baking powder, cinnamon, baking soda and salt in a medium bowl.
- Whisk together the coconut oil, brown sugar, maple syrup, vanilla and egg whites in a separate medium bowl until well combined. Stir in the mashed banana. Add the dry ingredients to the wet and stir until combined. Stir in the chopped walnuts if using.
- Fill the lined muffin cups about three-quarters of the way with the batter (a generous 1/4 cup in each; see Cook's Note). Bake on the center rack until a cake tester or toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes. Let cool 10 minutes, then remove the muffins to a wire rack to cool completely.

- Preheat the oven to 425 degrees F.
- Lightly brush a 12-muffin tin with butter and set aside.
- Whisk the flour, baking soda, brown sugar, and cinnamon together in a medium bowl; set aside.
- Whisk the banana, oil, milk, eggs, salt, and vanilla in a large measuring cup with a spout or another bowl.
- Make a small well in the center of the dry ingredients. Pour wet ingredients into the center; then stir with a wooden spoon until the dry ingredients are moistened but still lumpy. Do not overmix the batter or your muffins will come out dense. Gently stir in the nuts. Divide the batter evenly into the muffin tin.
- Put the muffins in the oven and immediately reduce oven temperature to 375 degrees F. Bake until golden brown, about 25 minutes, rotating the pan halfway through the cooking. (Insert a toothpick into the center of a muffin to check if it is done. Toothpick should come out clean). Cool muffins in the pan on a rack for a couple minutes. Turn the muffins out of the pan and cool on the rack. Serve warm or at room temperature.

- 1. Preheat oven to 350. Butter and line bottoms with parchment 2 9x5 loaf pans. I used 2 smaller (approx 8x4) loaf pans and a muffin pan for 12 muffins, which I lined with papers.
- 2. Sift together flour, soda, pie spice, salt and set it aside. Beat together eggs and sugar at medium high speed for about 5 minutes, until very thick and pale in color. Scraping bowl occasionally. Reduce speed and slowly drizzle in oil. Then add bananas, sour cream and vanilla, mixing well. Then gently mix in flour mixture, until just combined, stir in nuts.
- 3. Divide batter between the loaf pans, or fill 12 muffin cups 2/3 full and divide remaining batter between the two smaller loaf pans.
- 4. Bake large loaves at 350 for 1 hour. Bake muffins at 350 for 20 minutes. Bake small loaves at 350 for 45 min. Bake mini loaves at 350 for 30-35 min. They are done when a toothpick inserted comes out clean. Cool in pans 10 mins. then turn out onto cooling racks, turning loaves upright to cool completely.
- 5. Caramel Glaze, it is not needed, but when I make it as a gift or to sell, I will add it, as it adds a nice touch. Caramel Glaze: 1/4c butter, 1/2c milk, 1c brown sugar, 2T corn syrup...slowly over medium heat stirring constantly, bring to a boil, boil 1 minute. Remove from heat and stir in 1t vanilla and pinch of salt. Allow to cool completely, stirring occasionally. Pour into squeeze bottle (if desired) and store in refrigerator. Microwave to warm up for drizzle over bread or muffins and/or even on ice cream!!!
- 6. Cream Cheese Filling/Spread, it is not needed, but sure tastes good!!! Beat together 8oz cream cheese, soft, and 1/4 c butter, soft. Add in 1 c powdered sugar beating until smooth and creamy. Use to spread on banana bread or fill muffins.
- 7. Helpful Hint: when I mash my bananas I put them in the food processor and add 1-2t lemon juice to prevent browning, and pulse a few times until the right consistency I want.
BANANA BREAD MUFFINS
I had some over ripe Bananas & wanted to make Banana bread, but couldn't find my loaf pans. I modefied this Banana Bread recipe, & ended up with the most fantastic Banana Muffins! My Husband (who's very picky), & son (just as picky), went nuts over these. Very good. The best part, is not having to slice up a loaf. Just peal off the cupcake papers & eat!

- Line Cupcake tin with papers & spray with vanilla pam (pam for baking).
- In Large bowl, combine flour soda & salt.
- In a separate bowl, cream together Butter & Sugar.
- Stir in Eggs & mashed Bananas until well blended.
- Stir Banana mixture into flour mixture (I used an electric mixer on low).
- Fill muffin tins with generous amount of Banana batter (I fill almost to the top).
- Bake 20 min or untill toothpic comes out clean.
