Steps:
- Evenly position 2 racks in the middle of the oven and preheat to 375 degrees F. (on convection setting if you have it.) Line 2 baking sheets with parchment paper or silicone sheets. (If you only have 1 baking sheet, let it cool completely between batches.)
- Put the butter in a microwave safe bowl, cover and microwave on medium power until melted. (Alternatively melt in a small saucepan.) Cool slightly. Whisk the sugars, eggs, butter and vanilla in a large bowl until smooth.
- Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a wooden spoon; take care not to over mix. Stir in the chocolate chips or chunks.
- Scoop heaping tablespoons of the dough onto the prepared pans. Wet hands slightly and roll the dough into balls. Space the cookies about 2-inches apart on the pans. Bake, until golden, but still soft in the center, 12 to 16 minutes, depending on how chewy or crunchy you like your cookies. Transfer hot cookies with a spatula to a rack to cool. Serve.
- Store cookies in a tightly sealed container for up to 5 days.
- For a Rocky Road Bar:
- Lightly butter a 9 by 13-inch baking pan. Make the batter as per cookie recipe and fold in 1 cup chopped walnuts along with the chocolate chips. Spread batter in prepared pan. Bake until the edges are light brown and the batter sets, about 45 minutes. Cool slightly and cover surface with 4 cups marshmallows and 1 cup chocolate chips. Broil at least 8 inches from the heat until marshmallows turn golden brown, about 2 minutes. (Keep an eye on the marshmallows, and turn the pan frequently--they go from golden to char in a wink.) Cool, cut and serve.

Steps:
- Remove the cookie dough from the package, and place it between two sheets of parchment paper. Then use a rolling pin to flatten it into a rectangle.
- Prepare the brownie mix according to the instructions on the box, but use only half of the water that the recipe calls for so the batter is not too liquidy when you eventually roll up the dough.
- Spread the brownie batter evenly over the cookie dough with a spatula.
- Using the edge of the parchment paper, carefully but tightly begin rolling the cookie dough the same way you would a cinnamon roll.
- Chill the log in the freezer for at least 15 minutes. It should be firm but not rock solid.
- Slice the log into cookie-shaped pieces with a sharp knife. If you notice the log is starting to flatten when you cut it, stick it in the freezer for a few extra minutes to allow it more time to firm up.
- Place the cookies on a lined baking sheet, and bake at 350°F for 8-10 minutes or until the tops of the cookies look dry.
- Let cool and enjoy!

- Mix 3 cups of the Sugar Cookie Make Ahead Mix with 3/4 cup of softened butter using a stand mixer with the paddle attachment or in a large bowl using an electric hand mixer. Beat on high speed until well combined, which will take about 2 minutes. Add 1 large egg and 2 teaspoons of vanilla extract or almond extract to the mixture and beat on high for 1 minute. Be sure to scrape down the sides of the bowl in between mixing. Remove dough from bowl and divide into two equal portions. Wrap the dough in wax paper, parchment paper, or plastic wrap and refrigerate for at least one hour. Once the dough is well chilled, remove one portion at a time from the refrigerator. Preheat the oven to 350°F. Lightly flour a flat surface and then sprinkle a bit of flour over the dough (or cover with wax paper or parchment paper). Roll out the dough to 1/4 thickness and use cookie cutters to cut out the desired shapes. Transfer cookie cutouts to a parchment-lined baking sheet, placing cookies 2 inches apart,
- Preheat your oven to 375°F. In a large bowl, mix 3 cups of Make Ahead Chocolate Chip Cookie Mix with 1/2 cup unsalted softened butter and 1 teaspoon vanilla extract. You can do this in a stand mixer or with an electric hand mixer, but it is easy to do by hand with a wooden spoon. If you mix this by hand, it will take approximately 4 minutes to combine. Once the butter and extract are well combined with the mix, add 1 large egg and mix well again until fully incorporated, which takes about 2 minutes. Using a tablespoon, scoop rounded cookie mixture onto a parchment-lined baking sheet, placing the scooped amounts two inches apart. Bake in a 350°F oven (See RECIPE NOTES below) for approximately 8-10 minutes until the edges are golden brown. Remove from the oven, allow the cookies to cool slightly on the baking sheet, and then transfer to a cooling rack to cool completely.
- Preheat your oven to 375°F. In a large bowl, mix 3 cups of Make Ahead Oatmeal Raisin Cookie Mix with 1/2 cup softened butter and 1 teaspoon vanilla extract. You can do this in a stand mixer or with an electric hand mixer, but it is easy to do by hand with a wooden spoon. If you mix this by hand, it will take approximately 4-5 minutes to combine. The oats require using a bit more "elbow grease" than if you were just mixing in flour. Once the butter and extract are well combined with the mix, add 1 large egg and mix well again until fully incorporated, which takes about 2 minutes. Using a tablespoon, scoop the rounded cookie mixture on to a parchment-lined baking sheet, placing the scooped amounts two inches apart. Bake in a 350°F oven (See RECIPE NOTES below) for approximately 12-14 minutes until the edges are golden brown. Remove from the oven, allow the cookies to cool slightly on the baking sheet, and then transfer to a cooling rack to cool completely.
- Preheat your oven to 375°F. In a large bowl, mix 2 1/4 cups of Make Ahead Peanut Butter Cookie Mix with 1/2 cup of softened butter and 1 teaspoon of vanilla extract. You can do this in a stand mixer or with an electric hand mixer, but it is easy to do by hand with a wooden spoon. If you mix this by hand, it will take approximately 4 minutes to combine. Once the butter and extract are well combined with the mix, add 1 large egg and mix well again until fully incorporated, which will take about 2 minutes. Next, add 1/2 cup peanut butter (smooth or chunky) to the mixture and mix well until the peanut butter is thoroughly incorporated with the mixture, which takes about 2 minutes. (If you prefer, you can substitute with another "nut" butter such as almond butter.) Using a tablespoon, scoop the rounded cookie mixture on to a parchment-lined baking sheet, placing the scooped amounts three inches apart. Using the tines of a fork, slightly flatten each round of cookie dough with a hash mark. (

- Ingredients. If you have a scale, the whole recipe is made easier by measuring the weights of your ingredients. If you don't have a scale, you should get one!
- Secrets Revealed. I did not embark on this experiment lightly. I read everything I could find about what makes a chocolate chip cookie truly outstanding, and gained the most insight from the experiment that inspired this one, performed by David Leite for the New York Times in July of 2008.
- The Prep. First you want to toast you some nuts. This makes for the extra yum. If you're allergic, I guess you should skip this part. In a pre-heated 350oF (180C) oven bake
- The Procedure. The primary step in most cookie recipes is to sift together the dry ingredients. So do that. In a bowl, sift or whisk (easier!) together
- The Hard Part. You know what I'm going to say. It's time to wait. It's time to take all this precious cookie dough you just made. . . and not eat it.
- Let's Be Serious. You are not going to wait the 24 hours. I know this, you know this, who are we kidding? Nonetheless, it's absolutely worth the wait, so here's my suggestion to get you through the next 24 hours.
