4 bunches baby bok choy
1 1/2 tablespoons vegetable oil
2 slices ginger
2 tablespoons soy sauce
1 teaspoon sugar
1/4 teaspoon salt
1/4 cup water
1/4 teaspoon sesame oil

Steps:

  • Wash the baby bok choy and drain. Separate the stalks and leaves. Cut the stalk diagonally and cut the leaves across.
  • Heat wok and add oil. When oil is ready, add ginger and stir-fry briefly, for about 30 seconds, until the ginger is aromatic. Add the bok choy, adding the stalks first, and then the leaves. Stir in the soy sauce, sugar, and salt, and stir-fry on high heat for 1 minute.
  • Add the water, cover the wok and simmer for about 2 minutes. Stir in the sesame oil and serve.

  • Heat oil over medium-high heat and cook ginger for about 30 seconds.
  • Add bok choy, soy sauce, and sugar. Stir-fry 3-5 minutes until cooked to desired tenderness.
  • Remove ginger slices, add sesame oil and serve.

1/3 cup black bean garlic sauce
3 large garlic cloves, minced
1 1/2 tablespoons soy sauce
1 1/2 tablespoons oriental sesame oil
1 tablespoon fresh lime juice
1 tablespoon fresh ginger, finely chopped peeled
4 boneless center cut pork chops (about 8 ounces each)
4 baby bok choy, halved lengthwise
2 tablespoons fresh cilantro, chopped
4 lime wedges

Steps:

  • Prepare barbecue (medium-high heat). Whisk together black bean sauce, garlic, soy sauce, sesame oil, lime juice, and ginger in shallow dish. Set 2 tablespoons marinade aside. Add pork to remaining marinade; let stand 20 minutes.
  • Remove pork from marinade; brush cut side of bok choy with reserved 2 tablespoons marinade. Grill pork until just cooked through and thermometer inserted into thickest part registers 145°F, about 5 minutes per side. Grill bok choy until softened and lightly charred, about 5 minutes total.
  • Divide pork and bok choy among 4 plates. Sprinkle with cilantro, garnish with lime wedges, and serve.

Chinese cooks are expected to determine the proportions of condiments and seasonings. Everything is "ge shi liang"--to taste. I've suggested amounts, but if they don't seem right, just trust your own tastebuds.

10 bunches baby bok choy
6 dried shiitake mushrooms
1/4 teaspoon salt (to taste)
2 teaspoons soy sauce (to taste)
1 teaspoon sugar (to taste)
2 teaspoons cornstarch (as needed)
1/4 teaspoon msg (optional)
4 tablespoons cooking oil (as needed)

Steps:

  • Soak mushrooms in boiling water.
  • Without separating bunches, wash and drain baby bok choy.
  • Wash mushrooms and squeeze out excess water. Quarter.
  • Heat wok over highest heat. Add 2 T oil and swirl to heat. Add bok choy. Add salt. Stir-fry until heated through. Arrange on plate.
  • In the same wok, heat remaining oil, stir-fry mushrooms, adding salt, soy sauce, and sugar.
  • Combine corn starch with 2/3 c water and add to mushrooms, along with with MSG.
  • Pour mushroom mixture over bok choy on serving platter. Serve as part of a Chinese meal. (For a Chinese meal, serve rice, a soup, and one dish per person. Choose a balanced variety of dishes.).

Easy to make, this side dish adds a colorful green vegetable to a meal and is a bit spicy and tangy. My DH loves it. If you choose to substitute fresh garlic and/or gingerroot, cook them in the hot oil before adding the cabbage. This side dish goes well with most Asian-spiced meats and poulty. Fried garlic (in jars) can be found at most Asian grocers, and imparts a bit of a roasted flavor to this dish.

1/2 teaspoon red pepper flakes, crushed
1 tablespoon low sodium soy sauce
2 teaspoons rice wine vinegar

1/8 teaspoon ground ginger
2 tablespoons corn or 2 tablespoons peanut oil

1/2 cup white onion, diced
2 small carrots, sliced thinly on the diagonal
4 cups bok choy, washed and chopped
3 -4 green onions, sliced
1 cup mushroom, stemmed and sliced
1/3 cup vegetable broth
1 tablespoon tamari

Steps:

  • Heat the peanut oil in a wok over high heat.
  • Add the white onion and cook 3 minutes until brown and crispy.
  • Add the carrots and stir fry another 3 minutes.
  • Add the bok choy, green onions and mushrooms and stir fry an additional 2 minutes.
  • Pour the broth over the vegetables and simmer for 2 minutes.
  • Season with tamari and serve over a bed of brown rice.
  • Yield is estimated as a side dish.
