SELF-SAUCING JAFFA PUDDING

Self-saucing Jaffa pudding image

This intense chocolate orange sponge bake with thick sauce is about as indulgent as a good pudding gets

Provided by Sarah Cook

Categories     Dessert, Dinner

Time 1h5m

Number Of Ingredients 12

100g butter , melted, plus a little extra for the dish
250g self-raising flour
140g caster sugar
50g cocoa
1 tsp baking powder
zest and juice 1 orange
3 eggs
150ml milk
100g orange milk chocolate or milk chocolate, broken into chunks (we used Divine orange milk chocolate)
single cream or ice cream, to serve
200g light muscovado sugar
25g cocoa

Steps:

  • Butter a 2-litre baking dish and heat oven to 180C/160C fan/gas 4. Put the kettle on. Put the flour, caster sugar, 50g cocoa, baking powder, orange zest and a pinch of salt in a large mixing bowl. Whisk together the orange juice and any pulp left in the juicer, the eggs, melted butter and milk, then pour onto the dry ingredients and mix together until smooth. Stir in the chocolate chunks and scrape everything into the baking dish.
  • Mix 300ml boiling water from the kettle with the sugar and cocoa for the sauce, then pour this all over the pudding batter - don't worry, it will look very strange at this stage! Bake on the middle shelf of the oven for 30 mins until the surface looks firm, risen and crisp. As you scoop spoonfuls into serving bowls, you should find a glossy, rich chocolate sauce underneath the sponge. Eat immediately with vanilla ice cream or single cream.

CHOCOLATE SELF SAUCING PUDDING

Chocolate Self Saucing Pudding image

Recipe video above. A classic chocolate self saucing pudding! One batter magically transforms into a moist chocolate cake AND a chocolate sauce. The sauce has the consistency of maple syrup - never watery, never gluggy. This is easy and fast to make. Serve it up straight away otherwise the sauce gets absorbed into the cake!

Time 40m

Number Of Ingredients 12

1 cup (175g) brown sugar (, loosely packed (Note 1))
1/4 cup (30g) cocoa powder (, unsweetened (Note 2))
1 1/4 cups (315ml) boiling water
1 cup (150g) plain flour ((all purpose flour))
2 1/2 tsp baking powder
1/3 cup (70g) white sugar (, preferably caster/super fine but ordinary ok)
1/4 cup (30g) cocoa powder (, unsweetened (Note 2))
Pinch of salt
1/2 cup (125ml) milk
50 g / 4 1/2 tbsp butter (, melted)
1 egg
1 tsp vanilla extract

Steps:

  • Preheat oven to 170C/335F (standard) / 150C/305F (fan forced / convection).
  • Grease a 5 - 6 cup baking dish with butter. (Note 3)
  • Topping: Whisk brown sugar and cocoa in a bowl, set aside.
  • Whisk flour, baking powder, caster sugar, cocoa powder and salt in a bowl.
  • In a separate bowl or jug, whisk together the butter and milk, then whisk in the egg and vanilla.
  • Pour the egg mixture into the flour mixture. Mix until combined - it will be a thick batter.
  • Spread into baking dish. Sprinkle with sugar / cocoa mixture. Shake gently to spread out thinly.
  • Carefully pour the hot water over the back of a dessert spoon all over the top of the pudding - see photo in post or video below recipe. (Note 4)
  • Transfer to oven and bake for 30 minutes, or until the top of the cake springs back when poked lightly. The top will be a bit crusty, like the top of brownies.
  • Remove from oven, stand for just a few minutes (no more!), then serve immediately. (Note 5)

Time 3h5m

Yield 6 serving(s)

Number Of Ingredients 12

1 cup caster sugar
1 1/2 cups self raising flour (sifted)
90 g butter (melted and cooled)
1 teaspoon vanilla extract
2 tablespoons cocoa powder
1 egg (lightly beaten)
3/4 cup milk
1 cup light brown sugar
2 tablespoons cocoa powder (extra)
2 1/2 cups boiling water
1 tablespoon icing sugar (or as much as you need to serve)
6 scoops ice cream or 6 scoops cream, to serve

Steps:

  • Preheat slow cooker for 20 minutes on high.
  • Grease the slow cooker bowl (would recommend if using butter to put on wax paper or baking/parchment paper to do).
  • In a separate bowl, combine the first 7 ingredients mixing or whisking well together.
  • Sift brown sugar and extra cocoa powder over mixture.
  • Using a spoon, gently and evenly pour the boiling water over the mixture.

200g pitted medjool dates
100g unsalted butter, softened, plus extra for the dish
75g demerara sugar
75g dark brown soft sugar
2 large eggs
250g plain flour
1 tsp bicarbonate of soda
1 tbsp baking powder

200g dark brown soft sugar
30g cocoa powder

In a jug whisk milk, egg and spread in a jug. Add to flour mixture and stir until well combined. Pour batter into prepared dish and spread evenly. Smooth top with the back of a wet spoon (this produces a pudding that cooks evenly).

  • 3 Bake for 35-40 minutes or until the top forms into a cake and a skewer inserted into the centre of pudding portion (top half) comes out clean. Stand for 5 minutes to allow sauce in base of pudding to thicken. Dust with icing sugar.

  • Sift flour, baking powder, salt and cocoa together in a large bowl. Add sugar and stir to combine. Make a well in the centre of the dry ingredients and add milk, vanilla extract and melted butter. Mix everything together until smooth. Spread the batter into the greased baking dish and even out.
  • In a jug, add sugar, cocoa and vanilla extract. Add the boiling water - start by adding just enough to mix the dry ingredients together to a liquid sludge, then add the rest. If you add the water all at once, you sometimes get clumps of cocoa powder.Pour the hot liquid slowly and carefully over the batter. Do this by pouring the topping onto the back of a dessertspoon, all over the batter. This helps distribute the liquid onto the top of the batter gently, without creating holes in the batter.Transfer the dish to the preheated oven and bake for 30-40 minutes or until the cake is springy to the touch. The top forms a bit of a crust which is delicious. The bottom will now have formed a liquid sauce which will become gooey when rested. The cooking time can vary by 5-10 minutes depending on how deep or shallow your baking dish is.Allow to rest for 5 minutes and serve straight away (see notes). This pudding is best served using a large serving spoon as it is a homely dessert. Feel free to c
