WALNUT AND BLUE CHEESE GRAPES

Steps:
- Line a small baking sheet or baking dish with parchment paper. Set aside.
- In a food processor, blend together the cream cheese, blue cheese, and heavy cream until smooth. Transfer to a medium bowl. Add the grapes and stir until coated with the cheese mixture.
- In another small bowl, mix together the walnuts, sugar, and parsley.
- Using a fork, transfer the grapes, one at a time, to the walnut mixture and, using clean hands, gently roll in the mixture until coated. Place the grapes on the prepared baking sheet. Refrigerate for 2 to 3 hours and serve.
- Cook's Note: To toast the walnuts, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 6 to 8 minutes until lightly toasted. Cool completely before using.
ROASTED PEARS WITH BLUE CHEESE AND WALNUTS
Steps:
- Preheat the oven to 375 degrees F.
- Arrange the pears, cut sides up, on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Strip the leaves from the thyme branches and sprinkle over the pears. Put the baking sheet in the oven and bake 20 minutes. Remove the baking sheet from the oven and spoon a generous teaspoon of crumbled cheese in the center of each pear half, return the pears to the oven and roast until they are tender and the cheese is soft, about 10 more minutes.
- Meanwhile, put the walnuts on another baking sheet and toast in the oven until golden brown and fragrant, about 5 minutes. Chop. When the pears are cooked, transfer them to a serving plate and sprinkle the toasted walnuts over the top. Serve hot.

- Wash and dry the celery. You can keep the celery leaves attached to the stalks or even chop the leaves for garnish.Leave the celery sticks in full length or cut into 3" appetizer lengths or 1" bite size lengths. Cut on an angle for "looks".
- Crumble the blue cheese (room temperature is easier to crumble). With a fork add and mix in the sour cream and Dijon mustard. Mix until smooth.
- If using nuts, chop into small pieces.
- Fill the celery sticks with the blue cheese dip. A knife will help get the dip into the thin crevices of the celery.
- Sprinkle with paprika for color.
STUFFED MUSHROOMS WITH LEEKS, BLUE CHEESE AND WALNUTS.
A really simple and tasty dish that is so versatile and open to so many interpretations. Great for a starter, side or snack dish, or why not stick it into a bun for a veggie burger! I've used toasted pine nuts, but hazelnuts would be good too. Stilton and Cambezola cheese work really well too and Cheddar is an obvious choice if you don't do blue cheese. I bet fresh mozzarella would be great too. Chopped bacon can also be added to the leek for another variation.

- Melt the butter in a pan and cook the leek until softened and light brown.
- Add the nuts and stir for 1 minute, until they are coated in the butter and juices.

BAKED BLUE CHEESE WITH FIGS & WALNUTS

- Heat oven to 200C/180C fan/gas 6. Cut a cross in the tops of the figs nearly, but not quite, all the way down to the bottom, and pinch the bases. Sit in a baking dish or roasting tin (big enough so the figs can sit in a single layer with the whole cheese) cut-side up, but don't put the cheese in yet.
- Mix together the vinegar and wine or grape juice with some seasoning, and pour all over the figs. Scatter over the walnuts and thyme. Finally, drizzle over the honey. Bake for 15-20 mins until the figs start to become soft and sticky.
- Tuck the whole cheese in among the figs and put back in the oven for a final 5 mins. Lift the dish straight to the table and serve with lots of crusty bread to scoop up the molten cheese.

- Oil roasting pan.
- Rinse and dry apples, cut off tops of apples and core with an apple corer. Place apples into a roasting pan and drizzle wtih lemon juice.
- Toast walnuts in a dry pan fry briefly until fragrant, cool and coarsely chop, setting aside four whole nuts.
- Combine Roquefort with cream fraiche and season with salt and pepper.
- Place whole nuts into apples, fill with cheese mixture and top with chopped nuts. Replace apple lids. Sprinkle apples with chopped butter and pour wine in the pan. Bake in preheated oven at 180°C (approximately 350°F) for about 25-30 minutes.
- Arrange on plates and serve garnished with chopped chives.

- Cut the aubergines in half, leaving the tops on and score the surface of the flesh with a knife.
- Place on a baking tray cut-side up, drizzle with olive oil and season with salt and pepper. Bake for about 30 minutes or until soft.
- While the aubergines are cooking, gently fry the onions and garlic in oil for a few minutes. Add the tomatoes and herbs and cook to soften.
- Remove the flesh from the roasted aubergines, reserving the skins to be stuffed later. Chop the aubergine flesh into small cubes.

- For the tomato sauce, heat the oil in a pan and fry the onion for five minutes. Add the garlic and fry for a further minute. Add the tomatoes and bring to the boil, add the chopped oregano reduce the heat and simmer for 30-40 minutes.
- When it has finished cooking, add salt to taste, and blend to a smooth purée using a hand-held blender or food processor. The sauce keeps for a few days in the fridge, but is best if eaten when freshly made.

- Cook the bacon in a small frying pan until crisp. Remove the bacon and drain off all but 1 teaspoon of the bacon fat. Chop the bacon fine, reserving about 1/3 of the bacon bits to sprinkle on top of the mushrooms.
