CASHEW CHUTNEY (KAJU CHATNI)

Simple, creamy, spicy and fragrant fresh cashew chutney

Yield 1 cup

Number Of Ingredients 8

Ingredients

1 cup raw cashews, bits or halves
1/2-inch piece fresh ginger, sliced
5 fresh green chillies, with seeds, chopped
1 teaspoon sea salt
pinch of cayenne
1/4 teaspoon lemon juice
1/3 cup water
2 tablespoons fresh coriander, chopped

Steps:

Combine the cashews, ginger, chillies, salt, cayenne and lemon juice in a food processor or blender with a 1/4 cup of the water and blend until smooth, adding more of the water as necessary to produce a smooth purée. Transfer to a bowl and stir in the fresh coriander.
Serve fresh or refrigerate covered up to 3 days. If refrigerated, add a little more water when serving to thin the chutney as it tends to thicken when sitting.

2 c. salted roasted cashews (10 oz.), divided
1 rounded tsp. Madras curry powder
1/2 tsp. salt
1/4 tsp. black pepper
1 (8-oz) package cream cheese, softened
2 medium carrots, finely chopped (1 c.)
2 rounded tbsp mango chutney, large pieces finely chopped

Steps:

Pulse 1 c. cashews in a food processor until finely chopped (do not grind to paste). Transfer to a bowl. Process remaining cup of cashews with curry powder, salt, and pepper until finely ground and beginning to clump. Add cream cheese and puree until smooth. Add to chopped nuts, add remaining ingredients and stir to combine. Adjust seasonings.

I absolutely love this recipe! It's just divine & addicting, I could eat it all day. I'm not a big curry fan but this recipe has just a slight hint of curry in it, that makes it oh soo yummy!

1 teaspoon curry

Mix all ingredients together, chill if desired & enjoy!

1 cup Sour Cream
1 tablespoon Curry Powder
1/2 cup Major Grey's Chutney,large pieces choppped
4 Green Onions, sliced
2 pieces Crispy Cooked Bacon, crumbled
1 box Wheat Thins

Steps:

Mix first 5 ingredients together with hand mixer. Top with green onions and bacon.
Best made the day ahead, adding the onions and bacon right before serving.
