Steps:
- In a small bowl, dissolve the yeast and honey in 1/4-cup warm water.
- In a mixer fitted with a dough hook, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and mix on low speed until the dough comes cleanly away from the sides of the bowl and clusters around the dough hook, about 5 minutes. (The pizza dough can also be made in a food processor fitted with the steel blade. Pulse once or twice, add the remaining ingredients, and process until the dough begins to form a ball.)
- Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a warm spot for about 30 minutes. (When ready, the dough will stretch as it is lightly pulled).
- Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 15 to 20 minutes. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.
- Place a pizza stone on the middle rack of the oven and preheat the oven to 500 degrees F.
- To prepare each pizza, dip the ball of dough into flour, shake off the excess flour, place the dough on a clean, lightly floured surface, and start to stretch the dough. Press down on the center, spreading the dough into an 8-inch circle, with the outer border a little thicker than the inner circle. If you find this difficult to do, use a small rolling pin to roll out the dough. Lightly brush the inner circle of the dough with oil and arrange the topping of your choice over the inner circle.
- Using a lightly floured baker's peel or a rimless flat baking tray, slide the pizza onto the baking stone and bake until the pizza crust is nicely browned, 10 to 12 minutes. Remember that the oven is very hot and be careful as you place the pizza into and out of the oven. Transfer the pizza to a firm surface and cut into slices with a pizza cutter or very sharp knife. Serve immediately.
BUTTERMILK BISCUIT BUBBLE PIZZA
A change from regular pizza, you may adapt this recipe to your liking by changing the ingredients :)

Steps:
- Set oven to 375 degrees F.
- Grease a 13 x 9-inch baking dish.
- In a bowl combine the pasta sauce with the green pepper, onion, olives and mushrooms.
- Cut EACH biscuit into four even pieces with kitchen shears.
- Arrange HALF of the biscuit pieces in the greased baking dish (it might not cover all of the dish).
- Spread HALF of the sauce on top of the biscuits.
- Top with the full amount of pepperoni.
- Then sprinkle HALF of the mozza cheese on top of the pepperoni.
- Repeat the layers (remaining biscuits, then sauce, the remaining mozza cheese on top).
- Sprinkle with a little grated Parmesan cheese on top of the mozza cheese.
- Bake for about 20-25 minutes or until the sides are golden brown.
NY STYLE PIZZA DOUGH
I've tried many different pizza dough recipe's and none of them give me a dough ball that I can toss and stretch like what you can buy in the store (or what I was used to when I worked at Papa Gino's). I like my pizza dough thin, but not crunchy. This dough takes some prep, but has some real promise. I've only made it once and used 1/2 wheat flour - but I think that made the dough just a little too tough. The directions call for a pizza stone - but you can use a pizza pan too. For the sauce - I love the simple and tasty sauce of recipe #1005 ! Watch the cooking time - 20 minutes might be too much !!!

- In a large bowl, dissolve sugar and salt in water.
- Add oil and flour and stir with heavy spoon for 1 minute.
- Turn out to a lightly floured surface and press into a circle.
- Sprinkle yeast evenly over dough and knead for 12 minutes.
- Divide dough into portions: 6 oz. for Calzones, 18 oz. for 12 inch, 25 oz. for 15 inch.
- Roll each portion into a ball. You want a dough ball without visible seams except the bottom.
- Place dough balls in a bowl, cover with plastic wrap, and allow to proof for 1 to 2 hours at room temperature to use the same day, or store in refrigerator to use the next day.
- Place dough ball on lightly floured surface, and lightly flour the top. Use fingertips to evenly flatten out the dough ball. Work from the edges to the center press dough into a 12" circle. Place both hands within the shell edge and stretch with fingertips and palms maintaining an even pressure. Or, use a lightly floured rolling pin to stretch to desired shape.
- Sprinkle cornmeal or semolina on pizza peel (a wooden paddle with a handle to slide the pizza in the oven) or a cutting board. The cornmeal allows the pizza to slide onto the stone easily.
- After topping the pizza, when you are ready to cook it. Shake the peel or cutting board to make sure none of the dough is sticking.
- Carefully slide the pizza into the oven.
- Bake in a 500 degree oven for 20-25 minutes, until crust is golden.

BUTTERMILK PIE CRUST DOUGH
I have been making this pie crust since the recipe came out in Bon Appetit in l99l. This recipe makes up enough for 2 crust pie and is definately very forgiving in the handling of it!!!

- Add buttermilk and stir with fork until moist clumps form. (Dough can also be prepared in processor. Using on/off turns, cut butter and shortening into dry ingredients until coarse meal forms. Add buttermilk and process just until moist clumps form.) Press together to form dough.
- Divide dough in half. Gather dough into balls; flatten into disks. Wrap separately and chill 1 hour.
- Note: Can be prepared ahead of time. Refrigerate 1 week or freeze 1 month. Let dough stand at room temperature to soften slightly before using.

- Dissolve 1 package of Yeast in 1/2 cup plus 2 Tbs of lukewarm water. Add Flour in bowel of electric mixer. Add dissolved yeast,oil,buttermilk,baking soda and salt. Using dough hook mix well at medium -low speed until all ingredients are incorporated, increase speed to high and mix dough for 4-5 minutes. Dust or oil ball and place in a large bowel with plastic wrap. Let rise in a warm place for 1-3 hours. Easy Man's way; Put yeast and sugar in electric bread maker first and then the rest of the ingredients. Put electric bread maker on manual setting and come back in 2-3 hours.
