All I can say is my family just loves this cake and so do my friends . I am asked to make this cake when invited to a family get together or stay home! LOL

CAKE:
1/2 cup(s) creamy peanut butter
3 medium bananas, mashed
2 tablespoon(s) vegetable oil
1/2 cup(s) water or more if needed
2 large eggs
2 tablespoon(s) cocoa powder
18 ounce(s) pkg. devils food cake mix(no pudding kind)
1/2 cup(s) chopped peanuts
CHOCOLATE GLAZE:
1/2 cup(s) whipping cream
3/4 cup(s) semi-sweet chocolate chips
MARSHMALLOW GLAZE:
1 to 2 tablespoon(s) boiling water
1 cup(s) marshmallow creme

Steps:

  • Preheat oven to 375^. Spray a 9x13-inch baking pan;set aside. --- In medium bowl of mixer; beat peanut butter, banana, oil and water together on medium until smooth. with just a few small pieces of banana lumps. Beat in eggs, cocoa powder and cake mix on medium high for one minute, until well blended, add a little more water if desired (batter will be thick), Fold in peanuts. Pour into prepared pan .Bake for 35 minutes or tested done with toothpick. Cool on wire rack.
  • Make Chocolate Glaze: In a safe bowl, microwave whipping cream on high 1 minute and 30 seconds. Remove and add the chips; let stand 2 minutes. Stir until smooth. Pour over top of cake. Spread evenly.
  • Make Marshmallow Glaze: In a small bowl, stir 1 Tablespoon of the boiling water into marshmallow creme until smooth. If glaze is to thick, stir in the remaining boiling water to make a glaze. Pour Marshmallow Glaze over chocolate glaze. Sprinkle with crushed nuts and dried banana chips on top.

1 cup graham cracker crumbs
1/4 cup granulated sugar
4 tablespoons butter
15 ounces all-purpose flour
5 ounces cocoa powder
1 pound 8 ounces sugar
1 tablespoon baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
4 eggs
1 1/2 cups buttermilk
3 ounces vegetable oil
2 teaspoons vanilla extract
1 1/2 cups hot coffee
12 ounces cream cheese
8 ounces butter
1 1/2 pounds powdered sugar, sifted
1 teaspoon vanilla extract
8 ounces creamy peanut butter
2 cups granulated sugar
1/2 teaspoon cream of tartar
4 egg whites
2 teaspoons vanilla extract

Steps:

  • For the crust: Preheat the oven to 325 degrees F. Line muffin pans with 36 muffin liners. Combine the graham cracker crumbs, granulated sugar and butter in a bowl. Mix with your hands until well combined. Press 2 tablespoons of the mixture into the cupcake liners and bake for 7 minutes. Remove and let cool.
  • For the chocolate cake: Preheat the oven to 325 degrees F. In the bowl of an electric mixer with the whisk attachment, whisk the flour, cocoa powder, granulated sugar, baking soda, baking powder and salt until well combined. Add the eggs, one at a time, scraping the bowl as needed. Add the buttermilk, vegetable oil, vanilla and coffee and mix for about a minute until well combined. Fill the 36 muffin pans with the pre-baked graham cracker crust three-quarters full with batter and bake until a toothpick inserted comes out clean, about 20 minutes.
  • For the peanut butter cream cheese filling: Whip the cream cheese and butter in an electric mixer with the paddle attachment until fully incorporated. With the mixer on low, gradually add the powdered sugar until combined. Add the vanilla and mix until combined. Finally, add the peanut butter and mix until fully incorporated.
  • For the marshmallow frosting: In small saucepan, combine the granulated sugar, 5 ounces water and the cream of tarter and boil until the sugar dissolves, stirring occasionally.
  • In the bowl of an electric mixer with the whisk attachment, beat the egg whites and vanilla until firm peaks form. With mixer on high, slowly stream the hot sugar mixture into the egg whites and mix for about 3 minutes.
  • To assemble: Use a knife to cut a hole out of the center of the cupcakes. Fill with peanut butter cream cheese filling with a spoon and frost with marshmallow frosting.

1-1/2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate (6 oz.) , coarsely chopped

Steps:

  • Heat oven to 350°F.
  • Combine dry cake mix, butter and 1/3 cup milk; press 2/3 onto bottom of 13x9-inch pan. Bake 12 to 14 min. or until center is almost set; cool 3 min.
  • Mix peanut butter and remaining milk until blended; spread onto crust. Top with small spoonfuls of the marshmallow creme and remaining cake mixture. Sprinkle with nuts and chocolate; press gently into cake mixture.
  • Bake 18 min. or just until center is set. Cool completely before cutting into bars.

If you want a chocolate glaze, use melted butter and omit the peanut butter. If you want a plain peanut butter glaze, omit the cocoa. You could also use a round or square cake pan.

1 cup raw sugar
1/2 cup unsweetened cocoa powder (the darker and higher quality, the better)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup warm water
1 teaspoon vanilla extract
2 tablespoons vegetable oil or 2 tablespoons melted butter
1 teaspoon apple cider vinegar
1/3 cup maple syrup or 1/3 cup agave syrup
2 tablespoons melted butter or 2 tablespoons canola oil
2 tablespoons milk or 2 tablespoons soy milk
2 tablespoons creamy 100% peanut butter (the natural kind, no sugar added)
2 tablespoons unsweetened cocoa powder

Steps:

  • For the cake: Preheat the oven to 350°F Put all of the ingredients in a bowl and stir until combined.
  • Pour the batter into a loaf pan coated with cooking spray. Bake 40 to 50 minutes, rotating the pan about halfway through the baking time. When a toothpick inserted into the middle comes out clean, it's done.
  • Let the cake cool completely, then top with Peanut Butter Glaze. Slice & serve.
  • For the glaze: Combine all of the ingredients in a bowl and mix with a hand blender until the sugar crystal are dissolved. If they aren't dissolving, you can gently heat the mixture until they do. Heat on low on the stove or on 50 percent power in the microwave, stirring every 20 seconds. Be careful with splattering when blending.
