1 package (8 ounces) cream cheese, softened
1 can (14-1/2 ounces) sweetened condensed milk
3-1/2 cups graham cracker crumbs
3 tablespoons lime juice
2 teaspoons grated lime zest
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup confectioners' sugar

Steps:

  • In a large bowl, beat the first 7 ingredients until blended. Shape into 1-in. balls. Roll cookie balls in confectioners' sugar. Refrigerate until firm, about 30 minutes., Store cookies between pieces of waxed paper in an airtight container in the refrigerator.

This recipe is based on the famous Key lime pie from Joe's Stone Crab restaurant in Miami Beach. If you can't find Key limes, use regular fresh lime juice.

1 cup plus 2 1/2 tablespoons finely ground graham cracker crumbs
1/3 cup sugar
5 tablespoons unsalted butter, melted
3 large egg yolks
1 1/2 teaspoons finely grated lime zest
2/3 cup fresh Key lime juice (about 23 Key limes total)
1 can sweetened condensed milk (14 ounces)
1/4 cup heavy cream
2 Key limes, thinly sliced into half-moons

Steps:

  • Make crust: Preheat oven to 350 degrees. Stir together graham cracker crumbs, sugar, and butter in a small bowl. Press evenly onto bottom of an 8-inch square glass baking dish. Bake until dry and golden brown, about 10 minutes. Let cool completely on a wire rack. (Leave oven on.)
  • Make filling: Put egg yolks and lime zest in the bowl of an electric mixer fitted with the whisk attachment. Mix on high speed until very thick, about 5 minutes. Reduce speed to medium. Add condensed milk in a slow, steady stream, mixing constantly. Raise speed to high; mix until thick, about 3 minutes. Reduce speed to low. Add lime juice; mix until just combined.
  • Spread filling evenly over crust using a spatula. Bake, rotating dish halfway through, until filling is just set, about 10 minutes. Let cool completely on a wire rack. Refrigerate at least 4 hours (or overnight).
  • Cut into 2-by-2-inch bars. Put cream in the clean bowl of an electric mixer fitted with the clean whisk attachment. Mix on medium-high speed until stiff peaks form. Garnish bars with whipped cream and a slice of lime.

4 egg yolks
2 teaspoons key lime zest (optional)
1/2 cup key lime juice
2 drops food coloring (optional)
1 graham cracker crust

Steps:

  • Beat egg yolks with food coloring.
  • Then mix in sweetened condensed milk.
  • Then mix in key lime juice and zest.
  • Pour into graham cracker crust and bake at 325 for about 20 minutes (check after about 13 minutes) or center is jiggly when shaken slightly, or when knife inserted in center leaves mark.
  • Chill in freezer for 10-15 minutes.

NO more using that icky key lime powdered mix or jell-o! I serve cinnamon graham crackers, croissant and pound cake with this lovely creation. I have also served oven baked flour tortillas sprinkled with cinnamon sugar. RECIPE HAS BEEN EDITED TO REFLECT THE CORRECT INGREDIENT AMOUNTS WHICH LED TO THE FIRST 2 POSTERS CHEESE BALL NOT FORMING A BALL.

2/3 cup sugar
1/4 cup graham cracker (coarsely crushed cinnamon flavor)

Steps:

  • Combine all ingredients in a mixing bowl until well combined.
  • Form into a ball, wrap in plastic wrap and chill in the fridge for 2 hours until ball is solid.
  • Remove cheese ball from the fridge and roll in the graham cracker crumbs.
  • Serve with extra cinnamon graham crackers, baked croissants and pound cake.
