Steps:
- In large wok, heat oil over medium high heat.
- Add celery, onion, and green pepper; stir-fry 2 minutes or until crisp-tender.
- Add ham, garlic powder and pepper; stir fry 3 to 4 minutes.
- Add rice and soy sauce; stir fry 3-4 minutes or until thoroughly heated.
- Serve with additional soy sauce, if desired.
LEFTOVER HAM STIR FRY
Ham is pretty salty as is, so be sure to adjust your seasonings accordingly!

- Add a couple of tablespoons of oil to a wok and set over medium-high heat. When hot, add in the carrots and cook for 5 minutes. Stir in onions, mushroom, celery, and white part of bok choy. Cook for 3 minutes. Add in zucchini, red pepper, garlic, and water chestnuts. Cook for 3 minutes. Add in soy sauce, ham, and green part of bok choy. Cook 3 more minutes.
- Whisk together all the sauce ingredients until really well combined. Poor into stir fry and cook for a few minutes, or until nicely thickened!
- Serve or rice or noodles.

Apple pie filling and fruit cocktail are combined with a little brown sugar to create a sweet chunky sauce that nicely complements ham steaks. "I make this often for birthdays, and it's delicious," she assures. "It can be reheated, but I never have leftovers. "For easy cleanup, I sometimes place the ham on a large piece of heavy-duty foil, put the fruit mixture on top, then pull up the corners of the foil and twist them to form a bundle," she explains. "I pop it in the oven to bake, and when it's done, there's no pan to wash."

- Toast the sesame seeds in a dry pan over medium heat for 3 to 4 minutes, shaking the pan gently, until seeds are golden brown; remove from the pan at once to prevent burning.
- Trim the ends from the spinach, roughly chop the leaves and wash to remove the grit.
- Combine the garlic, spring onion, cayenne pepper and pork, mixing well. Heat the oils in a pan and stir-fry the pork quickly in three batches over very high heat until golden brown. Remove the meat and set aside.
- Add the soy sauce, sugar and spinach and toss lightly. Cover and cook for 2 minutes or until the spinach is just soft. Return the pork to the pan, add the sesame seeds, toss well and serve immediately.
SWEET AND SOUR HAM
I CAME UP with this recipe several summers ago. I had a ham in the refrigerator and was trying to avoid heating up the kitchen by preparing it in the oven. The stovetop was the solution. - Drain pineapple, reserving 1/3 cup of juice; set pineapple aside. In a large bowl, combine the reserved juice, ketchup, soy sauce and sugar. Add ham and green pepper., In a large skillet, cook and stir ham mixture over medium heat for 5-7 minutes or until pepper is tender. Combine cornstarch and water until smooth; stir into skillet. HAM AND PEPPERS STIR FRY WITH SWEET AND SOUR SAUCE
We call this "Ham and Peppers" but there's onion and pineapple too. This is a great quick meal and an excellent use for leftover ham. The recipe was originally from a Doubleday Cookbook but has evolved during the past 12 years to suit our taste--we like the ham and onions slightly browned and the peppers crisp/tender. Serve over steamed rice and add soy sauce to taste. Note that this dish is best just after it's thickened and it doesn't reheat that well, but there's rarely any leftovers.

- Prepare the sauce by first stirring cornstarch with about 2 or 3 tbs.of the chicken broth in a small bowl.
- When the cornstarch is dissolved and smooth, stir in the remaining sauce ingredients and set aside.
- Brown ham in 1/3 of butter over moderately high heat in a skillet or wok until it begins to brown.
- Remove and set the ham aside.
- Melt another 1/3 of the butter in the skillet or wok and sauté the onions.
- When they start to soften and turn translucent, add the peppers and the final 1/3 of the butter.
- When the onions have somewhat browned, add the ham and the pineapple, juice and all.
- Stir the sauce until smooth again (since the cornstarch tends to settle) and pour into skillet or wok.
- Increase heat and stir until the sauce begins to bubble.
- Reduce heat and stir for a minute or two until the cornstarch is fully cooked; if too thick, thin with a little water or broth.
- Serve over steamed rice as soon as possible. I like to sprinkle some dried hot red pepper flakes over it; I love hot food and this gives the dish some zing!
CHICKEN STAR FRUIT (CARAMBOLA) STIR FRY

- Cut 1 star fruit in half crosswise and squeeze 2 tablespoons juice, using a citrus reamer or juicer; set juice aside. Or just whiz it in a food processor or blender on steroids.
- Dice star fruit halves; set aside.
- Slice remaining 3 star fruit crosswise and set aside.
- Combine 2 tablespoons star fruit juice, chicken, sherry, brown sugar, ginger root, soy sauce and garlic in a bowl and stir well. Cover and chill 30 minutes.
- Drain chicken, reserving marinade. Sprinkle chicken with cornstarch; toss well to coat. Heat vegetable oil in a large nonstick skillet over medium high heat.
- Add chicken and star fruit; stir fry 1 minute.
- Add bell pepper and onion and stir fry 3 minutes or until chicken is done. Add reserved marinade, sesame oil, salt and pepper; stir fry 1 minute.
- Serve over rice.

- To Make Couscous: In a medium saucepan, bring water to a boil. Stir in couscous, reduce heat to medium-low, and simmer for 8 to 10 minutes, until fluffy. Cover and set aside.
- In a small bowl, combine broth, cornstarch, soy sauce, brown sugar and ginger. Mix together and set aside.
