BEST BREAD MACHINE BREAD
I found this recipe on Allrecipes.com. It makes the lightest white bread with a flaky crust. I wanted to share this recipe because it makes the best loaf of bread and is foolproof. I just got a breadmaker and I have been trying many recipes. This is by far the ultimate white bread recipe. Being new to bread making I was a bit afraid to mix the yeast like this but it is really simple and should turn out perfect!

Steps:
- Place the water, sugar, and the yeast in the pan of the bread machine. Mix it up a bit. Let the yeast dissolve and foam for 10 minutes.
- Add the oil, flour and the salt to the yeast.
- Select white bread setting for 1 1/2 pound loaf and press start.
- I use the light crust setting but each machine may be different.
- A little helpful hint. After every loaf of bread I made the kneading paddle would get stuck when I tried to clean it. I was afraid I was going to break it trying to force it off. Now I spray it with vegetable oil spray before each use and it slips off easily for cleaning.

- In a large bowl, dissolve yeast and 1/2 teaspoon sugar in warm water; let stand until bubbles form on surface. Whisk together remaining 3 tablespoons sugar, salt and 3 cups flour. Stir oil into yeast mixture; pour into flour mixture and beat until smooth. Stir in enough remaining flour, 1/2 cup at a time, to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 8-10 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, 1-1/2 to 2 hours., Punch dough down. Turn onto a lightly floured surface; divide dough in half. Shape each into a loaf. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until doubled, 1 to 1-1/2 hours., Bake at 375° until golden brown and bread sounds hollow when tapped or has reached an internal temperature of 200°, 30-35 minutes. Remove from pans to wire racks to cool.

- Heat oven to 350 degrees F.
- Grease bottom and sides of 13 x 9 pan.
- In large bowl, mix granulated sugar, bananas, oil, and eggs with spoon.
- Stir in flour, baking powder, baking soda, cinnamon, and salt.
- Spread in pan.
- Bake bars 25 to 30 minutes or until toothpick inserted in center comes out clean.
- Cool completely, about 1 hour.
- In medium bowl, mix cream cheese, butter, and vanilla with electric mixer on medium speed until blended.
- Gradually beat in powdered sugar with spoon, scraping bowl occasionally, until smooth and spreadable.

FRESH FRIED LARGEMOUTH BASS

- Place bass in a bowl. Add salt and cover with water. Cover and let sit for 30 minutes to draw out all blood. Rinse bass thoroughly to remove salt. Pat dry with paper towels.
- Heat oil in a deep-fryer to 350 degrees F (175 degrees C).
- Place cornmeal, flour, seasoned salt, paprika, and pepper in a gallon-sized plastic bag. Zip and shake until evenly combined.
- Drop 2 pieces of bass into the bag, zip, and shake to coat. Transfer to a plate. Repeat with remaining bass.
- Fry bass in the preheated deep fryer for 3 minutes per batch. Transfer to a paper towel-lined plate. Serve immediately.

- Make the shortcakes:
- Pulse egg yolks, both flours, baking powder, salt, and granulated sugar in a food processor to combine. Add butter and pulse until only pea-size pieces remain. Drizzle in 2/3 cup cream, then pulse 2-3 times to barely incorporate. Transfer dough to a work surface and gently fold on top of itself several times just to bring it together and work in any dry spots.
- Using a 2-oz. ice cream scoop, make 6 balls and place on a parchment-lined baking sheet. Do not flatten. (Or measure out mounded scoops with a 1/4-cup measuring cup.) Cover and chill until cold, 20-25 minutes.
- Preheat oven to 350°F. Brush tops of shortcakes with remaining 2 Tbsp. cream and sprinkle with sanding sugar. Bake until golden and sides are firm to the touch, 28-32 minutes. Let cool.
- To assemble:
- Toss strawberries, granulated sugar, lemon zest, and a pinch of salt in a medium bowl to combine. Transfer half of strawberries to a large saucepan and add 1 Tbsp. water; let remaining strawberries macerate while you bring strawberries in saucepan to a gentle simmer over medium-low. Cook, stirring occasionally and reducing heat if needed to keep at a low simmer, until strawberries are starting to break down and become jammy and liquid is syrupy, 12-18 minutes. Let cool, then stir in 1 tsp. lemon juice. Stir remaining 1 tsp. lemon juice into macerated strawberries.
- Combine heavy cream, powdered sugar, and a pinch of salt in a medium bowl. Scrape in seeds from vanilla bean; reserve pod for another use. Beat cream until soft peaks form.
- Split shortcakes and divide strawberry compote, macerated strawberries, and whipped cream among bottoms. Close with shortcake tops.
- Do Ahead
- Shortcakes can be baked 1 day ahead. Store airtight at room temperature. Reheat before serving.
BA'S BEST EGGPLANT PARMESAN
Trying to slice into this eggplant Parmesan while it's molten hot creates an oozy mess, so let it rest at room temperature for at least 30 minutes to firm up before serving.

- Marinara:
- Preheat oven to 350°F. Heat oil in a large heavy ovenproof pot over medium. Cook garlic, stirring often, until golden, about 4 minutes. Add onion, anchovies (if using), and red pepper flakes and cook, stirring often, until onion is translucent, about 5 minutes. Stir in tomato paste and cook, stirring often, until slightly darkened, about 2 minutes. Add wine, bring to a boil, and cook until almost completely evaporated, about 1 minute. Add tomatoes, breaking up with your hands, and their juices; add basil and oregano and stir to combine. Swirl 1 1/2 cups water into one tomato can, then the other, to rinse, and add to pot; season with salt. Transfer pot to oven; roast sauce, stirring halfway through, until thick and tomatoes are browned on top and around edges of pot, 2-2 1/2 hours.
- Let sauce cool slightly. Pass through the large holes of a food mill or process in a food processor until mostly smooth. Taste and season with salt.
- Lightly season eggplant slices all over with salt; place in a single layer on several layers of paper towels inside a rimmed baking sheet. Top with another layer of paper towels and more slices; repeat as needed. Top with a final layer of paper towels, then another rimmed baking sheet; weigh down with a heavy pot. Let eggplant sit until it has released excess liquid, 45-60 minutes. This step gives the eggplant a creamy texture when baked.
- Meanwhile, pulse panko, oregano, pepper, and 3/4 cup Parmesan in a food processor until very finely ground. Transfer to a shallow bowl.
- Preheat oven to 350°F. Place flour in another shallow bowl and eggs in a third shallow bowl. Working one at a time, dredge eggplant slices in flour, then dip in egg, allowing excess to drip off. Coat in breadcrumbs, packing all around, then shaking off excess. Place on wire racks.
- Heat 2/3 cup oil in a large skillet, preferably cast iron, over medium-high. Cook as many eggplant slices as will comfortably fit in pan, turning once, until deep golden, about 5 minutes. Transfer to paper towels and immediately press with more paper towel to absorb oil. Working in batches, repeat with remaining slices, adding remaining 2/3 cup oil and wiping out skillet as needed. Let cool. Taste and season with more salt if needed.
- Toss chopped herbs, low-moisture mozzarella, and remaining 3/4 cup Parmesan in a medium bowl. Spread 1 cup sauce over the bottom of a 13x9" baking pan; top with a layer of eggplant slices (trim as needed). Drizzle 1 cup sauce over and sprinkle with one-third of cheese mixture. Add another layer of eggplant, followed by 1 cup sauce and half of remaining cheese mixture. Repeat layers with remaining slices, sauce, and cheese mixture. Cover with foil and bake on a rimmed baking sheet until eggplant is custardy, 45-60 minutes.
- Remove from oven and arrange fresh mozzarella over eggplant. Increase oven temperature to 425°F and bake, uncovered, until cheese is bubbling and browned in spots, 15-20 minutes longer. Let rest 30 minutes. Top with basil leaves just before slicing.
- Do Ahead
- Marinara can be made 2 days ahead. Cover and chill. Eggplant Parmesan can be made 2 days ahead. Let cool; cover with foil and chill. Reheat in a 350°F oven, uncovering halfway through, until bubbling gently at edges.

- Combine yeast and 300 g (1¼ cups) room-temperature water in the bowl of a stand mixer. Take the temperature of your kitchen—between 72° and 74° is ideal for fermentation. If your kitchen is running hot, use cool water. If it’s a bit colder, use warm water. Add all the flours and mix with a wooden spoon until no dry spots remain. Cover with plastic wrap and let sit at room temperature until poolish is mature (surface will be very bubbly), 14–18 hours.
- Drop a pinch of poolish into a small bowl of room-temperature water. If it floats, it’s mature, and you’re good to go. If it sinks, wait 30 minutes and test again.
- Combine 300 g (1¼ cups) room-temperature water into poolish with a sturdy wooden spoon. Add whole wheat flour and 412 g (3 cups plus 1 Tbsp.) all-purpose flour and mix until no dry spots remain. Cover dough with plastic wrap and let sit 2 hours. (This process, called autolysis, starts to develop the all-important gluten, giving the dough structure and chew.)
- Evenly sprinkle salt over dough, then add 65 g (¼ cup plus 1 tsp.) room-temperature water and mix with dough hook on medium-low speed. The dough should start to develop a shape and cling to hook after a minute or two. Increase speed to medium-high and mix until almost all the dough clings to hook and clears the sides of the bowl, 8–12 minutes. Cover with plastic wrap and let sit 15 minutes to let dough relax.
