12 ounces fresh or thawed frozen cranberries
1 ½ cups sugar
â…“ cup brandy
2 tablespoons orange peel, finely shredded

Steps:

  • Preheat oven to 325 degrees.. Sort cranberries and discard any soft or spoiled ones. Rinse and drain berries.. Mix cranberries, sugar, brandy and orange peel in an 8- or 9-inch square baking dish.. Bake uncovered, until berries are tender when pierced and most of the liquid has evaporated, about 1 hour, stirring occasionally. Serve warm or cool.

2 (12 ounce) bags cranberries
2 cups granulated sugar
1/4 cup brandy
1/3 cup granulated sugar

Steps:

  • Place the cranberries in a glass 13x9x2-inch baking dish.
  • Cover the cranberries with the 2 cups of sugar, but do not stir.
  • Cover baking dish tightly with aluminum foil.
  • Bake 50-55 minutes in a 350º oven; until the cranberries burst.
  • Remove baking dish from the oven.
  • Remove the foil and stir.
  • Let stand 10 minutes, then drizzle with the brandy.
  • Stir in the 1/3 cup of sugar.
  • Cool to room temperature; then refrigerate.

1 pastry for double-crust 9-inch pie
1 small seedless orange, finely chopped (including peel)
2 tablespoons lemon juice
1 (21-ounce) can peach pie filling
1 cup dried cranberries (recommended: Craisins brand)
1/2 cup raisins
1/2 cup sugar
2 tablespoons minute tapioca
1/3 cup brandy plus 1 1/2 teaspoons
1/3 cup confectioners' sugar
1 1/2 tablespoons butter, softened

Steps:

  • Preheat the oven to 400 degrees F.
  • Line a 9-inch pie pan with your favorite pastry. In a large bowl, combine orange, lemon juice, peach pie filling, cranberries, raisins, sugar, tapioca, and 1/3 cup brandy. Mix well. Spoon filling mixture into pie crust. Top the pie with another crust and seal and flute the edges. Cut slits into the top crust. Cover the edge of the pie with aluminum foil to prevent excessive browning. Bake for 40 minutes. Remove the foil and bake an additional 20 minutes until the crust is browned. Place pie on rack to cool.
  • Icing: Mix the confectioners' sugar, butter, and remaining 1 1/2 teaspoons brandy in a small bowl until smooth. Gently drizzle or spread over cooled pie.

3 1/2 cups chocolate cookie crumbs
2 tablespoons sugar
1/2 teaspoon cinnamon
1/2 teaspoon salt
2/3 cup unsalted butter
340 g cranberries
1 cup sugar
2/3 cup water
1/2 teaspoon cinnamon
1 teaspoon vanilla
3 tablespoons brandy
3 (225 g) packages cream cheese (NOT low-fat)
2 cups sugar
3 tablespoons cornstarch
1 tablespoon vanilla
3 large eggs, room temperature
2 cups sour cream
1/2 cup sugar
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees.
  • CRUST.
  • Stir all ingrediants together until crumbly. Press into the bottom and to the top of the sides lightly greased 9" springform pan. Place on a baking tray & bake for 10 minutes. Then cool while preparing other ingrediants.
  • CRANBERRY TOPPING.
  • Simmer all ingrediants over Medium heat, stirring occasionally, until most cranberries "pop", about 20 minutes. Cool, then chill completely.
  • CHEESECAKE.
  • reduce oven to 325 degrees. Beat cream cheese until smooth & fluffy. Gradually add sugar while beating, scrape sides often. Beat in cornstarch & vanilla. Add eggs 1 at a time, scraping well after each addition. Scrape into crust (only will go 1/2 way). Bake 30 minutes.
  • SOUR CREAM LAYER.
  • Stir sour cream, sugar & vanilla to blend. After cheesecake has baked, remove CAREFULLY & GENTLY dollop sour cream layer on cheesecae. Spread until even & return to oven for 30 minutes. (Mine took an extra 5-10 minutes to set.).
  • Chill overnight before garnishing.
  • To garnish, spread cranberries over top of chilled cheesecake & chill until ready to slice.

⅔ cup orange zest
2 cups water
2 cups white sugar
⅔ cup orange juice
1 tablespoon lemon juice
3 cups cranberries
1 tablespoon brandy

Steps:

  • In a small pan over medium heat, combine the orange zest and water. Cover and bring to boil. Reduce heat and simmer for 15 minutes. Drain, reserving zest and 1/3 cup liquid.
  • To the reserved liquid, add the sugar, orange juice and lemon juice. Bring to boil; reduce heat and simmer for 3 minutes uncovered, stirring often.
  • Add cranberries; increase heat to medium-high and boil for about 10 minutes or until the cranberries have popped and a small spoonful of sauce sets on a cold plate.
  • Remove from heat, stir in brandy. Pour into 4 1/2 pint jars leaving 1/2 inch space from top. Place lids onto jars, and store in the refrigerator for up to two weeks.

Steps:

  • Preheat oven to 350°F.
  • Sort through cranberries and discard any that are soft or decayed.
  • Mix cranberries, sugar, brandy, and orange zest in a Pyrex baking dish.
  • Bake, covered, for one hour.
  • While the cranberries are roasting, toast the walnuts in a medium-heat iron skillet, on the stove top, stirring constantly, until fragrant ~ be careful not to burn them!
  • Stir toasted walnuts into hot roasted cranberries.

2 pkg fresh cranberries
2 c sugar
1 tsp cinnamon
1 orange
1/3 c brandy
1-2 tsp grand marnier or cointreau
1 Tbsp brandy

Steps:

  • 1. Rinse cranberries with water in strainer, drain water off, and pour cranberries evenly into a 13" x 9" baking dish.
  • 2. Add 2 cups sugar, 1 tsp cinnamon, 1/3 cup brandy to cranberries.
  • 3. Wash orange, then cut the orange peel into 1/8"-1/4" strips, peeling off the orange peel and adding the peels to cranberry mix. Then squeeze the juice out of the orange into the cranberry mix. Discard the orange pulp. Mix all together thoroughly.
  • 4. Cover baking dish with foil and bake cranberry mixture in 325 degree oven for 1 hour. Berries will burst open and make more juice as they bake.
  • 5. Remove from oven and remove foil. Stir into the hot cranberry mixture the 1 tab of brandy and 1-2 tsp of Grand Marnier or Cointreau. Let sit uncovered at room temperature for at least 1 hour. Juices will thicken. Transfer to pretty glass serving dish. Enjoy!
  • 6. P.S. Leaving the orange peels in when you put it on the table makes the dish look pretty, but don't eat the peels. You can remove the orange peels if you wish before serving.

1/2 cup margarine or 1/2 cup butter
2 eggs
1 cup packed brown sugar
1/2 cup all-purpose flour
1 teaspoon vanilla

Steps:

  • In a 4 cup glass measuring bowl combine raisins, cranberries, apricots, and brandy or water.
  • Cover with plastic wrap; turn back a corner to vent.
  • Cook on high for 2 minutes.
  • (Or, place fruit and brandy in a saucepan; bring to boiling. Remove from heat.) Let stand for 20 minutes.
  • Drain.
  • For crust, in a medium mixing bowl stir together 1 cup flour and 1/3 cup brown sugar.
