Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- In a large bowl mix the chicken, celery, water chestnuts, mushrooms, mayonnaise, lemon juice, salt, onion, and almonds. Transfer to the baking dish, and top with Cheddar cheese and crushed potato chips.
- Bake in the preheated oven for 30 minutes, until lightly browned

MISS DAISY'S HOT BAKED CHICKEN SALAD
There are probably a thousand different ways to make a hot chicken salad casserole, but this is, in my opinion, one of the tastiest and simplest. This recipe comes from "Miss Daisy" King, a Nashville cooking legend who made this recipe and many others famous at her "Miss Daisy's Tearoom" in Franklin, Tennessee. I like to serve this for supper with fresh fruit, hot rolls and lemon icebox pie for dessert.

- Preheat oven to 350.
- Combine first 7 ingredients.
- Pour into greased casserole.
- Mix cheddar and crushed chips and sprinkle over the top.

BEYOND PERFECT! HOT CHICKEN SALAD CASSEROLE
A good friend brought this over when our second son was born, so we usually have this for his birthday dinner (using turkey, too--he was born on Thanksgiving!). Preparation includes boiling the eggs and cooking the chicken and rice--unless you use leftovers from another prep.

Steps:
- Preheat oven to 350; grease sides of a 13x9 pan.
- In a very large bowl, mix chicken, rice, celery, eggs, onions and nuts.
- In another (smaller) bowl, mix mayonnaise, juice and soups until smooth; add to chicken mixture and stir to coat well; dump into prepared pan, smoothing out the top; sprinkle chow mein noodles over the pan.
- Bake for 30-45 minutes (noodles will be dark brown and crispy).
- LEFTOVERS: The chow mein noodles get soggy when stored in the fridge, so put noodles on only half of the casserole and then when reheating, add noodles on that side, too.

CALIFORNIA HOT CHICKEN SALAD
This is an excellent way to use up left-over chicken or turkey. I found some recipe cards at a yard sale in Florida. This recipe in particular comes from Brook Lodge in Michigan.

Steps:
- Toss with a fork; chicken, celery, almonds, piment, grated onion and seasonings.
- Blend mayonnaise and lemon juice and add to the first mixture.
- Spread in a greased casserole.
- Mix grated cheese and potato chips. Sprinkle over casserole.
- Bake in a preheated oven at 375 degrees until lightly browned and heated through.

- heat about 1 t oil in a large frying pan, add chicken breasts & cook until juies run clear.
- remove chicken, let cool & cut into 1/2 inch pieces.
- place in a large bowl & add all other ingredients except cheese & chips.
- pour into a 13 x 9 inch casserole dish.
- sprinkle with cheese & chips.
- bake uncovered for 30-45 minutes.
