1 lb. lean ground beef
2 eggs
1 cup Progresso™ Italian Style Bread Crumbs
1/4 cup grated Parmesan cheese
1/4 cup finely chopped onion
1/8 teaspoon pepper
1 (14-oz.) jar tomato pasta sauce

Steps:

  • Heat oven to 350°F. In large bowl, combine all ingredients except pasta sauce; mix well. Add 1 cup pasta sauce; mix well. Press mixture into ungreased 8x4-inch loaf pan.
  • Bake at 350°F. for 40 minutes. Pour remaining pasta sauce over meatloaf. Bake an additional 15 to 20 minutes or until thoroughly cooked in center and meat thermometer registers 160°F. Let stand 10 minutes before serving.

50g fresh white breadcrumbs
4 tbsp finely grated parmesan
500g pack lean minced beef
1 onion , finely chopped
100g pancetta , chopped
1 garlic clove , chopped
1 egg , beaten
1 tsp tomato purée

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line the long sides and base of a 2lb loaf tin with double thickness baking parchment. Mix 2 tbsp each of the breadcrumbs and Parmesan in a small bowl and set aside. Tip all the remaining ingredients into a large bowl with a good shake of salt and pepper and mix well - hands are the best for this job.
  • Press the mixture into the loaf tin and sprinkle with the reserved crumb mix. Bake for 40-45 mins until the top is golden and crunchy. If the top does not colour in the oven, pop the tin under the grill and brown the top for 5 mins. Cool in the tin for 5 mins, then lift out using the parchment and put on a board. Slice and serve with potatoes and green beans.

1 large egg, beaten
1 teaspoon dried minced onion
3/4 teaspoon salt

1-1/2 cups shredded mozzarella cheese
1 jar (6 ounces) sliced mushrooms, drained

Steps:

  • In large bowl, combine the crumbs, egg, onion, salt and oregano; crumble the meat over the top. Mix gently. Stir in 3/4 cup tomato sauce; set aside. Cut two pieces of waxed paper 15-in. long. Place meat mixture in center of one rectangle; cover with second rectangle. , With a rolling pin, press meat into a 13x9-in. rectangle. Remove top sheet of waxed paper. Sprinkle meat with cheese and mushrooms; top with remaining tomato sauce. Roll up meat, jelly-roll style, starting at narrow end; use waxed paper to help. Place meat seam side down; seal ends securely. Place in a greased 9x5-in. loaf pan. , Bake at 375° for 30 minutes. Drain; bake 30 minutes longer.

2 tablespoons extra virgin olive oil
1 red pepper, seeded, small diced
1 onion, diced
2 teaspoons garlic (about 3 cloves)
1 lb ground beef
2 eggs
3/4 cup breadcrumbs
1 cup parmesan cheese, grated
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
2 tablespoons basil leaves, chopped
1 tablespoon fresh parsley leaves, chopped

1/2 teaspoon black pepper
1 cup marinara sauce

Steps:

  • Preheat oven to 350 degrees F.
  • Heat 1 tablespoon of the olive oil in a medium saute pan over medium heat and add the peppers, onions and garlic. Saute until just soft, remove to a plate and cool.
  • When the peppers and onions are cool, combine all of the remaining ingredients together except for the marinara. Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
  • Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

  • Preheat the oven to 350 degrees.Place the ground beef, milk-soaked bread, Parmesan, eggs, parsley, Italian seasoning, salt, and pepper into a large bowl and smush/knead it around with your hands until everything is completely mixed.Meanwhile, make the sauce: In a separate bowl, combine the diced tomatoes, brown sugar, mustard, cayenne, and Worcestershire and stir it together. 1 cup Italian or white bread (crusts removed, cut into 1 inch cubes )
1 tablespoon milk
1/2 cup white onion (minced)
3 cloves garlic (minced)
1 teaspoon fine sea salt
1/2 pound lean ground beef
1 pound Italian sausage (casing removed, crumbled )
1 tablespoon flat leaf parsley (minced, plus more for garnish (optional) )
1 tablespoon fresh oregano (minced)
1 tablespoon Worcestershire sauce
1 egg (lightly beaten )
3/4 cup bread crumbs
1/4 cup Parmesan cheese (finely grated)
1 cup mozzarella cheese (shredded, divided )
3/4 cup marinara (divided, plus more for for serving )

Steps:

  • Preheat oven to 400 degrees and prepare a loaf pan with cooking spray or parchment paper.
  • In a small bowl, toss cubed bread with milk. Set aside for 3-4 minutes to absorb.
  • In a large mixing bowl, or the base of a stand mixer, combine fresh bread cubes soaked in milk, finely ground or micrograted onion, garlic Italian seasoning and salt. Mix to combine.
  • Add crumbled ground beef and sausage, breaking into small pieces.
  • Before mixing, top with Worcestershire sauce, lightly beaten egg, dry bread crumbs, Parmesan cheese, 1/2 cup shredded mozzarella and 1/4 cup marinara sauce.
  • Blend until just mixed, either using your fingers to toss or putting the stand mixer on low. Too much mixing will make your meatloaf tough, so only mix until barely blended.
  • Transfer meat mixture to cooking vessel of your choice, forming into a loaf as you go. You can make it free-form on a rimmed baking sheet, but I prefer using a meatloaf or bread loaf pan. Top with 1/2 cup marinara sauce.
  • Bake, uncovered, for 40 minutes. Remove and top with remaining shredded mozzarella cheese and another shake of Italian seasoning (if desired).
  • Cook for an additional 5 minutes. Allow to sit for 5-10 minutes before cutting and serving. Serve with additional marinara sauce, if desired.

1 1/2 pounds ground beef ((I used grass fed))
3 small onions (, peeled and sliced in half (plus one 1/2 chopped for the meatloaf mix))
1 small zucchini (, chopped in small pieces)
2 carrots (, peeled and sliced into long pieces )
3 small potatoes (, peeled and cut into pieces)
½ cup chopped fresh Italian parsley ((just the leaves))
1 Tablespoon fresh rosemary (, chopped)
1 cup bread crumbs (, use your favorite gluten-free crumbs to make it GF)
3 eggs (, lightly beaten)
1 cup grated Grana Padano ((or Parmigiano-Reggiano))
2 teaspoons fine sea salt
1 teaspoon freshly ground pepper ((add more to taste))
3 hard-boiled eggs (, peeled)
1/2 cup dry white wine
2 Tablespoons extra-virgin olive oil
1/2 cup broth ((or butternut squash soup))

Steps:

  • Heat the oven to 350 degrees F.
  • In a small pot of boiling water, boil the zucchini and potatoes. The zucchini will be finished before the other vegetables. Remove the zucchini when it's tender and set aside in a small bowl.
  • In a medium sized bowl, stir together the ground meat, parsley, rosemary, breadcrumbs, chopped onion. Add in the zucchini and one of the potatoes. Add in the eggs, cheese, salt, pepper and rosemary and stir until combined.
  • Line a baking sheet with aluminum foil. Scoop out 1/2 of the meatloaf mixture and pat it into a rectangle about 9 inches long by 4 inches wide.
  • Line the hard-boiled eggs in the center of the meatloaf. Line up one of the carrots cut into slivers next to the eggs. With your hands add on the rest of the meatloaf mixture and pat it on top covering the eggs. Make sure no parts of the eggs are peaking out.
  • Place the rest of the potatoes, carrots and onions around the meat loaf in the pan. Add the wine around the pan and drizzle the olive oil on the meatloaf and around the vegetables.
  • Bake for 35-40 minutes in the center rack of the oven (until internal temperature is 150 degrees), basting occasionally with the pan juices.
  • Remove the dish from the oven. Transfer the meat loaf to a cutting board, and let it rest for at least 15 minutes.
  • Puree with an immersion blender (or in your blender)the vegetables that were in the pan and the juices. I had just made pumpkin soup that day and a added about a 1/4 cup of the soup to the juices from the pan to blend all together. If you don't have any pumpkin soup on hand, you could add broth or even a little water. Heat the sauce on medium-low before serving.
  • Cut into thick slices. Arrange on a serving plate with the sauce on the bottom and serve with mashed potatoes.

6 slices bread, processed fine (I use Italian Style bread crumbs)
2 eggs

1/4 cup brown sugar
1 tablespoon mustard
1/4 cup catsup

Steps:

  • Mix all ingredients together as listed.
  • Put into glass Pyrex casserole dish.

An easy recipe for Italian flavored meatloaf. It has all the flavors of your favorite Italian meatballs. Makes a great entree for an Italian dinner!

2 lbs 85/15 ground beef
2 fresh garlic cloves, minced
.7 oz packet of Italian Dressing Mix (I use Good Seasonings brand)
1 cup panko bread crumbs
1/3 cup milk
2 eggs, lightly beaten
1/2 cup fresh grated parmesan cheese
24 oz jarred marinara
1 cup shredded mozzarella

Steps:

  • Preheat the oven to 400°
  • In a large bowl, with clean hands, lightly mix together the 2 lbs ground beef, 2 minced garlic cloves, .7 oz packet of Italian Dressing Mix, 1 cup panko bread crumbs, 1/3 cup milk, 2 lightly beaten eggs, 1/2 cup parmesan cheese. Do not overmix the meatloaf mixture or it will have a tough texture.
  • In a 9x13 glass casserole pan pour about 1/2 cup marinara sauce onto the bottom of the pan. Dump the Italian meatloaf mixture out into the pan and shape into a meatloaf, about 2 1/2 inch tall, 6 inches wide and about 11 inches long (roughly)
  • Pour the rest of the jarred marinara over the meatloaf. Cover the pan with foil and bake for 1 hour 15 minutes.
  • Remove the foil and sprinkle with mozzarella cheese, bake uncovered for another 10 minutes. The center of the meatloaf should read 165 degrees with an instant thermometer.
  • Let cool for about 5 minutes and then slice and serve!

2 slices firm white bread
1 cup water
1 pound lean ground beef
1 medium onion, finely chopped
1 egg, beaten to blend
3 tablespoons freshly grated Parmesan cheese
2 tablespoons minced fresh parsley
1 teaspoon salt
1/4 teaspoon pepper
1 8-ounce can tomato sauce
1 teaspoon dried oregano, crumbled

Steps:

  • Grease 9x5-inch loaf pan. Place rye and white breads in large bowl. Pour 1 cup water over. Let soak 5 minutes. Drain off any excess water. Mash bread finely with fork. Add ground beef, onion, egg, Parmesan, parsley, salt and pepper and mix well. Transfer to prepared dish. (Can be prepared 6 hours ahead. Chill.)
  • Preheat oven to 375°F. Bake meat loaf 30 minutes. Pour tomato sauce over. Sprinkle with oregano. Bake 20 more minutes. Let stand 5 minutes.

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. Finely chop the bread in a food processor . Set the breadcrumbs aside.
  • Heat the butter in a large skillet over medium heat. Add the onion, carrot, celery, mushrooms, and Italian seasoning and cook, stirring until soft and the liquid has evaporated, about 10 minutes. Set aside and let cool slightly.
  • Add the cooled vegetable mixture to the food processor along with the bacon, beef, and pork, and pulse until finely chopped-not puréed.
  • Add the mixture to a large bowl with the breadcrumbs, cream, soy sauce, Worcestershire, eggs, salt, and pepper. Using your hands, gently mix everything together until well combined.
  • Mold the meat mixture into a 9-inch-by-5-inch-sized loaf shape on a buttered, parchment-lined baking sheet.
  • Bake until a meat thermometer inserted in the center reads 135 F, 40 to 45 minutes.
  • Raise the heat to 500 F. In a small bowl, mix together the glaze ingredients.
  • Brush the meatloaf with the glaze and bake until well browned, about 12 minutes. Let rest for 10 minutes before serving.

Steps:

  • Preheat oven to 350 degrees F.
  • Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.
  • Whisk together the basil, parsley and eggs in a small bowl, and then add the salt and black pepper. Combine the Parmesan and breadcrumbs in another small bowl. Thoroughly combine the meat, herbs and eggs, Parmesan and breadcrumbs, the Worcestershire, vinegar and remaining 2 tablespoons olive oil together in a large bowl using your hands, making sure not to overmix.
  • Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
  • Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

This Italian Meatloaf recipe is rich in cheese, beef and topped up with my homemade Italian marinara sauce. This meatloaf is easy to make and versatile to pair with any side dish. You can even divide it into slices to make a meatloaf sandwich!

4 tablespoons olive oil (separated)
1 medium onion (diced)
1 medium red pepper (diced)
4 cloves garlic (minced)
2 tablespoons italian herbs
3 large eggs

2 pounds ground beef (lean)
2 tablespoons worcestershire sauce
3 tablespoons balsamic vinegar (separated)
1 cup marinara sauce (good quality)
1/2 cup parmesan cheese (grated)
1 cup mozzarella cheese (shredded)
1 cup breadcrumbs

Steps:

  • Preheat oven to 350°F (177°C)
  • Heat 2 tablespoons of the oil in a heavy skillet over medium heat. Add the onions and pepper and cook until soft, about 5 minutes. Add the garlic, cook another minute or two, stir in the Italian herbs, and remove heat.
  • In a small bowl, whisk the eggs well - season with salt and pepper, and whisk to combine.
  • Put the beef in a large bowl, add the egg mixture, add the remaining 2 tablespoons olive oil, the Worcestershire, 2 tablespoons of balsamic, and ½ cup of marinara sauce. Add the parmesan, mozzarella and bread crumbs, and onions, then mix it with your hands until just combined - do not over mix.
  • Lightly oil a 9 x 5 loaf pan and pack the meat mixture into it. Whisk the remaining tbsp balsamic in the remaining ½ cup of marinara, and spread this evenly over the meatloaf.
  • Bake for about an hour or until cooked. Allow resting for about 5 minutes before serving.

3 large garlic cloves (minced)
1/4 cup chopped fresh parsley
1 tablespoon chopped fresh oregano or 1 teaspoon dried
1 tablespoon chopped fresh basil or 1 teaspoon dried
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
3 ounces (about 1/4 cup) tomato paste

Steps:

  • Gather the ingredients.
  • Preheat the oven to 375 F.
  • Place the ground beef and the pork in a large bowl. Top with the eggs, breadcrumbs, sweet onions, Parmesan cheese, bell peppers, garlic, parsley, oregano, basil, salt, and pepper.
  • Use a large carving fork to mix the meatloaf, folding the ingredients together. Pull the fork tines through the mixture as you turn the bowl. Take care not to overmix, or the meatloaf will become tough.
  • Scrape the mixture into a loaf pan, and smooth the top. Don't pack it too tightly.
  • Spread the tomato paste over the top of the meatloaf.
  • Place the loaf pan on a baking tray to catch any drips that may bubble over. Bake for 1 hour and 15 minutes. Let meatloaf rest for 15 minutes before cutting to serve.
  • Serve and enjoy!
