Golden, crisp and salty, Tostones are the favorite Dominican side dish. Best if consumed with meats, eggs, cheese, seafood and practically any other food you can think of.

2 large green plantains
2 cups vegetable or canola oil (for frying)
salt (to taste)

Steps:

  • Peel the plantains and cut into 1-inch thick slices.
  • In a large skillet, heat the oil over medium heat. Fry the plantains until lightly golden on both sides, about 5 minutes. Transfer to a plate lined with a paper towel.
  • Using the bottom of a bottle, small saucepan, or tostonera if you have one, press down the plantains to flatten them to about half their original size.
  • Return the pressed plantains to the hot oil. Fry until crisp around the edges, about 2 minutes on each side.

1 1/2 pounds green beans
3 cups peanut oil for deep-frying, plus 3 tablespoons for stir-frying
2 scallions, chopped
2 cloves garlic, minced
2 tablespoons minced soaked dried shrimp
2 tablespoons water
1 tablespoon soy sauce
1 teaspoon sugar
Salt and freshly ground black pepper

Steps:

  • Heat 3 cups of the peanut oil in a large pot to deep-fry temperature (350 degrees F), and fry the beans in batches until tender but still crisp, 2 to 3 minutes. Use a slotted spoon to transfer beans to paper towels to drain.
  • Heat the remaining 3 tablespoons oil in a wok or large skillet. Add the scallions and garlic and cook just long enough to release the aromas, about 1 minute. Add the shrimp and green beans and mix well to coat the beans. Stir in the water, soy sauce, sugar, salt and pepper, and cook for another 1 to 2 minutes, tossing to heat through. Serve immediately.

Tostones (Green Plantain Chips) image

2 large green plantains
2 teaspoons garlic powder
1 teaspoon kosher salt
1 cup peanut oil

Steps:

  • Cut the tips off the plantains. Score the plantains lengthwise on both sides and place in a bowl. Cover with boiling water. Let sit for 10 minutes. Peel, using a small sharp knife, and slice into 1/2inch slices.
  • Heat the oil to rippling in a large frying pan over medium heat. Cook the plantains for 10 minutes. Remove the plantain slices from the oil (reserving the oil) and place in one layer on a tea towel or several layers of absorbent paper on a counter top. Turn to remove excess oil. Using bunchedup absorbent paper or another tea towel, press down on each slice. Heat the reserved oil to 375 degrees and fry the plantains until crisp and golden. Season with garlic powder and salt.

2 green plantains
Oil, for frying
Salt, to taste

Steps:

  • Gather the ingredients.
  • Fill a heavy bottom pot with 1 1/2 to 2 inches of oil and heat the oil to 375 F.
  • Cut the ends from each plantain and peel the them while the oil is heating.
  • Cut the plantains into 3/4-inch slices.
  • Fry the slices in the hot oil for 3 minutes or until they turn a light golden color and they're semisoft.
  • Remove the plantain slices with a slotted spoon and drain them on paper towels.
  • When the plantain slices are cool enough to handle, about 1 minute, smash them into flat rounds.
  • Fry the rounds in the hot oil again for 3 minutes until they turn crisp and golden brown.
  • Remove the tostones with a slotted spoon and drain on paper towels. Salt to taste.

Oil, for frying
4 ripe plantains, peeled
Salt
Garlic Mojo, recipe follows
8 garlic cloves
1 teaspoon salt
1/2 cup sour orange juice or 1/4 cup sweet orange juice
plus 1/8 cup fresh lime or lemon juice

Steps:

  • Preheat oil in a fryer or Dutch oven to 365 degrees F.
  • Peel the plantains and cut into 1-inch pieces. Place into preheated oil and fry for 5 minutes or until they begin to brown. Drain them on a paper-towel lines plate. Flatten them using a Tostonera or the bottom of a metal can and fry again at 385 degrees F for approximately 3 minutes. Drain again and sprinkle with salt and Garlic Mojo. For softer fried plantains, soak for a few minutes in salted water after the first fry, drain and fry again.
  • Chop up the garlic very thinly or crush using a mortar and pestle or food processor with the salt to form a thick paste. In a mixing bowl, combine the garlic paste and juice, and let the mixture sit at room temperature for 30 minutes or longer.

Fried Green Plantains and Garlic Sauce: Tostones with Mojo image

3 green plantains
3/4 cup oil, plus 1/4 cup
Salt and black pepper
1 tablespoon chopped garlic
1 sour orange, juiced (approximately 1/4 cup)

Steps:

  • Peel plantains and cut on a diagonal into 3/4-inch thick slices. In a heavy skillet, heat 3/4 cup oil and fry plantain slices until golden brown. Lift slices onto plate or tray to cool, and press with spatula to flatten. Return to hot oil and fry again until crisp. Drain on paper towels. Season with salt and pepper, and keep warm on a serving plate.
  • In small bowl, make mojo by whisking together fresh garlic, sour orange juice, and remaining 1/4 cup oil. Dress each serving of plantains with mojo and serve immediately.

When I can't get kosher meat, I simply do without but today I just craved something meaty. I had a pack of extra-firm tofu in the fridge and this is what I did with it. Baking the tofu before frying helps to crisp it up and imparts the meatiness I was seeking. My BFF thought it was fish at first glance. He is not into foreign foods but he was very enthusiastic about these yummy little bites when served with dipping sauce.

1 (16 ounce) package extra firm tofu, drained
salt and ground black pepper to taste
3 tablespoons cornstarch
¼ teaspoon paprika
ground thyme
¼ teaspoon seasoned salt (such as LAWRY'S®)
1 tablespoon vegetable oil

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly oil a baking sheet.
  • Pat tofu dry with a paper towel. Slice in half lengthwise. Cut each half into 1/4-inch pieces, about 14 pieces in total. Place tofu between paper towels and drain, about 20 minutes.
  • Season tofu with salt and pepper. Let sit for 10 minutes.
  • Mix cornstarch, paprika, thyme, and seasoned salt together to make cornstarch seasoning.
  • Pat any excess moisture off the tofu. Sprinkle cornstarch seasoning evenly over top. Arrange on a baking sheet.
  • Bake in the preheated oven until tofu starts to brown, about 7 minutes. Turn over and continue baking until the upper side is darkened, about 3 minutes more.
  • Heat oil in a skillet over medium-high heat. Add tofu and fry until golden-brown, about 2 minutes per side. Drain on paper towels.
