1 lb linguine (reserve 1 cup cooking liquid)
3 Tbsp olive oil
4 Tbsp unsalted butter
3 large or 4 medium garlic cloves (pressed or minced (about 1 1/2 Tbsp))
1 lb large shrimp (21-25 count, peeled and deveined)
1 tsp sea salt for shrimp

  • Meanwhile, In a large (12-14 inch) heavy-bottomed pan over medium heat, add 4 Tbsp butter and 3 Tbsp olive oil. Once butter is sizzling, add 4 pressed garlic cloves an stir 1 minute. Add shrimp in a single layer and sprinkle with 1 tsp salt and 1/4 tsp black pepper. Saute shrimp 1-2 minutes per side, just until pink and not translucent.
  • Add artichokes and toss to combine for another 2 minutes, or just until warmed through. Remove from heat and stir in 1/4 cup chopped parsley, 1 tsp lemon zest, and 1/4 cup lemon juice.
  • Pour shrimp and artichokes over drained pasta and toss to combine. If juicier pasta is desired, drizzle with reserved cooking liquid from pasta (I added 1/2 cup pasta liquid).

PASTA WITH ARTICHOKES AND PANCETTA

Pasta With Artichokes and Pancetta image

Sautéed artichokes with leeks and pancetta make a hearty, earthy sauce for pasta, brightened by a squeeze of lemon and some herbal dry vermouth. Take care to remove all the tough outer petals of the artichokes; you only want the thinnest, most tender petals to end up in the pan. Bacon avoiders can skip the pancetta. Just use extra olive oil and Parmesan at the end to make up for the missing richness.

Categories     dinner, pastas, main course

Time 1h

Yield 3 to 4 servings

Number Of Ingredients 13

1 lemon, cut in half
4 medium artichokes, or 8 to 10 small or baby artichokes
8 ounces short tubular or corkscrew-shaped pasta
Kosher salt
1 tablespoon extra-virgin olive oil, more as needed
6 ounces pancetta, diced
1 large leek, halved and thinly sliced
1/2 teaspoon ground black pepper, more for serving
2 tablespoons dry (white) vermouth or not-too-dry white wine
2 tablespoons chopped chives
1/4 cup parsley or mint leaves, chopped
1/4 cup grated Parmesan cheese, more for serving
Fresh lemon juice, for serving

Steps:

  • Squeeze one lemon half into a large bowl of cold water. Pluck off all tough leaves from one artichoke, until you reach leaves that are pale and soft. Using a vegetable peeler or paring knife, peel stem and trim base of artichoke, then dunk it in lemon water to keep it from browning. Cut off the top 1/3 of artichoke and discard. Cut artichoke in half; remove any inner purple leaves and scoop out the fuzzy choke if there is one. Thinly slice artichoke lengthwise to include some of the heart. Put slices in the lemon water and leave them there as you cut remaining artichokes.
  • Bring a large pot of heavily salted water to a boil, then cook pasta according to package directions. Reserve 1 cup pasta water, then drain.
  • Meanwhile, heat oil in a large skillet over medium heat. Stir in pancetta and cook until browned and crispy, stirring occasionally, 8 to 12 minutes. Use a slotted spoon to transfer pancetta to a paper towel-lined plate; leave fat in pan.
  • Drain the artichokes, shaking them well to remove excess water. Raise heat under pan to medium-high, and stir in artichokes, leeks, 1/2 teaspoon salt and 1/2 teaspoon pepper, and cook until golden brown and tender, 10 to 12 minutes. Reduce heat to low, and stir in vermouth, scraping up any browned bits from bottom of skillet.
  • Stir in cooked pasta, pancetta, chives and parsley. If the mixture seems dry, add pasta water, a little at a time. Stir in more salt to taste, Parmesan and lemon juice to taste.
  • Transfer to serving plates and top with a drizzle of oil, more black pepper, and more grated cheese.

PASTA SALAD WITH ARTICHOKES AND SHRIMP

Pasta Salad with Artichokes and Shrimp image

This recipe is my favorite way to prepare artichokes because it's easy to prepare, once you've had the practice. Artichokes are very versatile; they can be mixed in a salad, pasta, blended to make dip, eaten in antipasto or as a topping on pizza or tacos. Today I'll be preparing them in a pasta salad with artichokes and shrimp. It's very simple and perfect for lunch or a light dinner.

Categories     Lunch

Time 45m

Yield 4

Number Of Ingredients 18

4 medium artichokes
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 teaspoon salt
2 bay leaves
4 peeled garlic cloves
Zest of half a lemon
6 whole black peppercorns
1/2 pound of pasta cooked al dente
1/2 pound cooked shrimp
2 tomatoes chopped
1/4 cup grated white onion
1/2 cup olives
4 lemons, juiced
2 tablespoons white vinegar
2 tablespoons olive oil
Salt and pepper to taste
Fresh cilantro or parsley

Steps:

  • For the artichokes: Add lemon to a bowl of water. Use a knife to cut the leaves from the tip to the center. Then begin to remove the exterior leaves, the hard and thick ones. When the color of the leaves becomes light green, it's time to stop. Submerge the artichokes in the water from time to time to prevent them from browning. Now cut the artichokes in half, then in half again and you'll be left with the heart.
  • Set the hearts in the water while you continue this process with the rest of the artichokes.
  • Heat the oil over medium heat in a pot. Add the bay leaves, garlic, lemon zest and peppercorns. Strain and add the artichokes. Cook for 2 minutes. Add the vinegar, salt and enough water to cover the artichokes. Once it boils, cover and cook for 20 - 30 minutes or until the artichoke hearts are tender.
  • For the salad: Mix the ingredients on a dish and serve cold.

SALAD PASTA

Salad Pasta image

You know pasta salad, but this is salad pasta. A whole salad's worth of greens, folded into pasta to make a complete dinner in one bowl (or plate). We like to make this recipe with chickpea pasta for the added protein, and the garlicky anchovy sauce complements it especially well.

Provided by Anna Stockwell

Categories     Pasta     Salad     Anchovy     Garlic     Olive Oil     Butter     Lemon Juice     Radicchio     Arugula     Basil     Dinner     #cook90     Wheat/Gluten-Free     Quick & Easy     Quick and Healthy

Yield 4 servings

Number Of Ingredients 12

1 (2.2-oz.) can oil-packed anchovy fillets
1 head of garlic, cloves separated, thinly sliced
3/4 cup extra-virgin olive oil
3/4 tsp. crushed red pepper flakes
1 lb. penne pasta
Kosher salt
3 Tbsp. cold unsalted butter
3 Tbsp. fresh lemon juice
1 head of radicchio, trimmed, quartered, leaves separated
1 (5-oz.) package baby arugula
1 cup basil leaves, torn if large
Freshly ground black pepper

Steps:

  • Combine anchovies, garlic, oil, and red pepper flakes in a large skillet. Cook over medium heat, stirring often, until anchovies have disintegrated into oil and garlic is lightly browned, 6-8 minutes.
  • Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain, reserving 1 cup pasta cooking liquid.
  • Remove skillet with anchovy mixture from heat and stir in butter and lemon juice until butter is melted. Add pasta and 1/2 cup pasta cooking liquid and stir constantly until a thick glossy sauce forms, adding more pasta cooking liquid as needed.
  • Place radicchio in a large bowl. Add pasta and sauce and toss to coat, adding more pasta cooking liquid as needed. Add arugula and basil but don't toss; season with salt and black pepper.
  • Divide pasta among plates or bowls, very gently tossing so arugula gets coated in sauce but doesn't wilt too much.
