  • Heat grill to medium-high heat.
  • Thread meatballs and peppers alternately onto 8 skewers.
  • Microwave jam in small microwaveable bowl on HIGH 15 sec. Stir in barbecue sauce; brush half onto kabobs.
  • Grill 8 to 10 min. or until meatballs are heated through, turning occasionally and brushing with remaining jam mixture for the last 2 min.

For the Meatballs:
1 pound ground meat of your choice (pork, chicken, pork, beef, veal or any combination of them)
1 large egg
1/3 cup panko breadcrumbs ((gluten free: Use GF breadcrumbs))
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
2 teaspoons dried parsley
For the Kabobs:
1 fresh ripe pineapple (, cut into 1-inch chunks)
1 large green bell pepper (, cut into 1-inch chunks)
1 large red bell pepper (, cut into 1-inch chunks)
1 large yellow onions (, cut into 1-inch chunks)
For the Sweet & Sour Sauce:
2/3 cup low sugar apricot, peach, or orange jam/marmalade
3 tablespoons ketchup
2 tablespoons soy sauce
2 tablespoons apple cider vinegar
1/4 teaspoon garlic powder
1 tablespoon cornstarch dissolved in 2 tablespoons water

Steps:

  • To make the sweet & sour sauce: Combine all sauce ingredients, except for the cornstarch, in a small saucepan and bring to a simmer. Stir in the cornstarch mixture and stir until thickened. Set aside until ready to use.
  • To make the meatballs, thoroughly combine all the meatball ingredients in a large mixing bowl and form the mixture into 1-inch meatballs. Yields about 24 meatballs.
  • Alternately thread six bamboo or metal skewers with the meatballs (4 on each skewer), pineapple and vegetables. Brush with about half of the sweet & sour sauce.Heat the grill to medium-high heat and brush the grill grates with some oil. Grill the kabobs about 5-6 minutes on each side or until lightly seared and the meatballs are cooked through.Brush the kabobs with remaining sweet and sour sauce and serve immediately.

1 tablespoon cornstarch
1/2 teaspoon salt

SAUCE:
1 can (20 ounces) pineapple chunks, undrained
2 medium green peppers, julienned
1/2 cup sugar
3 tablespoons cider vinegar
1 tablespoon canola oil
1 tablespoon soy sauce
3 tablespoons cornstarch
1/3 cup cold water

Steps:

  • In a large bowl, combine the first five ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls. , In a large skillet, brown meatballs in oil, turning often. Remove with a slotted spoon and set aside; drain., To the skillet, add the pineapple, green peppers, sugar, vinegar, oil and soy sauce. Cover and simmer until tender, about 5 minutes. 1/2 cup loosely packed brown sugar
1/2 cup rice wine vinegar
1/4 cup ketchup
1 tablespoon low-sodium soy sauce
2 1/4 cups pineapple juice
1 tablespoon cornstarch
One 25-count bag All-Purpose Meatballs (still frozen is fine), recipe follows
1 tablespoon sriracha hot sauce
1 cup drained small pineapple chunks
Steamed long-grain rice, for serving
2 tablespoons sliced green onions, for garnish
5 pounds ground beef
1 1/2 cups plain breadcrumbs
1/2 cup milk
1/4 cup heavy cream
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons grainy mustard
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
4 large eggs
2 tablespoons olive oil

Steps:

  • In a large skillet over medium-high heat, add the brown sugar, vinegar, ketchup, soy sauce and 2 cups of the pineapple juice. Bring to a boil.
  • Make a slurry by mixing the cornstarch into the remaining 1/4 cup pineapple juice, whisking to get out all the lumps. Whisk the slurry into the skillet and add the All-Purpose Meatballs. Bring to a simmer and add the sriracha. Cover and cook until the sauce is thickened and the meatballs are heated through, 8 to 10 minutes. Stir in the pineapple chunks.
  • Serve over steamed rice, garnished with green onions.
  • To make the meatballs, combine the ground beef, breadcrumbs, milk, cream, parsley, mustard, salt, black pepper, red pepper flakes and eggs in a large mixing bowl. Mix together well with your hands. Scoop out 1-tablespoon portions and roll them into balls with your hands. Place the meatballs onto parchment-lined baking sheets and put the baking sheets in the freezer for 5 to 10 minutes for the meatballs to firm up.
  • To brown the meatballs, heat the olive oil in a heavy pot or large skillet over medium-high heat. Add the meatballs in batches, making sure not to overcrowd the pot. Cook, turning the meatballs to make sure they brown all over, 5 to 7 minutes per batch. Drain on paper towels.
  • Freezer instructions: Put the cooked meatballs in a single layer on baking sheets and put into the freezer. When frozen, divide them into freezer bags, 25 per bag, and return them to the freezer. Yield: 125 meatballs.

Worcestershire sauce, to taste
3 tablespoons breadcrumbs
oregano, to taste
1 egg, slightly beaten
salt and pepper, to taste
1 clove garlic, minced
2 tablespoons vegetable oil

1/2 cup onion, chopped
3/4 cup brown sugar, packed
2 tablespoons vinegar

¾ teaspoon salt
1 dash ground black pepper

1 (8 ounce) can pineapple chunks, undrained
1 cup pineapple juice, or as needed
¾ cup white sugar
½ cup water
1 tablespoon water
¼ cup white vinegar
2 tablespoons white vinegar
1 ½ tablespoons soy sauce

2 cups hot cooked white rice

Steps:

  • Combine ground beef, onion, egg, 1 tablespoon cornstarch, salt, and pepper in a bowl. Use a cookie scoop to shape into meatballs.

Nonstick cooking spray
1 pound ground pork
1/4 cup cilantro, chopped, plus more for garnish
1/4 cup plain breadcrumbs
1 large egg, lightly beaten
1 clove garlic, grated
1 teaspoon grated fresh ginger
1/4 teaspoon ground cinnamon
Pinch ground cloves
Kosher salt and freshly ground black pepper
One 20-ounce can pineapple rings
1/3 cup ketchup
3 tablespoons apple cider vinegar
3 tablespoons honey
2 tablespoons low-sodium soy sauce

Steps:

  • Position the oven rack in the top third of the oven and preheat the oven to broil. Line a rimmed baking sheet with aluminum foil and lightly coat the foil with cooking spray.
  • Mix the pork, cilantro, breadcrumbs, egg, garlic, ginger, cinnamon, cloves, 3/4 teaspoon salt and 1/4 teaspoon pepper in a medium bowl until just combined. Use a 1-ounce ice-cream scoop to shape the mixture into 24 balls and place them on the prepared baking sheet. Bring to a simmer over medium-high heat and cook, stirring occasionally, until reduced by about a quarter and thickened, 4 to 5 minutes. Remove from the heat, add the meatballs and toss until well coated.
  • Skewer 1 pineapple piece and one meatball with a food pick or toothpick and place on a serving platter. Repeat with the remaining pineapple pieces and meatballs and sprinkle with chopped cilantro. Spoon any remaining sauce left in the skillet into a bowl and serve alongside the meatballs.

  • First, prepare meatballs. Place Laura’s 96% Lean Ground Beef, white whole wheat flour, garlic powder, ground ginger, salt, and egg into a medium-size bowl.
  • Then, prep yellow squash by finely grating (we used a cheese grater). Place shredded squash on top of 2 pieces of paper towel and squeeze out as much excess moisture as possible. Measure and then add around 1/2 cup of shredded squash into the bowl.
  • Mix with a wooden spoon or your hands until combined. Using a heaping tablespoon, scoop out meat and roll into balls. Place into a large container or casserole dish and set aside.
  • Next, prepare sauce by mixing together all sauce ingredients in a small bowl. Remove 1/3 cup for later. Use the remaining sauce to pour over meatballs. Toss. Place in fridge and let marinate for at least 15 minutes.

  • In a large mixing bowl, mix all the meatball ingredients. Combine well. Shape beef mixture into even-sized balls about 1-inch in diameter.
  • Pre-heat oil in a large skillet over medium high heat. After about 2 minutes when oil is hot enough, or if using a thermometer, temperature reaches 350 F degrees, drop the meatballs into the skillet. Cook half of the batch at a time and do not crowd the skillet. Pan fry and cook the meatballs for about 7 to 8 minutes, turning around to brown evenly.
  • Drain the meatballs on parchment paper to remove excess oil. When meatballs are slightly cooler, skewer the meatballs through long cocktail picks or use pre-soaked bamboo skewers. Alternately thread the beef meatballs with cubes of fresh pineapple in between. If using cocktail picks thread one meatball and one pineapple cube in each. If using bamboo skewers, thread 2 or 3 meatballs alternating with 2 or 3 pineapple cubes. Set aside.
  • In a small sauce pan, over medium heat, sauté in a tablespoon of vegetable oil, the garlic, onions, ginger for 2 minutes.
