OATMEAL CHOCOLATE CHIP BARS
These oatmeal chocolate chip bars are soft, moist, slightly chewy, super satisfying, and perfect for serving up as breakfast, a snack, or dessert! The recipe uses all simple pantry-friendly ingredients and is gluten-free, dairy-free, vegan, and contains a top-secret healthy 'hidden' protein-rich ingredient no one will guess!

- Prepare and measure all the ingredients. I recommend using a kitchen scale for this recipe. Also, check the video in the post for visual instructions.
- Preheat the oven to 360 degrees Fahrenheit (180 degrees Celsius) and line a baking pan with parchment paper. My baking pan measures 9"x6" (23 x 15 cm).
- Put all wet ingredients into a food processor and mix until smooth.
- Add all dry ingredients (except the chocolate chips) and mix again, just for a few seconds (don't over mix).
- Now add the dairy-free chocolate chips and stir with a spoon.
- Spoon the batter into the lined baking pan. Top with more chocolate chips or chocolate chunks.
- Bake in the oven for about 28-35 minutes (it can take some minutes more or less, depending on your oven and the size of your baking dish). I have a gas oven and baked them for exactly 35 minutes. You can insert a toothpick into the middle after 28 minutes. When it comes out dry, the dessert is done!
- Let it cool and cut into bars. Enjoy for breakfast or as a dessert!

- Preheat oven to 375°F. Line a 9-inch square pan with parchment paper. Lightly grease pan as well.
- Cream together the butter and sugars.
- Blend in the egg and vanilla.
- Whisk together the dry ingredients and then blend into the creamed mixture.
- Stir in the oats and chocolate chips until just combined.
- Spread evenly into the pan. Sprinkle a few extra chocolate chips on top and press them into the dough.
- Bake at 375°F for 25-30 minutes. The bars should be golden brown on top and a toothpick inserted in the center should come out clean.
- Cool completely before cutting into squares.

- Line a loaf pan with parchment paper.
- Soak the pitted dates in boiling water for 10 minutes, then drain using a fine mesh colander and remove excess of water by gently pressing with a spoon.
- Add the softened dates, oat flour and cacao powder to a food process and process until uniform. You should have a dryish crumbly mixture at this point. Add 2-3 tablespoons of water (depending on how much water the dates retained) and process. You are looking for a thick sticky paste that holds well when pressed in between your fingers.
- Add the rolled oats and pulse a few times until incorporated and the oats mostly broken down, but still visible. Transfer to a bowl and add the chocolate chips, dried cherries and cacao nibs. Use your hands to incorporate the ingredients into the sticky dough.
- Transfer to the prepared dish and use your fingers to even out the surface. You want to press firmly and ensure it is compact all the way to the edges and corners so it holds well after sliced.
- In a small bowl, combine the chocolate topping ingredients and warm up in the microwave for 30 seconds. Then, let sit for 2 minutes and stir until all melted and uniform. Pour the thick chocolate sauce over the dish and use a spoon/spatula to even out the surface. Let the bars set in the fridge for at least an hour. Then, unmold by pulling on the parchment paper and slice in bars. Enjoy!

- Preheat your oven to 350F and line a quarter sheet pan with parchment paper or spray it with nonstick baking spray. This recipe can also be made in a 9x13 cake pan but a quarter sheet pan is just the right height!
- Add the softened butter and brown sugar to the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed until well combined-- about 1 minute.
- Next, add the eggs and vanilla extract and mix to combine. Make sure to scrape down the sides of the bowl as needed.
- Next, add the oats, flour, and baking soda. Mix on low speed, just until combined.
- Finally, add the chocolate chunks and fold them into the dough.
- Transfer the dough to the prepared pan and spread it into a smooth, even layer.
- Bake for 28-30 minutes, or until the bars are golden brown around the edges and fully set in the center.
- Allow the cookie bars to cool completely in the pan. Then, remove them to a cutting board and slice them into your desired size. Sprinkle with flaky sea salt before serving, if desired.

- Preheat oven to 375°. Lightly coat a 9x13-inch baking pan with cooking spray or line with parchment paper.
- In a large bowl, cream together syrup, sugar, butter, applesauce, eggs, and vanilla.
- In a medium bowl, mix together cinnamon, baking soda, baking powder, salt, oats, flour, guar gum and walnuts. Gradually add dry ingredients to wet ingredients, stirring until just moistened.
- Add chocolate chips or raisins and stir again until evenly distributed. Do not overmix.
- Spread mixture evenly in pan. Bake on center rack for about 20 minutes.
- Allow to cool at least 10 minutes on a wire rack before slicing.
