Steps:

  • Whisk oil, vinegar, shallot, salt and pepper in a large bowl. Let stand for 5 to 10 minutes to allow shallots to soften and mellow a bit.
  • Add spinach, strawberries, feta and walnuts to the bowl and toss to coat with the dressing.

1 package ramen noodles, crushed, flavor packet discarded
1/4 cup sliced almonds
1/4 cup sunflower seeds
1/4 cup (1/2 stick) butter, melted
1 head romaine lettuce, washed and dried
One 5-ounce bag baby spinach
1 pint strawberries, hulled and thinly sliced
1 cup grated Parmesan
3/4 cup sugar
1/2 cup red wine vinegar
3/4 cup vegetable oil
1/2 teaspoon paprika
1/2 teaspoons salt
2 cloves garlic, minced

Steps:

  • For the salad: Preheat the oven to 400 degrees F. In a small bowl, mix the ramen noodles, almonds, sunflower seeds and melted butter. Transfer to a baking sheet and toast in the oven, stirring occasionally, until browned, about 10 minutes. Remove from the oven and set aside to cool.
  • Tear the lettuce and combine with the spinach, strawberries and cheese in a large salad bowl.
  • For the dressing: Dissolve the sugar in the vinegar. Combine the oil, paprika, salt and garlic and then add to the sugar-vinegar mixture. Mix well and store in the refrigerator until ready to serve.
  • Just before serving, sprinkle the crunchy topping over the salad green and toss the salad with enough dressing to coat the greens.

7 -10 cups fresh Baby Spinach (washed, dried and stems removed, or use as much as desired)
5 cups sliced fresh strawberries
1/4 cup toasted sliced almonds (candied almonds are good too!)
1/2 cup crumbled feta cheese (can use more)
1/2 cup vegetable oil
1/4 cup balsamic vinegar (or use raspberry wine vinegar or white wine vinegar)
1/4-1/3 cup white sugar
1 pinch paprika
1 -2 tablespoon poppy seed

Steps:

  • In a large bowl toss the spinach with the strawberries and toasted almonds.
  • In another small bowl whisk together all dressing ingredients, starting with 1/4 cup sugar and adding in more to taste, then pour over the spinach; toss to combine.
  • Sprinkle the feta over the top of salad.
  • Serve immediately.

8 cups fresh Baby Spinach, about 8 ounces
2 cups sliced fresh strawberries, about 8 ounces
1/2 cup slivered almonds
1/4 cup granulated sugar
1 tablespoon water
5 teaspoons balsamic vinegar (12 year old is best)
2 teaspoons Worcestershire sauce
2 teaspoons liquid honey
1 1/2 teaspoons poppy seeds
3 teaspoons finely chopped fresh chives
3 tablespoons extra virgin olive oil
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • SALAD: Break off root ends and tough stems (if any) and discard.
  • Place spinach in a large bowl, add ice and cover with water; set aside to chill.
  • SUGARED ALMONDS: In a small saucepan, combine almonds, sugar and water.
  • Cook over medium-low heat for 5 to 7 minutes or until sugar is almost completely melted and nuts are golden, stirring occasionally- (there will be unmelted sugar on nuts).
  • Spread almonds on a large plate; let cool and then break into small pieces.
  • (Make ahead, as nuts can be stored in an air-tight container for about 3 days).
  • DRESSING: In a small bowl, whisk together balsamic vinegar, Worcestershire sauce, honey, poppy seeds and chives.
  • Drizzle in olive oil and whisk until blended.
  • Now whisk in Dijon mustard until well blended.
  • Whisk in salt and pepper to taste.
  • Remove spinach leaves from water, pat dry on paper towelling and break into pieces.
  • Add to a large mixing bowl.
  • Add sliced strawberries and toss lightly to mix.
  • Add dressing and toss gently until spinach and berries are lightly coated.
  • Add almonds, toss lightly and serve.
  • TIP: Packaged ready-to-use baby spinach can be found in the produce section of most supermarkets.
  • There are 8 cups of baby spinach in (one- 6 ounce) package.
  • NOTE: Only make enough salad that will be eaten at this one time serving. The salad will get somewhat soggy if kept for another day.

3/4 cup raw pecans
1/2 small red onion (very thinly sliced)
10 ounces fresh baby spinach (I also love a 50/50 arugula and spinach blend)
1 quart strawberries (hulled and quartered (about 1 pound))
3/4 cup crumbled feta cheese (buy the block-style feta, not pre-crumbled; the texture is much better)
1/4 cup balsamic vinegar
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons poppy seeds
1 1/2 tablespoons honey
1/2 teaspoon Dijon mustard
1/2 teaspoon kosher salt
1/8 teaspoon black pepper

Steps:

  • Toast the pecans: Preheat the oven to 350 degrees F. Spread the pecans in a single layer on an ungreased baking sheet. Bake for 8 to 10 minutes, until the pecans smell fragrant and the center of a pecan is tan when the pecan is broken in half. (Do not walk away from the oven in the last few minutes of cooking. This is when nuts love to burn.) Transfer to a cutting board and roughly chop.
  • Place the sliced onions in a bowl and cover with cold water. Let sit while you prepare the rest of the salad (this keeps their flavor but removes the harsh onion bite).
  • Prepare the dressing: In small mixing bowl or large liquid measuring cup, whisk together all of the dressing ingredients-vinegar, oil, poppy seeds, honey, mustard, salt, and pepper-until well combined. 4 cups sliced strawberries
1/2 cup vegetable oil
1/4 cup white wine vinegar
1/2 cup white sugar
1/4 teaspoon paprika
2 tablespoons sesame seeds

Steps:

  • 1. In a large bowl, toss together the spinach and strawberries.
  • 2. In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.
  • My Note: After making it a few times I will say that you can do all these variations and it will be terrific but do NOT put the dressing into the fridge, leave it on the counter! It will not be good, it will get creamy and stay on the salad like PASTE. You can get the spinach (baby spinach is the best) and slice the strawberries with an egg slicer and toss ahead, in the fridge -- but let the dressing sit on the counter, trust me. Then toss immediately before eating. Some time I added candied sliced almonds -- just add almond slices to a frying pan and lightly sugar the almonds, add a few drops of water to this slowly and let it cook for a few minutes. caramelizes to a crisp, sweet. Very hot, be careful. I also added the blue cheese, mentioned by other readers. also.instead of using all that sugar, I substituted some honey for the sugar instead, which helped the dressing stick to the salad. I also halved the sugar and substituted Raspberry Balsamic Vinegar for White Vinegar. Also, left out the seeds(I couldn't find them in the store some times) and used sliced almonds. Delicious.

1/2 lbs Strawberries, cored and sliced
4-6 Oz Spinach, I used baby spinach
4 Oz Feta Cheese, crumbled or diced
1/2 Cup Walnuts, raw or toasted
1/2 Cup Blueberries, optional
1/4 Cup Red Wine Vinegar
1/4 Cup Olive Oil
1/2 tsp Mustard, yellow or dijon
1 tbsp Shallot Onions, minced
1 tsp Honey
2 Cup Raspberries, fresh, divided
1/2 tsp Salt, adjust per taste
1/4 tsp Black Pepper

Steps:

  • Smash half of the raspberries using a fork and reserve rest for the salad. Sliced the strawberries, slice feta, mince shallots. Set aside.
  • In a small bowl, add all dressing ingredients with half of the salt. Don't add raspberries. Whisk to emulsify oil with vinegar and mustard until vinaigrette is thick. Add smashed raspberries and mix well. Taste and add more salt to taste. See Note 1 and 2.
  • In a large salad bowl or platter, arrange spinach leaves. To with sliced strawberries, blueberries (if using), remaining raspberries, walnuts and crumbled feta. Drizzle few tablespoon of dressing on the top. Serve remaining table-side for self serving. Enjoy!

¼ cup coarsely chopped pecans (50ml)
2 Tbsp granulated sugar (30ml)
2 Tbsp water (30ml)
1 Tbsp balsamic vinegar (15ml)
1 Tbsp liquid honey(15ml)
½ tsp Dijon mustard (2ml)
pinch salt (pinch)
¼ cup extra virgin olive oil (50ml)
4 cup baby spinach (about 4 oz/100g) (1L)
1 cup sliced strawberries (250ml)
2 kiwis, peeled and sliced (2)
¼ cup soft black pepper cheese, (50ml) such as Boursin or crumbled chevre (optional)

Steps:

  • Place pecans, sugar and water in a small saucepan set on medium heat. Stir to dissolve sugar. Simmer mixture, stirring occasionally, until golden and pecans are coated, about 5-7 minutes. Transfer to a parchment-lined baking sheet and cool. Crumble and set aside.
  • In a small bowl, whisk the vinegar with the honey, Dijon and salt. Slowly whisk in the oil until well combined. To serve, divide spinach among salad plates and top with strawberries, kiwis and sugar pecans. Drizzle with vinaigrette and garnish with the crumbled cheese, if using.
  • Tip: This salad is delicious with or without the cheese. For variety, a mild blue cheese such as cambozola could be used in place of the black pepper cheese or chevre. You could also cut the amount of strawberries in half, and make up the difference with raspberries or blueberries.

1 tablespoon poppy seeds
½ cup white sugar
½ cup olive oil

¼ teaspoon Worcestershire sauce

10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces
1 quart strawberries - cleaned, hulled and sliced
¼ cup almonds, blanched and slivered

Steps:

  • In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour.
  • In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.
