Yield 4 dozen bite-size cream puffs

Number Of Ingredients 6

1 cup water
3/4 stick butter (6 tablespoons)
1 tablespoon sugar plus 1/8 teaspoon salt (for sweet)
1 teaspoon salt (for savory)
5 3/4 ounces flour
1 cup eggs, about 4 large eggs and 2 whites

Steps:

  • Preheat oven to 425 degrees F.
  • Boil water, butter, and salt or sugar. Add flour and remove from heat. Work mixture together and return to heat. Continue working the mixture until all flour is incorporated and dough forms a ball. Transfer mixture into bowl of a standing mixer and let cool for 3 or 4 minutes. With mixer on stir or lowest speed add eggs, 1 at a time, making sure the first egg is completely incorporated before continuing. Once all eggs have been added and the mixture is smooth put dough into piping bag fitted with a round tip. Pipe immediately into golfball-size shapes, 2 inches apart onto parchment lined sheet pans. Cook for 10 minutes, then turn the oven down to 350 degrees F and bake for 10 more minutes or until golden brown. Once they are removed from the oven pierce with a paring knife immediately to release steam.

RED LENTIL & SWEET POTATO PâTé

This easy vegetarian dip is a healthy alternative to hummus and great with crudités in a lunchbox or served as a vegan pate as part of a snack selection.

1 tbsp olive oil , plus extra for drizzling
½ onion , finely chopped
1 tsp smoked paprika , plus a little extra
1 small sweet potato , peeled and diced
140g red lentil
3 thyme sprigs, leaves chopped, plus a little extra to decorate (optional)
500ml low-sodium vegetable stock (choose a vegan brand, if desired)
1 tsp red wine vinegar (choose a vegan brand, if desired)
pitta bread and vegetable sticks, to serve

Steps:

  • Heat the oil in a large pan, add the onion and cook slowly until soft and golden. Tip in the paprika and cook for a further 2 mins, then add the sweet potato, lentils, thyme and stock. Bring to a simmer, then cook for 20 mins or until the potato and lentils are tender.
  • Add the vinegar and some seasoning, and roughly mash the mixture until you get a texture you like. Chill for 1 hr, then drizzle with olive oil, dust with the extra paprika and sprinkle with thyme sprigs, if you like. Serve with pitta bread and vegetable sticks.

A delicious veg*n pate made in B.C. comes from Hornby Island Pate Co. This is my version, inspired by their Herb variety. It's super easy to make, very similar to this version from the book ExtraVeganZa: Recipe #287199. You more or less throw everything into the food processor, blend until smooth and then bake. Delicious in sandwiches or served with crackers. You can bake this in a loaf tin, or something slightly larger such as an 8x8 square which would make it easy to cut into squares and freeze.

1 cup sunflower seeds, raw unsalted
2 yukon gold potatoes, peeled and roughly chopped (medium sized)
1/4 cup spelt flour
2 tablespoons canola oil (or other neutral oil)
3 tablespoons nutritional yeast
1/2 onion, roughly chopped
1 lemon, juice of
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried dill
1 teaspoon sea salt
3 cloves garlic, smashed
freshly ground black pepper
dried basil
sesame seeds

Steps:

  • Preheat your oven to 350 degrees F. Oil or line a loaf tin. It can be tricky to get out so I like to use parchment at least on the bottom.
  • Place all ingredients except the topping into a food processor and blend until a uniform consistency. It won't be smooth like batter, but the pieces will be very small and everything will be incorporated. Adjust seasoning to taste.
  • Spoon into prepared loaf tin and smooth out as best you can. Top with sprinkles of more dried basil and sesame seeds.
  • Bake for 40 minutes. Allow to cool for at least 5-10 minutes before you try to turn it out of the pan. Nice served at room temperature or cold.

SPICY SWEET POTATO HUMMUS

Avoid waste and enjoy a filling snack by using leftover sweet potatoes in this hummus recipe - it has a spicy kick thanks to smoked paprika and chilli flakes

2 medium sweet potatoes (about 400g), peeled and cut into 2cm cubes
3 tbsp olive oil, plus extra for drizzling
1⁄2 tsp chilli flakes, plus extra to serve (optional)
1 tsp smoked paprika
3 garlic cloves, unpeeled
2 tbsp tahini
1 lemon, juiced
vegetable crudités, breadsticks or crackers and pitted olives, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Tip the sweet potatoes onto a baking tray and drizzle over 1 tbsp olive oil. Sprinkle over the chilli flakes, if using, and the paprika, then toss to coat in the spiced oil. Spread out to a single layer. Trim away the root of the garlic cloves, then nestle these among the sweet potatoes. Roast for 30-35 mins until the potatoes have softened, tossing halfway through.
  • Remove the tray from the oven and leave to cool completely. Tip the sweet potatoes into a food processor and squeeze in the garlic from its skin. Add the tahini and lemon juice, then blitz for 1 min until the potatoes have broken down.
  • With the motor running, gradually pour in the remaining olive oil. Continue to blitz for up to 4 mins, or until you have a smooth paste. Pour in 50-60ml cold water to loosen, blitz again to combine, then season to taste. Spoon the hummus into a bowl and swirl with the back of a teaspoon, then drizzle over a little more olive oil and scatter with extra chili flakes, if you like. Serve with your choice of veg crudités, breadsticks or crackers and olives for dunking.

Holidays are coming and here is yet another sweet potato recipe. The thyme, garlic and red pepper gives great flavor to the sweet potatoes. Instead of olive oil try using Pam or No Oil. Just spray the slices on both sides then shake them in the zip lock bag with the herbs. Use Yams if you prefer.

4 medium sweet potatoes, peeled and cut into 1 1/2 inch rounds
3 tablespoons olive oil
1 tablespoon fresh thyme, chopped
3 -5 sprigs thyme (to garnish)
3 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes

Steps:

  • Heat oven to 400 degrees F.
  • In a zip lock bag toss the sweet potatoes in the oil, thyme, garlic and pepper flakes.
  • Transfer to a rimmed cookie sheet.
  • Garnish with thyme sprigs and bake until tender, approximately 45 minutes.
  • Serve hot.

  • Place sweet potatoes in a large pot and add just enough water to cover them. Boil for about 8 to 10 minutes or until the potatoes are just tender (test with a fork, it should go through easily). Drain.

  • Preheat oven to 350°F. Drizzle garlic cloves with oil, and wrap garlic head in aluminum foil. Bake in preheated oven until cloves are very tender, about 45 minutes. Set aside.
  • Lightly grease a 9- x 5-inch loaf pan with olive oil and line with parchment paper, allowing 2 inches of overhang on both long sides. Place kosher salt and 5 roasted garlic cloves in a large bowl; using the back of a spoon, smash into a paste. Whisk in cream, thyme, and pepper. Set aside.
  • Using a mandoline, thinly slice potatoes lengthwise into 1/16-inch-thick slices. Add sweet potatoes to cream mixture; toss gently to coat. Layer potato slices in bottom of prepared pan, slightly overlapping to create a shingled layer, trimming potato slices if needed. Continue layering, pressing occasionally, until potatoes are about 1/2 inch from top of pan. Discard remaining cream and potatoes.
  • Fold excess parchment over potatoes, and cover pan with aluminum foil. Bake at 350°F until potatoes are tender, about 2 hours. Remove foil from pan, leaving parchment in place. Let cool 2 hours at room temperature. Place a second 9- x 5-inch loaf pan on top of cooled pavé in pan, and weigh it down with unopened canned goods. Refrigerate 8 hours or overnight.
