Time 30m

Yield 4 serving(s)

Number Of Ingredients 14

2 tablespoons extra virgin olive oil
1 medium onion, finely chopped
3 garlic cloves, very finely chopped
1 canned chipotle chile, seeded and finely chopped
1 teaspoon ground cumin
1 teaspoon dried oregano
30 ounces black beans, drained
3 cups chicken stock or 3 cups low sodium chicken broth
3/4 lb smoky cooked sausage, such as andouille or 3/4 lb kielbasa, thinly sliced
2 tablespoons fresh lime juice
2 tablespoons very finely chopped cilantro
salt & freshly ground black pepper
sour cream, for serving
lime wedge, for serving

Steps:

  • In a medium saucepan, heat the olive oil until shimmering. Add the onion and cook over moderate heat, stirring occasionally until softened, about 3 minutes. Add the garlic along with the chipotle, cumin and oregano and cook, stirring, until fragrant, 2 minutes. Add the black beans and chicken stock and simmer, partially covered, for 15 minutes. Using a potato masher, coarsely crush some of the beans.
  • Meanwhile, heat a large skillet over high heat. Add the sausage and cook until browned, stirring occasionally, about 5 minutes. Add the sausage to the beans, along with the lime juice and cilantro; season with salt and pepper. Simmer the soup for 2 minutes to allow the flavors to blend. Ladle the soup into bowls and serve, passing the sour cream and lime wedges separately.

Yield 6

Number Of Ingredients 10

1 medium onion, chopped
1 large carrot, peeled or scrubbed, chopped
1 stalk of celery, sliced
2 large cloves of garlic, minced
1/2 tsp dried oregano
1 medium potato, peeled, diced
2 cups beef or chicken broth
1 28 oz tin, diced tomatoes
4-6 oz lean kielbasa sausage, cubed
1 19oz tin black beans, or your favorite canned beans

Steps:

  • Heat large pot with low fat cooking spray. Add onion, carrot and celery; cook and stir over medium heat until vegetables begin to soften.
  • Stir in garlic, oregano, potato, broth and tomatoes; heat to boiling. Stir in Kielbasa. Cover and simmer gently for at least 1/2 hour to blend flavours.
  • Drain and rinse beans. Add to soup. Heat until hot. Add salt and pepper to taste. Serve with crusty bread. (Even better the next day)
  • ** We love this soup. You can prepare it ahead for a gathering and instead of simmering for 1/2 hour, put it in your crockpot on low and add the beans. By the time you are ready to eat (try to make it at least a half an hour) it will be ready to go. Great for potluck as it only gets better the longer it sits.

BLACK BEAN SOUP WITH SMOKED KIELBASA SAUSAGE

Black Bean Soup with Smoked Kielbasa Sausage image

It was a cool, rainy & dreary day today here in the Chicago area. So I decided to make Black Bean & Smoked Sausage Soup. I decided to make something that was healthier and full of fiber. I love Black Bean Soup, but had never made it for my husband, I wasn't sure if he would like it or not. But he ate more than I did, he loved...

Provided by Rose Mary Mogan

Categories     Bean Soups

Time 4h40m

Number Of Ingredients 13

2 lb dry black beans, washed & picked through for sand pebbles
4 stalk(s) celery, chopped
2 large onions, chopped
6 clove garlic, minced or chopped
4 large carrots, peeled & chopped
2-4 small sweet peppers, chopped
2 1/2 lb smoked kielbasa sausage ( or choice of your favorite)
2 tsp coarse black pepper
1 1/2 tsp kosher salt, or to taste
1 Tbsp cumin
1 Tbsp mesquite fijata spice mix (or liquid smoke if desired)
garnish- chopped onion, salsa, sweet peppers, shredded cheddar cheese, sour cream, or jalapeno peppers as desired
2 bay leaves (remove before serving)

Steps:

  • 1. Pick through dry beans, for rocks or sand pebbles & debris, then wash and add to a large pot, cover with water, cover with a tight fitting lid, and bring to a rolling boil, and boil for about 15 to 20 minutes, then lower heat to a simmer and continue to cook until beans are soft and tender, about 3 1/2 hours to 4 hours till liquid is thick and rich. Add more water as needed to keep beans covered.
  • 2. As beans begin to come to a boil, chop all of the vegetables, you can also add jalapeno peppers if desired, but we do not care for spicy food in our household, so I didn't use them. I had almost 8 cups of chopped vegetables when I was done.
  • 3. Add the chopped vegetables to the pot, and continue to cook over low heat.
  • 4. Add all of the spices, stir and continue cooking. Stirring occasionally to prevent beans from sticking.
  • 5. During the last half hour or so of cooking, cut up the smoked polish Kielbasa, and add it to the soup pot. Cover with a lid and continue to cook for about 20 to 30 minutes, stirring occasionally.
  • 6. Ladle and serve with your favorite corn Bread or Tortillas, and add your favorite garnishes. Enjoy.

SUPER EASY KIELBASA BEAN SOUP

Super Easy Kielbasa Bean Soup image

The subtle flavor of vinegar in the beans adds a special flavor note to this soup. What a wonderful soup for a cool winter night! Serve it with a nice salad or a warm slice of cornbread. Yum!

Provided by Jen Lobb

Categories     Other Soups

Time 6h15m

Number Of Ingredients 6

1 pkg kielbasa, smoked or polish sausage (if you want a healthier version, its fine to use turkey sausage-i do!)
1 medium onion, quartered and sliced thin
3 cans beans- any kind will do...a mix is even better (i like black eyed peas, small butter beans and either pinto or northern beans)
1 Tbsp brown or spicy mustard
1/2 to 1 Tbsp cider vinegar (to taste-to give it a little tang)
montreal steak seasoning...or salt, pepper and a little garlic powder

Steps:

  • 1. slice sausage links in half lengthwise then cut into 1/2 inch chunks
  • 2. slice onion as indicated in ingredient list
  • 3. spray either crockpot or medium to large saucepan or soup pot with cooking spray; add sausage and onion
  • 4. pour in the beans, liquid included; add vinegar and mustard- stir to combine (if this is too sour, you can add a tiny bit of sugar to take the edge off); stir in Montreal or other seasonings
  • 5. add just a bit of water to make more 'stew' like but not like a brothy soup- just enough to separate the ingredients a little bit- DO NOT cover the mixture with water
  • 6. turn crockpot on (low if you'll be gone all day, high if you need it in a couple hours) or cook on stove-once it gets to a boiling point, turn heat down and let simmer until flavors blend...re-season to taste
  • 7. ** if you prefer a thicker stock once its done cooking, add a bit of cornstarch/water or use Wondra/gravy flour to thicken....Enjoy!

SMOKED SAUSAGE AND WHITE BEAN SOUP

Smoked Sausage And White Bean Soup image

Provided by Food Network

Categories     main-dish

Time 11h25m

Yield about 2 quarts

Number Of Ingredients 13

1 pound dried navy beans, rinsed
1 tablespoon olive oil
1 pound smoked pork sausage, sliced into 1/2-inch pieces
2 cups chopped onions
1 1/2 tablespoons minced garlic
2 bay leaves
2 sprigs fresh thyme
8 cups chicken stock
3 cups water
2 teaspoons salt
1 1/2 teaspoons freshly ground black pepper
1/2 teaspoon ground cayenne pepper
Loaf of crusty bread, for garnish

Steps:

  • Soak beans in cold water to cover, overnight (8 to12 hours). Drain beans and rinse well.
  • In a large stockpot or Dutch oven, heat the olive oil over medium-high heat. Add the sausage and saute for 5 to 6 minutes, or until browned. Remove the sausage from the skillet and reserve. Add the onions and cook 2 to 3 minutes, stirring occasionally. Add the garlic and cook, stirring, an additional minute.
  • Add the browned sausage back to the stockpot. Stir in the beans, bay leaves, and thyme. Add the chicken stock, water, salt, pepper, and cayenne. Bring soup to a boil; reduce heat to a simmer and cook, partially covered for 2 1/2 to 3 hours, stirring occasionally. Skim off any fat, as necessary, if desired. (The cook time may vary depending on the beans, but they should be tender and falling apart when finished.)
  • Adjust seasonings with salt and pepper, if needed. Using a potato masher or the flat side of a spoon, gently mash the beans against the bottom and sides of the stockpot, leaving some of the beans whole and some mashed. Continue to simmer the soup for 30 minutes, uncovered, or until desired consistency.
  • Ladle the soup into bowls. Serve hot, with crusty bread slices.

BLACK BEAN AND SMOKED SAUSAGE SOUP

Black Bean and Smoked Sausage Soup image

I can easily make this after work, even if I have to prep everything from scratch. The original recipe was adapted from a Better Homes and Gardens Cookbook. It called for 1 lb of dried black beans but for us, canned works best on a weeknight. I've used either 2 or 3 cans of beans, it depends on how thick you like your bean soup. I think the coriander and sherry are the key to it's taste.

1 cup chopped onion

3 tablespoons dry sherry

Steps:

  • In a Dutch oven or 6qt stockpot saute onion, celery, bell pepper, and garlic in olive oil until tender; add beans, tomatoes, chicken stock, coriander, red pepper flakes and salt (if needed); Bring to boiling, reduce heat, cover and simmer for at least 30 minutes.
  • In the meantime (optional) cook sausage in a nonstick pan and drain; set aside (we like the flavor a little better that way).

WHITE BEAN AND SAUSAGE SOUP WITH PASTA

White Bean and Sausage Soup with Pasta image

Is there anything more comforting than ladling up a pot of bubbly, savory soup? We don't think so. As the temps get cooler and the days get longer, the family gathers in the kitchen a little bit more often, craving something warm, aromatic, and satisfying for a hot lunch or supper. While many soups and stews may require a few hours to simmer on the stovetop, this easy white bean soup comes together in just 40 minutes. To make the soup even heartier, we have added pasta and turkey sausage. Use your favorite smoked sausage if you wish, but you may have a bit more grease in the pan than if you used turkey. Brown the sausage and onions, then add garlic, rosemary, seasonings, beans and chicken stock. Add uncooked pasta and let it them get tender, then stir in swiss chard. Chard is a nutritious, green leafy vegetable with a taste that is a bit milder than spinach. Use raw chard in green salads, sauté it with garlic and olive oil, or bake it into a frittata. Serve a basket of warm, homemade bread with this while bean and pasta soup for a complete quick and easy weeknight supper. To keep the sodium count on this bean and sausage soup low, purchase low-sodium cannellini beans and low-sodium chicken stock.

Provided by Pam Lolley

Categories     Soup

Time 40m

Number Of Ingredients 13

2 tablespoons olive oil
1 small yellow onion, chopped (1 ½ cups)
1 (13-oz.) pkg. smoked turkey kielbasa (Polish sausage), cut into half-moons
2 garlic cloves, finely chopped (1 Tbsp.)
1 teaspoon finely chopped fresh rosemary
¾ teaspoon kosher salt
½ teaspoon black pepper
2 (15-oz.) cans lower-sodium cannellini beans, drained and rinsed
4 cups lower-sodium chicken broth
1 dried bay leaf
½ cup uncooked ditalini pasta
3 cups packed roughly chopped Swiss chard (stems and ribs removed; from 1 [8-oz.] bunch)
Shaved Parmesan cheese

Steps:

  • Heat oil in a Dutch oven over medium-high. Add onion. Cook, stirring occasionally, until softened and translucent, 5 to 7 minutes. Add smoked turkey kielbasa, garlic, rosemary, salt, and pepper. Cook, stirring constantly, 1 minute. Add beans, broth, and bay leaf.
  • Bring mixture to a boil over high. Reduce heat to low; simmer, stirring occasionally, about 8 minutes. Add in uncooked ditalini pasta to simmering mixture and continue to cook for 7 minutes. Remove and discard bay leaf.
  • Stir in chard. Cook, stirring often, until wilted and slightly softened, 2 to 3 minutes. Garnish with Parmesan.

Add remaining chicken broth plus beans, bay leaf, and parmesan cheese rind then turn heat up to high to bring soup to a bubble. Turn heat down to medium-low then simmer for 15 minutes.
  • Add fresh spinach and grated parmesan cheese then stir and simmer until spinach is wilted, 1-2 minutes. Remove bay leaves (you can leave parmesan cheese rind in to continue to flavor the soup) then scoop into bowls and serve.
