CALF'S LIVER WITH BACON, CARAMELIZED ONIONS AND SHERRY

2 pounds calf's liver, cut into 6 pieces
1 cup whole milk
8 bacon slices, cut into 1/2-inch pieces
3 tablespoons unsalted butter
2 large onions, thinly sliced
3/4 cup all-purpose flour
1 teaspoon Essence, recipe follows
1 teaspoon salt
1/2 teaspoon black pepper
1 cup dry sherry
1 tablespoon beef broth
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • In a large glass baking dish, add liver and milk and let soak for 20 minutes.
  • In a large skillet over medium heat, add bacon and butter and cook until fat has rendered, about 6 minutes. Transfer bacon to paper towels to drain and reserve 3 tablespoons fat in skillet. Reserve remaining fat.
  • Cook onions with salt and pepper, to taste, in bacon fat in skillet over moderate heat for 10 minutes or until caramelized. Transfer onions to a bowl and add bacon. Set aside.
  • Pat liver dry and discard milk. In a large zip-top bag, add flour, Essence, salt and pepper. Working in batches, add liver and shake to coat. Set aside on baking sheet until ready to cook.
  • Add 2 tablespoons reserved bacon fat to skillet over high heat and add liver; cook for 2 to 3 minutes on each side. Turn liver over, remove pan from heat, add sherry and beef broth, return pan to heat and shake and flambe. Cook on second side for about 2 minutes or until cooked through. Serve liver with pan sauce, topped with onions and bacon.

2 medium carrots, roughly chopped
1 large onion, roughly chopped
3 ribs celery, roughly chopped
1 medium turnip, peeled and roughly chopped
1 large Granny Smith apple, peeled, cored and chopped
1 clove garlic, peeled
Extra-virgin olive oil
2 tablespoons all-purpose flour
Kosher salt and freshly ground black pepper
1 cup apple liqueur (recommended: Calvados)
4 cups low-sodium chicken stock

Steps:

  • Place carrots, onion, celery, turnip, apple and garlic in a food processor and pulse until you have a coarse textured puree. Once roasting pan comes out of the oven (and meat is removed) set it over medium-high heat on the stove. Add a 2-count of olive oil then add vegetable puree. Sweat for 7 to 8 minutes until most of the moisture has cooked off, then dust with flour. Cook for 2 more minutes stirring well to incorporate all the flour with the fat in the pan. Add the apple liqueur and scrape the bottom of the pan. Gradually add chicken stock, stirring as you go to ensure there are no lumps. Bring to a simmer and season well with salt and pepper. Simmer then remove from heat and strain through a sieve - it's okay if some of the pulp goes through as this will naturally add body to the gravy. Serve with roast and stuffing.

1 pkt. SHAKE 'N BAKE Chicken Coating Mix
1 medium apple, sliced
1 small onion, chopped
1 cup mushrooms, sliced
2 Tbsp. butter
1/2 cup beef broth
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
2 Tbsp. Calvados apple brandy

Steps:

  • Preheat oven to 400°F. Coat pork with coating mix as directed on package. Place in shallow roasting pan. Bake 30 minutes or until cooked through (165°F).
  • Meanwhile, cook and stir apples, onions and mushrooms in butter in medium saucepan on medium heat until tender. Add broth and cream cheese; cook until cream cheese is completely melted, stirring frequently. Stir in brandy; cook until heated through.
  • Cut pork into slices. Serve topped with the sauce.

Reserved roasting pan with turkey drippings, neck, and giblets from Dry-Brined Roasted Turkey or
1/2 cup Calvados or brandy
4 1/2 cups homemade Turkey Stock, or Chicken Stock, or store-bought low-sodium chicken stock
1/4 cup plus 2 tablespoons unbleached all-purpose flour
2 tablespoons unsalted butter

Steps:

  • Strain drippings from roasting pan through a sieve, and press to extract liquids; reserve pan. (Shred neck meat and chop giblets if making giblet version, step 4; otherwise, discard.) Pour drippings into a glass measuring cup or a fat separator. Let stand until separated, about 10 minutes. Pour off fat.
  • Place pan on stove across 2 burners. Add Calvados. Bring to a simmer over medium-high heat. Cook, scraping up brown bits and stirring constantly with a wooden spoon, for 2 minutes. Add reserved drippings and 4 cups stock; bring to a simmer.
  • Meanwhile, whisk together remaining 1/2 cup stock and the flour until smooth. Slowly whisk stock-flour mixture into pan. Simmer until gravy is reduced by half and coats the back of a spoon, 10 to 12 minutes.
  • Remove from heat. Add butter, and swirl pan until butter melts. Strain gravy through a fine sieve; discard solids. Return shredded meat and chopped giblets to gravy if desired. Serve immediately or keep warm over low heat.

Steps:

  • Place the sugar in a medium-size heavy saucepan. Place over medium heat, and cook until sugar is golden (do not stir).
  • Carefully add cider, stirring constantly (mixture will bubble vigorously).
  • Stir in brandy; cook 1 minute.
  • Add broth, lemon juice, nutmeg and salt.
  • Combine water and cornstarch, stirring with a wire whisk; add to the gravy. Bring to a boil and cook 1 minute, stirring constantly.

  • Freeze sorbet in ice cream maker, then transfer to an airtight container and put in freezer until soft-frozen, at least 2 hours. Stir before serving if separated.

  • Meanwhile, place carrots, onion, celery, turnip, apple, and garlic in a food processor (work in batches if needed) and pulse to a coarse puree. Remove bones from roasting pan; set aside. Place roasting pan on stove over high heat. Add remaining olive oil and vegetable puree. Cook and stir 15 minutes, until most of the moisture has cooked off and vegetables begin to caramelize. Sprinkle with the flour; cook 2 minutes more, stirring well to incorporate flour.
  • Gradually add chicken stock, stirring to ensure there are no lumps. Place bones back in pan. Bring to a simmer. Season well with salt and pepper. Add the Calvados; gently simmer 20 minutes more. Remove from heat and strain through a sieve into a saucepan. (Don't use a very fine mesh sieve, as allowing some of the pulp to pass through helps thicken the gravy). Whisk in a few of the cold butter cubes at a time until incorporated. Repeat until all the butter has been incorporated. This thickens the sauce and adds a glossy, velvety finish and richness. Makes about 3-1/2 cups gravy.
