Seaweed Salad image

Seaweed Salad. Wakame, a dark green, leafy seaweed is the most common type used for this salad. Mild-tasting arame and hijiki are also good choices. They can be bought at Asian grocery stores.

28 g dried seaweed (Wakame type)
1 shallots
1 1/2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp mirin (sweet rice wine)
1 tbsp sesame seed oil
1 pinch cayenne pepper
1 tsp gingerroot
1/2 tbsp sesame seeds

Steps:

  • Rinse the seaweed then put it in a bowl and soak it in at least 5 times its volume of water.
  • Let rest about 10 min, until re-hydrated and tender.
  • Meanwhile, combine the remaining ingredients in a salad bowl, except the sesame seeds.
  • Drain and gently squeeze the seaweed to remove excess water.
  • Chop or cut up, using scissors, then add to the salad bowl.
  • Toss, taste and add more seasoning if necessary.
  • Garnish with the optional sesame seeds then serve.

There is nothing like a brown rice and seaweed salad for setting the scene for a more virtuous-feeling new year. Brown rice just seems righteous and pure, and I somehow believe that eating it makes me a better person. And just the word "seaweed" is promising: It may sound like the culinary equivalent of a hair shirt, but imagine this hair shirt lined with cashmere, so delicious and flavorsome is this salad. There is not the faintest whiff of penance about it.

1/2 cup (about 1/3 ounce) dried arame seaweed (available in health food stores)
4 tablespoons olive oil
1 onion, finely chopped
1 tablespoon apple cider vinegar
2 tablespoons tamari
6 cups cooked organic short-grain brown rice, at room temperature

Steps:

  • Soak seaweed in a bowl of cold water until re-hydrated, 10 to 15 minutes. Meanwhile, heat 2 tablespoons oil in a large skillet over low heat. Add onion and sauté until slightly golden and translucent, about 10 minutes. Remove from heat and set aside. Drain seaweed, squeezing out water, and set aside.
  • In a large bowl, combine remaining 2 tablespoons oil, vinegar and tamari. Whisk until blended. Add onion and rice, and toss with two forks to dress well.
  • Add seaweed to rice mixture and toss well. Serve at room temperature, or cover and refrigerate for up to 3 days.

1 ounce wakame seaweed, snipped into 1-in . pieces if in large chunks (about 1 cup)
1 cup dulse seaweed (about 1/2 oz.)
1 cup arame seaweed (about 1/2 oz., or use more dulse)
2 tablespoons sesame seeds
2 tablespoons toasted sesame oil, divided
3 large garlic cloves, thinly sliced crosswise
2 green onions, sliced
1 1/2 tablespoons reduced sodium soy sauce
1 tablespoon unseasoned rice vinegar (optional)

Steps:

  • Look through seaweeds for any small pebbles or debris and discard. Soak wakame and arame in separate bowls with cool water to cover generously until tender, 5 to 12 minutes for wakame and 9 to 10 minutes for arame. Drain well. Snip dulse into 2-in.-long pieces; don't soak.
  • Toast sesame seeds in a large frying pan over medium heat, stirring often, until golden, 3 to 4 minutes. Pour into a bowl.
  • Add 1 tablespoons oil to the pan with the garlic and onions; sauté over medium heat until softened, 1 minute. Remove from heat.
  • Add seaweeds, remaining 1 tablespoons oil, and soy sauce. Toss gently to coat well and let stand until dulse is softened, 5 minutes. Mix in sesame seeds.
  • Taste and add rice vinegar if you like. Serve warm or at room temperature.

WAKAME SEAWEED SALAD

3/4 cup dried, cut wakame seaweed
4 1/2 to 6 cups cold water, for soaking
2 tablespoons rice wine vinegar
2 tablespoons soy sauce
1 teaspoon grated fresh ginger
1/2 teaspoon sugar
3/4 teaspoon kosher salt
1 1/2 tablespoons toasted sesame oil
1 small avocado
1 small carrot, peeled and grated (1/3 packed cup)
4 small red radishes, cut into small dice (about 1/2 cup)

Steps:

  • Place the wakame in a large bowl and cover with the water, adding more if needed to keep wakame submerged. Soak until softened, about 10 minutes. Line a colander with a clean kitchen towel and have it standing by.
  • Meanwhile, make the dressing. Whisk 1 1/2 tablespoons of the rice wine vinegar with the soy sauce, ginger, sugar, and 1/4 teaspoon of the salt in a small bowl. Whisk constantly while drizzling in the sesame oil to form an emulsion.
  • When the wakame is hydrated, drain thoroughly through the prepared colander. Gather up the sides of the towel to form a pouch, then twist the towel to wring out additional water. Dry the large bowl and return the wakame to it. Top with the dressing and toss to coat. Cover and refrigerate until the seaweed is cold and the dressing has been absorbed, at least 30 minutes or up to overnight.
  • When ready to serve, peel and dice the avocado into small cubes measuring between 1/4 and 1/2 of an inch. Toss in a small bowl with the remaining 1 1/2 teaspoons of rice wine vinegar and the remaining 1/2 teaspoon salt. Fold in the carrot and radishes, then fold this mixture gently into the wakame and serve.

1 1/2 cups whole wheat couscous
1 tablespoon minced fresh ginger
1/8 teaspoon cayenne
1 1/2 to 1 3/4 cups boiling water
1/2 ounce arame sea vegetable (about 1 cup loosely packed)
1 1/2 cups finely chopped carrots
1 cup finely chopped radishes
3/4 cup thinly sliced scallion greens
2 to 3 tablespoons toasted sesame oil
3 to 4 tablespoons shoyu or tamari
Approximately 3 tablespoons brown rice or seasoned rice vinegar (the latter adds sweetness too)
1/3 cup toasted sunflower seeds

Steps:

  • Mix the couscous, ginger, and cayenne in a large heatproof bowl or storage container and pour 1 1/2 cups boiling water on top. Cover tightly and let sit until all of the liquid is absorbed, about 10 minutes. If the couscous is not quite tender, stir in an additional 1/4 cup boiling water, cover, and let sit for a few minutes longer. Fluff up with a fork, and let cool.
  • Meanwhile, place the arame in a bowl with ample cold water to cover and let stand until rehydrated, about 10 minutes. Rinse thoroughly and drain well.
  • Add the drained arame, carrots, radishes, and scallions to the couscous. Stir in enough sesame oil, shoyu, and vinegar to give the salad intense flavor. Stir in the sunflower seeds. Serve at room temperature. (Leftovers will probably need to be perked up with additional dressing.)
