CAVATINI I
This is a great cavatini recipe. It makes two 9x13 inch pans. You can bake one, and freeze the other for later use.

Steps:
- In a small skillet, saute onions, green peppers, and mushrooms in butter or margarine. Set aside.
- Brown hamburger in a large skillet over medium heat. Drain. Mix in tomato sauce, pasta sauce, chopped ham, chopped chicken or turkey, pepperoni, salt, and red and black pepper. Add vegetable saute to hamburger mixture.
- Cook pasta according to package directions. Drain.
- Spread a little sauce over the bottom of two 9 x 13 inch pans. In each pan, place a layer of pasta, a layer of mozarella cheese, a hamburger sauce layer, a sprinkling of Parmesan cheese, and another layer of mozarella cheese. Repeat layers. Cover pans.
- Bake at 350 degrees F (175 degrees C) for 30 to 45 minutes.

Steps:
- In a large saucepan, combine green pepper, onion, pepperoni, mushrooms, tomato paste, spaghetti sauce, and garlic. Cover, and simmer for one hour.
- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
- Preheat oven to 350 degrees F (175 degrees C).
- Mix together pasta, ricotta, 1 1/2 cups mozzarella, and Parmesan. In a 9x13 inch baking dish, alternate pasta and cheese mixture and sauce mixture, ending with sauce. Top with remaining mozzarella.
- Bake in preheated oven for 30 minutes. Let stand for 5 to 10 minutes before serving.

EASY CAVATINI

Steps:
- Chop the onion and green pepper.
- Cook pastas together; drain well.
- Saute beef, onion, and green pepper until beef is no longer pink and vegetables are soft. Add the pepperoni and heat thoroughly. Drain excess grease.
- Add spaghetti sauce and simmer 5 minutes.
- Spray a 3-qt casserole with cooking spray. Put 1/2 of the pasta in the casserole. Spoon 1/2 of the meat sauce mixture over the pasta. Spoon the container of cottage cheese over the sauce. Sprinkle with 1/2 of the mozzarella cheese.
- Top with the remaining pasta, then sauce, then mozzarella cheese.
- Bake at 350 degrees for 30-35 minutes.

CAVATELLI PASTA
Steps:
- Preheat the oven to 350 degrees F.
- Cook pasta until al dente in a pot of boiling, salted water.
- Heat the marinara sauce in a large saucepan. Reserve about 1 1/2 cups of the sauce. Set aside about 1 tablespoon of the Parmesan. To the sauce, add the ricotta and remaining Parmesan and stir well. Cook over medium heat, stirring, for about 2 minutes. Add the cooked pasta and the butter and toss well. Top with the reserved marinara and mozzarella and sprinkle with Parmesan. Bake for 15 to 20 minutes, or until golden brown. Garnish with fresh basil.
CAVATINI
I found this recipe several years ago in Southern Living magazine and it is wonderful! My Mom really loves this so I always have to make it for her on special occasions. This really makes a HUGE amount...but the ingredients could easily be cut in half. Better yet, one dish could be frozen for later use. Enjoy!

- Cook the beef, sausage, onion and green pepper until brown.
- Drain and set aside.
- Mix the pepperoni, tomatoes, spaghetti sauce, salsa, mushrooms and salad peppers.
- Stir into the meat mixture.
- Add the cooked pasta shells.
- Spoon 1/2 of the mixture into 2 greased 11x7 inch baking dishes.
- Combine the two cheeses and divide the amount in half.

- 1. Brown ground turkey, onion, and bell pepper. Add pepperoni and sauce.
- 2. Boil all pastas for 10 minutes. Drain.
- 3. Add to meat sauce mixture.
- 4. In a medium bowl, mix 2 cups of mozzarella, the cottage cheese, and Italian seasoning.
- 5. In a 9x13 baking dish, layer almost 1/2 of pasta/meat mixture.
- 6. Then, add a layer of 1/2 cheese mixture.
- 7. Add another layer of pasta/meat (make sure to leave enough for a thin third layer). Add a layer of the rest of the cheese mixture. Top with remaining pasta/meat, and sprinkle on the 1/2 cup of mozzarella.

- Boil 1/2 bag of medium noodles.
- Brown one pound hamburger and one pound sausage.
- Drain noodles and in a bowl mix hamburger, sausage; mix in one jar pizza sauce and half a jar spaghetti sauce.

- In a Dutch oven, cook the beef, onions and pepper over medium heat until meat is no longer pink; drain. Add garlic; cook 1 minute longer. - Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Brown bacon until crisp. Drain off all but 2 tablespoons grease. Set bacon aside.
- Return oil to frying pan, add lettuce. Cook for 2 to 3 minutes over medium-high heat. Add roma tomatoes. Cook for 2 additional minutes.

WORKDAY CAVATINI (EASY)
Steps:
- Brown sausage in a large skillet. Remove sausage from skillet with a slotted spoon and reserve. Next, saute the prepared mushrooms in the sausage oils left in skillet, saute until just tender.
- In the meantime boil your pasta, draining just before completely soft so that it is not too soft when baked in the sauce. While the pasta finishes, combine the sausage, mushrooms and pasta sauce in the skillet and allow to simmer on low.
- In a 2 quart casserole dish, coated with a non-stick spray, layer the ingredients. Start with a thin layer of sauce. Continue in the following order: 1/2 pasta, 1/2 sauce, 1/2 pepperoni, 1/2 cheese. Repeat. Cover with foil.
- Bake at 350°F for 30 min. Uncover and bake until all cheese is melted and sauce is bubbling. Remove and let stand for 7 to 10 min. Slice and serve.
