BLUEBERRY BLUE CHEESE BACON BURGER
Juicy grilled hamburgers are dressed with homemade basil aioli, arugula, blueberry barbecue sauce, crispy smoked bacon, and plenty of blue cheese crumbles for just the right combination of sweet and savory in this amazing gourmet burger.

- Coarsely chop enough fresh basil leaves to make 1/2 cup.
- Combine the chopped basil with the mayonnaise, olive oil, lemon juice, and minced garlic, stirring until smooth. Season with kosher salt to taste, then refrigerate until ready to use.
- In a small saucepan, bring the blueberries and other barbecue sauceingredients to a boil over medium high heat. Reduce the heat to low and simmer for 5 minutes, or until slightly thickened. Keep warm until ready to use.
- Lightly oil the grates of a gas grill and preheat to 450 degrees.
- Form the ground beef into 4 equal patties, being careful not to overly pack the meat together. Season both sides liberally with kosher salt and freshly ground black pepper.
- Cook the burgers over direct heat for 6 minutes, watching carefully for any flare ups.
- Flip the burgers and cook for 4 more minutes on the other side, or until done.
- Spread basil aioli on the cut side of each bun, both top and bottom pieces.
- Next, pile arugula on the bottom bun and top with a grilled burger.
- Spread a tablespoon or two of the blueberry barbecue sauce on the burger.
- Top with blue cheese crumbles, bacon, and the top bun. Serve immediately.

BACON, EGG AND CHEESE BREAKFAST BURGERS
Don't decide between a bacon cheeseburger and a bacon-egg-and-cheese sandwich: Combine them!

- Preheat the oven to 350 degrees F.
- Shape the beef into 4 patties, each about 5-inches in diameter. Sprinkle the outside of the patties generously with salt and pepper and set aside.
- Lay the bacon in a large nonstick skillet and cook over medium heat, until brown and crispy, about 4 minutes per side. Transfer to a paper-towel-lined plate to drain. Pour off and reserve all but about 1 tablespoon of the bacon drippings and increase the heat to medium-high.
- Add the burgers to the skillet, and cook until well browned on the outside and medium-rare on the inside, about 4 minutes per side. Transfer the cooked burgers to a rimmed baking sheet and top each with a slice of cheese. Brush the insides of the buns with the melted butter and put on a second baking sheet buttered side-up. Bake until the cheese melts, about 3 minutes and the buns are lightly toasted, about 10 minutes.
- Meanwhile, wipe out the skillet. Heat 1 tablespoon of the reserved bacon drippings over medium-high heat. Break the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 5 minutes. Season with salt and pepper.
- Put a burger patty on each of the bottom buns and top each with 2 slices of bacon and a fried egg. Spread the top bun with some of the spicy ketchup and put on top of the burger.
BLUEBERRY BACON BREAKFAST BURGERS RECIPE

- - place meat of choice in a large mixing bowl - rough chop onion - add onion, garlic, parsley, rosemary, bacon slices, maple & salt into the bowl of a food processor and process until onion, garlic & bacon are chopped. Add blueberries and pulse a couple of times. - preheat skillet or grill pan (medium heat) & lightly oil the pan. - add spice mixture to the meat and work it through the meat - form into 12 patties - grill (on a grill pan on medium heat) for 4 minutes each side. (optional: these can also be baked at 350F/ 180C for 18 minutes and then pan fried for a couple of minutes just to brown them.)

- Put the onion, ketchup and oyster sauce in a food processor, then blend to a coarse paste, scraping down the sides of the processor if you need to. Put the sausagemeat into a mixing bowl, beat in the onion mix, egg yolk and 25ml water (and I mean really beat; if you have a tabletop mixer, do it in that), then add the parsley. Separate the mix into 8, roll into large balls, then flatten into patties. Chill on a plate for 1 hr.
- To cook the burgers, heat a griddle or large frying pan without adding any extra fat. Fry for 3 mins on one side until golden, turn down the heat for 5 mins, then flip and repeat on the other side.
- While the burgers cook, fry the bacon and, if you are game, some eggs as well. Heat the grill, then lightly toast the insides of the ciabatta buns.
- Place the cooked burgers on a baking sheet, put a slice of cheese on each, then pop under the grill to melt. Sit the burgers on their buns, then place the bacon on top. If you feel like them, slide fried eggs on top of the bacon. Serve with a napkin.
