BBQ CHICKEN RANCH DIP
They make this as an appetizer at a local restaurant and my daughter would buy it for a meal, I worked with the ingredients until I got them just right. This is the dip I get asked to make for every occasion. The secret is you have to use Sweet Baby Rays BBQ sauce. I have given the recipe to people and they think I changed something because they used a different sauce This may seem a little rich to some..it even does to me depending on my mood.

- . Mix Cream Chees and ranch dressing mix and spread into an 8X8 pan sprayed with non stick spray.
- Crumble chicken over mixture.
- . Spread BBQ sauce over Chicken.
- Bake at 350 degrees about 20 minutes
- Serve with tortilla chips.

- Cook chicken any way that you prefer, cool and cube.
- Mix dressing, cheeses, and cream in an 8x8 baking dish, bake in oven for 10 minutes.

- Bake for an additional 10 minutes.
- Serve with chips, bread or crackers (I serve it with pita bread).

- Preheat oven to 425 degrees F.
- Soften cream cheese, and then place in a large mixing bowl. If necessary, microwave in 20 second intervals to soften. Add chicken, red onion, 8 ounces sharp cheddar cheese, ranch dressing, and bbq sauce.
- Mix together, until well combined.
- Spray a 9 x 13 inch casserole dish, and spread mixture evenly into pan.
- Top with cheese blend, and some of the red onions, then bake at 425 degrees for 20 mins
- Garnish with chopped cilantro or green onions, if desired, and serve immediately with your favorite dippers.

BBQ RANCH CHICKEN PIZZA
After having BBQ chicken pizza at my favorite pizza place I decided to try it at home. My kids love this version with the addition of Ranch dressing to the sauce. It is much more interesting.

- Prepare Pizza dough and spread in pizza pan. Sprinkle with parmesan cheese. Place in a 375 degree oven for 5 minutes to precook the dough. While the dough is precooking chop the chicken into bite sized bits and stir fry with garlic until cooked through. Chop the bacon into bits, chop the scallions into bits, chop the olives into bits.
- mix the Ranch dressing with the BBQ sauce until combined.
- After 5 minutes take the dough out of the oven. Spoon the Ranch/BBQ sauce over the dough. Top with the chicken, bacon, scallions and black olives. Top with cheese mixture. Sprinkle a little more Parmesan cheese.
- Put back into the oven for 10 additional minutes. When the cheese is melted and bubbly take it out. Let the pizza sit for a minute or two on the counter then slice and enjoy.

- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Crumble the cooled bacon into a bowl and set aside.

- In a large bowl mix together softened cream cheese with ranch dressing, garlic, onion and hot sauce until well combined.
