Add a little spice to your sweet with this pineapple agua fresca featuring jalapeños peppers. Spicy Pineapple Agua Fresca takes only 15 minutes to prep, but you're sure to remember the great flavor for a lot longer.

Number Of Ingredients 6

1-1/2 qt. (6 cups) water
2 jalapeño peppers, quartered
1/2 cup coarsely chopped fresh mint
2 pkt. (makes 2 qt. drink each) or 4 pkt. (makes 1 qt. drink each) CRYSTAL LIGHT Lemonade Flavor Drink Mix*
6 cups fresh pineapple chunks (3/4 inch)
1 qt. (4 cups) seltzer

Steps:

  • Bring water, peppers and mint to boil in saucepan; cook 1 min. Remove from heat. Let stand 10 min. Pour through fine-mesh strainer into bowl. Discard strained solids. Refrigerate flavored water 1 hour or until completely cooled.
  • Add flavored water to drink mix in 1-gal. glass or plastic pitcher; stir until dissolved.
  • Process pineapple in food processor until smooth. Add to flavored lemonade; mix well. Stir in seltzer.

  • Pour into a pitcher and add the remaining 4 cups water.

1 small English cucumber
1/2 Serrano chile, seeds and veins removed
2 1/2 cups pineapple juice
7 Tbs. light agave nectar
3 Tbs. lime juice
1/4 tsp. cayenne pepper
1 cup vodka or tequila (8 oz.)

Steps:

  • 1. Purée cucumber and chile in blender until smooth. Pour mixture through fine strainer, pressing down on solids to extract all liquid. (You should have about 1 cup cucumber juice.) 2. Pour cucumber juice into large pitcher, and stir in pineapple juice, agave nectar, lime juice, and cayenne pepper. 3. To serve: Pour 2 oz. vodka over ice or frozen pineapple cubes, if using, in tall glass. Top with 1 cup pineapple mixture.

A big glass 'vittoleros' canister of freshly made, wonderfully refreshing Agua Fresca in a rainbow of colors can be found on the counters of the best authentic neighborhood Taquerias - I look forward to them in the summer heat, but since I have no tolerance for spicy hot food, I don't get them too often. Many of these 'Fresh Waters' are regional Mexican and Salvadoran, but some of them are simply common sense. The best of them are subtle, balanced, and not overly sweet. With so few ingredients, the quality of the material used to make it is essential. If you feel the need to dress the drink up, use garnishes - thinly sliced fresh fruit, lavender flower stems place in the glass like swizzle sticks, or herbs frozen in the ice. This is great for a backyard or patio party, particularly if you have one of those wonderful glass tap jars to serve it in which will display the jewel-like color, but be certain to keep it on ice. This keeps well for several days in the refrigerator, or you can freeze it in ice cubes, then once frozen turn out into plastic bags or storage containers to enjoy later.

5 whole cucumbers, chopped but not peeled
2 1/2 cups water
1/2 cup fresh lime juice (not the junk in the bottle)
1/8 cup agave syrup (or simple syrup, if you can't get agave in your area)
sea salt or kosher salt

Steps:

  • Puree the cucumber in a blender in as many batches as you need, then pour into a large bowl.
  • Add the rest of the ingredients, then pour into a colander layered with three thicknesses of cheesecloth to strain out the solids.
  • Taste the strained juice and add a small amount of salt, to taste.
  • Serve over Ice!

1 (20 ounce) can crushed pineapple in heavy syrup, drained with syrup reserved
1 tablespoon cornstarch
1 teaspoon ground ginger
¾ cup orange juice
2 tablespoons maple syrup

Steps:

  • In a medium bowl, mix the crushed pineapple, cornstarch and ground ginger. Gradually stir in enough of the reserved pineapple juice to make the mixture smooth.
  • In a medium saucepan over medium heat, blend orange juice and maple syrup. Cook and stir 5 minutes, until clear and thickened. Mix in the pineapple mixture. Continue to cook and stir until well blended and thick, about 15 minutes.
