"Knowing a diabetic friend would be attending our cookout, I concocted this sorbet-like treat so she wouldn't miss out on dessert," Diane Daniel of Birmingham, Alabama reports. "I've also made it with sugar-free cherry and raspberry gelatin with great results."

ORANGE DELIGHT
My favorite gelled salad. I usually only get to make it at Christmas or Thanksgiving though. It is too much for just hubby and me, even though it is a smallish one. Cook time is chill time.

ORANGE PINEAPPLE DELIGHT
A spoonful of Pat Coauette's pudding, with its pineapple and coconut flavor and sunny orange color, is a sweet reminder of warmer climates. "This is especially good in summer because it's so refreshing," she writes from Crookston, Minnesota.

- Beat the cake mix with the pie filling, eggs, and sour cream using a fork.
- Beat one minute.

- Bake at 350 degrees for 25-35 minutes.
- Cool.
- Whip together the cream cheese, pudding mix, and pineapple. FOld into the Cool Whip and spread on the cake.

ORANGE-PINEAPPLE DELIGHT
I was just tickled with this recipe. Many years ago I had a similar recipe that used fresh strawberries and strawberry jello; it was very pretty and very tasty and I was sad when I lost my copy. But I like orange-pineapple even more than strawberries, so this recipe, found in a Jell-O cookbook, is a newfound treasure! Serve as a sweet salad, or a dessert. Perfect for a potluck or bbq.

Steps:
- Drain pineapple well, reserving juice.
- Place pineapple juice in a 2-cup measuring cup and add enough cold orange juice to make 1 1/2 cups liquid.
- Place orange jello in a large bowl and add boiling water; stir at least 2 minutes or until jello is completely dissolved.
- Stir pineapple/orange juice into jello.
- Reserve one cup of the jello mixture; leave this at room temperature.
- Stir half of the crushed pineapple into jello mixture in bowl; pour into a 6 cup mold that you've sprayed with nonstick cooking spray (like Pam).
- Refrigerate mold about two hours, or until set but not firm-- mixture should stick to your finger when touched, and should mound.
- Place cream cheese into mixing bowl and stir in reserved gelatin (what you've been keeping at room temp); whisk well until smooth.
- Stir in remaining crushed pineapple; spoon this mixture over gelatin layer in mold.
- Refrigerate for 4 hours or until firm; unmold and serve.

- Blood Orange Eton Mess. This English dessert is traditionally made with light-as-clouds meringue, whipped cream and strawberries. We gave it a wintry twist by substituting fresh blood orange curd for berries.
- Mini Citrus Monkey Bread. Orange juice and zest give these handhelds all the citrusy flavor they need. They’re mind-blowingly easy to pull off too since they start with store-bought pizza dough.
- Orange Flower Olive Oil Cake. It’s just the elegant finale for your next garden party. Serve it with orange slices, pomegranate arils and a dusting of powdered sugar.
- Cranberry-Orange Pie. No offense, but your relatives are tired of apple pie. Serve this vibrant beauty at Thanksgiving instead and let the compliments roll in.
- Baked Brie with Figs, Pistachios and Orange. Nothing says classy like serving cheese for dessert. Might we suggest washing it down with soul-warming mulled wine?
- Citrus Shortcake. Like a giant dessert biscuit blanketed with fresh whipped cream. Serve alongside a bowl of mixed citrus pieces (grapefruits, tangerines, oranges…) and let your guests scoop their own fruit.
- Orange and Chocolate Brioche Tarts. Not a single person will expect these stunners to show up at the holiday cookie swap. Leave the rinds on the orange slices since their bitterness will complement the chocolate.
- Ombré Citrus Upside-Down Cake. Plop this baby on the table and watch your relatives’ jaws drop. Not only is it easy on the eyes, but the cake itself is super moist and wholesome, thanks to sour cream and whole-wheat flour.
- 3-Ingredient Blood Orange Granita. Think of this refreshing treat as a chic, grown-up snow cone. The hardest part is waiting for it to partially freeze before scraping the ice.
- Broiled Citrus Ricotta Toast. With that much honey, brown sugar and cinnamon in the mix, this brunch staple doubles as dessert in our book.
