Steps:
- In a 4-quart saucepan or pot bring the first 6 ingredients to a simmer. Stir slowly to dissolve the sugar in the liquid. Add the remaining ingredients except the lemon juice and the cheese. When the liquid comes to a boil, adjust the heat and simmer for about 20 minutes to marry the flavors and soften the fruit. Turn off the heat then stir in the lemon juice. With a slotted spoon remove the fruit to a bowl. Bring the remaining syrup to a simmer and reduce until lightly thickened or when the bubbles formed on the top become small. Remove the syrup for the heat and when it is cool pour it over the fruit. The compote can be held in the refrigerator for up to 4 days.
- Serve the compote at room temperature with the cheese.

Steps:
- In a bowl let the cranberries soak in the orange juice for 30 minutes, drain them in a sieve set over a bowl, and reserve the juice. Reserve 1 large piece of the preserved ginger and in a blender or food processor purée the remaining ginger with the syrup and the reserved orange juice. In a deep 2-quart glass serving dish arrange half the cranberries, drizzle them with about 1/2 cup of the ginger mixture, and top them with the grapes. Drizzle the grapes with about 1/2 cup of the remaining ginger mixture, top them with the grapefruit, and drizzle the grapefruit with about 1/2 cup of the remaining ginger mixture. Top the grapefruit with the pineapple, drizzle it with the remaining ginger mixture, and arrange the remaining cranberries on top. Arrange the orange sections over the cranberries, chill the compote, covered, for at least 2 hours or overnight, and serve it garnished with the reserved ginger, cut into julienne strips.
FRESH FRUITS FLAMBE
A delightful after dinner dessert, this fruit flambe can be spooned over ice cream or enjoyed just as it is. Danaka's Palace in Toronto developed this recipe in honour of Canada's greatest Prime Minister, Pierre Elliot Trudeau. Mr. Trudeau visited Danaka's Palace frequently, whether in an official capacity, or just in town to attend a theatre. I am far from being a famous politician, but I do attend theatres frequently. This particular recipe has a permanent home in my collection of "fast and easy to prepare"; my guests enjoy the selection of fruit used to produce this dessert. Increase the recipe logically to serve more guests.

- Put the pears in a pan large enough to fit them snugly in 1 layer and cover with water. Add the vanilla pod and seeds, honey, cinnamon, cloves, fruit zest and lemon juice.
- Bring to a simmer, cover, and cook for 10-12 minutes until the pears are just cooked. Pour half the syrup into a bowl and add the dried fruit and cordial. Leave the pears in the remaining syrup and allow all the fruit to steep overnight. (If all the fruit is left together to steep, the dried fruit will absorb too much syrup.)
- Halve the pears, combine all the fruit with all the syrup in a large bowl and serve with Greek yogurt.

- Put dried fruit in a bowl. Pour juices into a jug. Add mixed spice and whisk together. Add juice to fruit and mix well. Cover and chill in refrigerator for several hours or overnight. If serving compote cold, remove it from fridge and stand at room temperature for about 1 hour before serving. If serving warm, transfer fruit and juices to a small pan and heat gently. Stirring occasionally. Alternatively, put compote in a microwave-safe container, cover loosely and heat on High for about 2 minutes (or until hot), stirring once. Remove from heat; cool slightly before serving. Divide compote between 2 serving bowls; sprinkle with flaked almonds (if using). Serve on its own or topped with a little low-fat natural yoghurt.
- Ground cinnamon can be substituted for the mixed spice. Try sprinkling the compote with toasted seeds instead of the flaked almonds
