This Chef Salad is a classic all american dish with lettuce, meat, eggs and cheese as the foundation.

8 cups lettuce (iceberg or romaine)
4 ounces ham (diced)
4 ounces cheddar cheese (or swiss, diced)
3 green onions (sliced)
4 boiled eggs
2 tomatoes (sliced or wedged)
1 cup cucumber

Steps:

  • Wash and dry the lettuce. Tear into bite size pieces and place in a large bowl (or divide over 4 individual serving plates).
  • Top with remaining ingredients.
  • Serve with Thousand Island or Ranch dressing.

1 Head Romain Lettuce
1 Head Iceberg Lettuce
1 Medium green pepper cut into slices
1 Small onion (sliced)
1 Medium tomato sliced or cut into wedges
1 small cucumber (peeled and sliced)
1 handful Black olives (sliced)
1 large hard boiled egg (cut into wedges)
4 medium pepperoncini peppers
2 slices deli ham
2 slices deli turkey breast
2 slices Provolone cheese

Steps:

  • Wash and dry the lettuces.
  • Cut the iceberg lettuce into bite size pieces and spin it in a salad spinner to remove all the water from washing. Cut or tear the romaine lettuce and give it a spin in the salad spinner.
  • Toss the two types of lettuce together in a large bowl.
  • Place the tossed lettuce into a salad bowl for each serving. Top each salad bowl with some green pepper, onion, and cucumber. Place one hardboiled egg onto each salad.
  • For each serving of salad roll a piece of deli ham, turkey and cheese into a roll. Cut into slices and place on top of the salad.
  • Top with the black olives. Place 2 peppers into each salad bowl.
  • Drizzle on your favorite Ranch Dressing and serve.

1 1/2 pounds romaine lettuce hearts (2 to 3 hearts)
8 ounces cooked turkey breast, not sliced
4 ounces cooked ham, not sliced
4 ounces Swiss cheese, not sliced
1 lemon
1 scallion
1/3 cup reduced-fat sour cream
2 tablespoons light mayonnaise
Coarse salt and ground pepper

Steps:

  • Cook bacon: Heat a large skillet over medium. Add bacon, and cook until browned and crisp, 3 to 5 minutes per side. Transfer to a paper-towel-lined plate to cool. Place in a resealable plastic bag; store at room temperature.
  • Prep lettuce, meats, and cheese: Cut romaine into 1-inch ribbons; wash well, and dry. Place in a resealable plastic bag; refrigerate. Cut turkey, ham, and cheese into bite-size strips. Place in an airtight container; cover, and refrigerate.
  • Make dressing: Squeeze lemon into a small bowl. Mince scallion; add to bowl, along with sour cream, mayonnaise, and 2 tablespoons water. Season with salt and pepper. Whisk to combine. Cover and refrigerate.
  • Toss salad: In a large bowl, combine lettuce, meats, and cheese. Add dressing, and toss to coat. Serve salad topped with crumbled bacon.

Steps:

  • Stir up dressing in small bowl
  • For the pickled onions, combine onions, vinegar, sugar, salt and pepper
  • For the salad, preheat oven to 400˚F, bake bacon on slotted pan and bake to very crisp, remove, drain and cool to handle, then coarsely chop
  • Quarter the hard-boiled eggs lengthwise
  • In a bowl, combine with scallions
  • Halve the meats and cut into ¾- to 1-inch strips
  • Slice cheese to match strips in similar size and shape to the meats
  • Core the iceberg lettuce by knocking core-side down on counter and removing, then slice the lettuce heads into slabs, then quarter the slabs and arrange on large cutting board or platter
  • Season with salt and pepper and spoon dressing evenly over
  • Then arrange in stripes across the bed of lettuce: bacon, turkey, tomatoes, Swiss, ham, eggs and scallions, blue cheese, beef, provolone, and giardiniera
  • Top salad with the pickled onions and serve

Steps:

  • For the Buttermilk Ranch Dressing: Stir together the buttermilk, mayonnaise, sour cream, chives, dill, lemon juice, garlic powder, onion powder, salt and pepper in a medium bowl. Cover and refrigerate until ready to serve.
  • Assemble the salad: Arrange the lettuce, Sourdough Croutons, tomatoes, Cheddar, carrots, cucumbers, onion, eggs and ham on a serving platter. Drizzle with desired amount of buttermilk ranch dressing.
  • Preheat the oven to 375 degrees F. Toss the bread cubes, olive oil, Parmesan, Italian seasoning, garlic powder and pepper on large rimmed baking sheet. Bake until the bread begins to brown, 10 minutes. Stir and bake until the croutons are browned and crispy, 5 minutes more. Set aside to cool completely.

150g pack mixed salad leaves
250g pack cherry tomato , halved

1 garlic clove , cut in half
50g sundried tomato , finely chopped

Steps:

  • Boil eggs for 8 mins, then cool, peel and cut into wedges. Mix ham with salad, cherry tomatoes and mushrooms. Toast ciabatta. AMERICAN CHEF'S SALAD



American Chef's Salad image

A chef's salad is so named because it is supposed to be an innovative way of using whatever you happen to have handy to create a main-course salad. Ham, salami, chicken, turkey or any cold meat could be used for this one; similarly any kind of cheese or salad vegetable. This happens to be one of my favourite combinations, but once you get the gist of it I'm sure you'll have lots of other ideas.

Number Of Ingredients 18

6 oz (175 g) lean streaky bacon
4 spring onions, finely chopped
8 oz (225 g) French garlic sausage in one piece
4 oz (110 g) small open-cup mushrooms
3 oz (75 g) Roquefort or other cheese
2 ripe avocados
1 round lettuce, outer leaves removed
1 Cos lettuce, outer leaves removed
2 oz (50 g) watercress, stalks removed
2 oz (50 g) rocket, stalks removed
5 fl oz (150 ml) soured cream
1 small clove garlic, peeled and crushed
2 level tablespoons good-quality mayonnaise
1 heaped teaspoon wholegrain mustard
2 tablespoons extra virgin olive oil
1 tablespoon white wine vinegar
1 tablespoon lemon juice
salt and freshly milled black pepper

Steps:

  • Before you start, pre-heat the grill to its highest setting and let it heat up for at least 10 minutes. Meanwhile, combine all the dressing ingredients in a jug or bowl and whisk them together well, tasting to check the seasoning. Now place the bacon on some foil on the grill pan, and grill until it's very crispy - about 7 minutes - then remove it to drain on some kitchen paper and crumble it into small pieces. Next slice the garlic sausage, first into ¼ inch (5 mm) slices, then cut the slices into ¼ inch (5 mm) strips. After that, wipe the mushrooms and slice them fairly thinly (but not paper-thin). Next crumble the cheese and peel and slice the avocados. To serve the salad, tear up the lettuce leaves and place them in a large bowl with the watercress and rocket. Scatter in the bacon, sausage, mushrooms, cheese and avocado and mix well. Just before serving, add half the dressing and mix together. Add the remaining dressing and toss again so that everything gets a good coating. Finally, sprinkle over the spring onions and serve immediately. This needs lots of good rustic bread on the table.

4 cup torn iceberg lettuce or leaf lettuce
4 cup torn romaine lettuce or fresh spinach
4 ounce cooked ham, chicken, turkey, beef, pork, or lamb, cut into bite-size pieces (about 1 cup)
4 ounce Swiss, cheddar, American, or provolone cheese, cut into bite-size pieces (1 cup)
2 hard-cooked eggs, sliced
2 medium tomatoes, cut into wedges, or 8 cherry tomatoes, halved
1 small green or red sweet pepper, cut into bite-size strips (1/2 cup)
1 cup croutons (optional)
0.5 cup bottled French salad dressing, ranch salad dressing, or desired salad dressing

Steps:

  • In a large bowl toss greens. Divide greens among four large salad bowls or plates. Arrange meat, cheese, eggs, tomato, and sweet pepper on top of greens. If desired, sprinkle with croutons. Drizzle with some of the salad dressing and pass any remaining dressing. Makes 4 main-dish servings.

Number Of Ingredients 20

6 carrots
8 radishes
a 1-pound piece ham
1 head romaine
1 small head radicchio
1 small head frisée (French curly endive)
a 3-ounce container sunflower sprouts
a 15- to 19-ounce can chick-peas
1 red onion
1 teaspoon salt
For dressing:
1 garlic clove
2/3 cup packed fresh basil leaves
1/4 cup packed fresh flat-leafed parsley leaves
3 tablespoons mixed fresh herbs such as thyme, rosemary, and marjoram
3 tablespoons white-wine vinegar
1/2 teaspoon salt
1/2 cup olive oil
a piece Parmigiano-Reggiano (about 1/3 pound)
3/4 pound cherry tomatoes

Steps:

  • Shred carrots and thinly slice radishes. Cut ham into thin strips. Tear lettuces into bite-size pieces and in a bowl toss with sprouts. In a colander rinse and drain chick-peas. Salad ingredients may be prepared up to this point 4 hours ahead and chilled, covered.
  • Halve onion lengthwise and thinly slice crosswise. In a medium bowl dissolve salt in ice water and stir in onion. Let onion stand at least 15 minutes and up to 1 hour.
  • Make dressing:
  • Chop garlic. In a blender or food processor finely chop herbs and garlic with vinegar and salt and, with motor running, add oil in a stream until blended. Dressing may be made 1 hour ahead and chilled, covered.
  • With a vegetable peeler shave thin slices from Parmigiano-Reggiano. Drain onion and pat dry. Halve tomatoes. In a large bowl combine all salad ingredients and toss with dressing and salt and pepper to taste.
