COOKIE-CRUSTED PEACH COBBLER
This recipe makes a very rich peach cobbler. The crust is very sweet and cookie-like. Serve warm with vanilla ice cream. Definitely not for those watching their weight!

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Arrange the peaches in the prepared pan. Scatter the butter over the peaches, then sprinkle the brown sugar evenly on top. Set aside. Mix flour, white sugar, baking powder, and salt in a bowl. Stir the oil into the beaten eggs, then stir the egg mixture into the dry ingredients. Spoon the batter over the peaches, then sprinkle cinnamon on top.
- Bake in the preheated oven until the crust is lightly browned, about 45 minutes.

EASY BISCUIT CRUST PEACH COBBLER
The rolled-out biscuit-dough crust tops this easy peach cobbler, which uses canned peaches for year-round convenience.

Steps:
- Gather the ingredients.
- Preheat the oven to 425 F. Drain the peaches, reserving the liquid.
- Combine the sugar and cornstarch in a saucepan. Stir in the reserved peach liquid and bring it to a boil over medium heat. Boil the syrup for about one minute, stirring constantly. Remove the pan from the heat.
- Stir in the lemon juice and add the peaches. Set it aside to cool while you prepare the biscuit dough.
- Mix the flour, salt, and baking powder in a bowl.
- Cut in the shortening with a pastry blender or two knives.
- Add the milk gradually to make a soft dough.
- Turn it out onto a floured surface and roll the dough to fit the baking dish you are using to bake the cobbler.
- Spoon the peach mixture into a buttered baking dish, dotting the top with the pieces of butter. Sprinkle it with cinnamon sugar.
- Arrange the dough on top of the peach filling and crimp the edges.
- Bake the cobbler for 16 to 20 minutes, or until the top turns golden. Cool for 15 to 20 minutes before serving.

PEACH COBBLER WITH SUGAR COOKIE CRUST
While we were vacationing with friends in Duck, N.C. we bought a bushel of peaches. I was requested to make a cobbler with them, and I researched the internet for the perfect recipe to WOW everyone.I thought the boiling water in the dough was unique and decided to try this recipe that I adapted from All.Recipes.com turned out to be the hit of the vacation. I double the recipe and put in 9 x 13 pan.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch.
- Toss to coat evenly, and pour into a 2 quart baking dish.
- Bake in preheated oven for 10 minutes(I cooked filling on top of stove until thickened).
- Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt.
- Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal.
- Stir in water until just combined.
- Remove peaches from oven, and drop spoonfuls of topping over them.
- Sprinkle entire cobbler with the sugar and cinnamon mixture.
- I sprinkled only a little bit, since it was turning the top too brown for my taste.
- Bake until topping is golden, about 30 minutes.
CIN-FUL PEACH COBBLER
Steps:
- Preheat oven to 450 degrees F. To make the peach filling: In a large bowl, stir together sugars, flour, cinnamon and salt. Add peaches and gently toss to coat. Mix together cornstarch slurry and lemon juice and stir into peaches to incorporate. Butter a 12 by 8-inch oval dish and add peach mixture. To make the crumb topping: In a medium bowl, combine dry ingredients, add in butter pieces and combine with hands until crumbly. Top peaches with half of the crumb topping. Place in oven and immediately reduce oven temperature to 350 degrees F. Bake uncovered for 30 minutes, then add remainder of the crumb topping. Reduce heat to 325 degrees F and bake until golden and bubbling, another 45 minutes. Remove from oven and let sit for 15 minutes before serving. Serve with vanilla ice cream or fresh whipped cream.
PEACH COBBLER NEWTONS
Steps:
- Preheat oven to 350 degrees F.
- For the cookie: In a medium mixing bowl, sift together the flour, salt, and cinnamon. In a large mixing bowl, with an electric mixer, cream the butter, granulated sugar, and dark brown sugar. Beat in egg whites, vanilla and butter flavor extracts. Carefully fold in the flour mixture with a rubber spatula. Wrap dough in plastic and chill until dough is firm, about 30 minutes in freezer.
- For the peach filling: In a medium mixing bowl, mix peach preserves with cinnamon, nutmeg, lemon zest and lemon extract. When dough has chilled, roll out dough 1/4-inch thick and cut into pieces about 2 1/2 inches wide and 3 inches long. Place a teaspoon of peach filling in the center of each piece and fold each end of the dough to the center to cover the filling. Flatten cookies slightly and place them seam down and 1-inch apart on a parchment-lined cookie sheet. Bake for about 12 minutes, until lightly browned and just firm. Cool on the cookie sheet. Dust cookies with a mixture of powdered sugar and cinnamon, if using.
PEACH COBBLER WITH OATMEAL COOKIE TOPPING
Fresh peaches baked underneath a chew oatmeal cookie and served with vanilla ice cream makes this a true down home recipe. **In the fall you can use apple instead of peaches** You can make this in individual ramekins with one dollop of dough on top of each. *do not over mix the cookie dough or your topping will be tough* cook time does not inclued cooling time.

- To Make Peach Filling: In a large saucepan combine 1/2 cup sugar, cornstarch, and cinnamon. Stir in peaches and lemon juice, tossing until peaches are evenly coated.

- Remove peach filling from oven and drop cookie dough onto peaches in 6 equal-size spoonful's.
- Return cobbler to oven and bake 30 to 40 minutes or until cookie topping is golden brown.
- Cool 10 minutes or more; serve warm with vanilla ice cream.

- Heat oven to 400°F. In 4-quart saucepan, mix 1/3 cup sugar, the cornstarch and cinnamon. Stir in peaches, water and lemon juice. Heat to boiling, stirring constantly; boil and stir 1 minute. Pour into ungreased 8- or 9-inch square (2-quart) glass baking dish.
- In medium bowl, stir Bisquick mix, 1 tablespoon of the sugar, the milk and melted butter until soft dough forms.
- Drop dough by 6 tablespoonfuls onto hot peach mixture. Sprinkle remaining 1 tablespoon sugar over dough.
- Bake 20 to 25 minutes or until golden brown. Serve with whipped cream.
