- Heat oven to 350°F
- Cook chorizo, onions and peppers in large skillet on medium heat 8 to 10 min. or until meat is done, stirring frequently; drain
- Whisk eggs, milk and sour cream until blended. Add to meat mixture along with the potatoes and 1 cup cheese; mix well.
- Spoon into 13x9-inch baking dish sprayed with cooking spray; top with remaining cheese.
- Bake 30 to 35 min. or until knife inserted in center comes out clean. Sprinkle with cilantro.

- In a nonstick skillet, cook and crumble chorizo over medium-high heat until cooked through, 5-7 minutes. Drain on paper towels. In same skillet, cook and stir potatoes, onion and pepper until tender, 5-7 minutes. Add garlic; cook 1 minute longer. Remove from heat; stir in chorizo. RICE PILAF WITH CHORIZO CASSEROLE

- Put the saffron in small pot with 1 1/2 cups stock and about 1 cup water. Bring to boil over medium heat, then reduce the heat to low and let steep for a few minutes while you prepare the chorizo and onions.
- Heat a skillet with a tight fitting lid over medium-high heat. Remove the casings from the chorizo and slice about 1 to 1 1/2 inches thick, on an angle. Add a drizzle of extra-virgin olive oil to the hot skillet and add the chorizo. Brown evenly on both sides, 4 to 5 minutes total. Remove the chorizo to a plate and add another drizzle of oil to the skillet along with the onions. Season with salt and pepper, to taste, and cook until softened, about 5 minutes. Add the pimientos and peas and stir to heat through. Deglaze the pan with sherry or wine and stir 1 to 2 minutes. Remove them from the pan to the plate with the chorizo.
- Return the pan to medium heat and melt 2 tablespoons of the butter. Add the pasta and stir until deeply golden brown, about 3 to 4 minutes. Stir in the rice and stock and bring to a boil. Reduce the heat to low, cover the pan and cook for 18 minutes. Fluff the rice with a fork.
- Grease a casserole with the remaining 1 tablespoon of softened butter. Fill the casserole with cooked rice and top with an arrangement of the chorizo and onion mixture. Cool and chill as a make-ahead meal. Reheat by dousing the casserole with 1/2 cup chicken stock then putting it in preheated 375 degree F oven, loosely covered, for 20 minutes. Uncover and bake for about until heated through and barely crispy at edges, about 10 minutes. Top with parsley and serve.

MEXICAN CHORIZO BREAKFAST CASSEROLE
I came up with this recipe when I was looking for a breakfast casserole, but wanted something different than the normal breakfast casseroles.

- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place peppers with cut sides down onto the prepared baking sheet.
- Cook under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 15 minutes.
- Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray and line the bottom with bread slices.
- Cook chorizo over medium-high heat until starting to brown, about 3 minutes. Transfer to a bowl. Heat oil in the same pan. Add onion; cook and stir until tender, about 3 minutes. Peel poblanos and slice flesh. Mix with the onion.
- Beat eggs and milk together in a large bowl. Season with garlic powder, salt, and pepper.
- Spread chorizo over the bread slices. Cover with onion-poblano mixture. Pour the beaten eggs on top. Sprinkle cheese blend over the top.

- Fry garlic with bacon and chicken on a high heat so that chicken is browned on both sides. No need to cook the meat completely.Place into slow cooker or oven proof casserole dish.
- Fry chorizo in same frying pan on high heat so the meat becomes slightly crispy. Place into slow cooker or oven proof casserole dish. Try to retain juices.
- In the original pan and juices, fry the carrot and onion on a high heat for a few minutes until starting to soften. Don't cook the vegetables completely.
- Add red wine OR chicken stock and boil, stirring vigoursly for a few minutes.
- Place into slow cooker or oven proof casserole dish with chicken/chorizo and the rest of ingredients and cook on low for 4-6 hours. this will depend on your slow cooker. If using the oven, use gas mark 2 for 4-6 hours.
- Take out and leave to stand for a couple of hours to allow the flavours and consistency to settle. re-heat and serve with mash. any leftover sauce can be scooped up with fresh buttered bread, especially when you've run out of mash.

CHORIZO AND PORK CASSEROLE
A lovely hearty casserole - its winter comfort food at its best. Its got a great flavour and the Chorizo and the chilli gives is enough of a zing but I always put out some cayenne for those that like it that bit hotter - I served it with mashed potatoes and vegetables but it would also be great with rice! I have put this here on Food.com as having made it as I went along I will never remember what I put in it.

- Put the flour into a plastic bag and add the pork ( dividing into two lots is better) shake in bag and take out the meat shaking off any extra flour.
- Heat most of the oil in a large skillet on medium to high adding the meat and seal then place the meat in a casserole dish.
- Add the remaining oil and cook the onion, garlic, celery and capsicum, chilli and the chorizo a for a few minutes until it starts to get soft then add the paprika, tomatoes, wine and the chicken stock. simmer for a minute or two, and season with salt and pepper.
- Add to the pork and either cook in a moderate oven for 1 1/2 hours or in your microwave, starting on high for 2-3 minutes then set on simmer for 30 minutes.
- Serve with mashed potatoes and vegetables - or with rice.

Captures the taste of Chile Rellenos without the hassle involved. Spicy enough to be interesting but not "hot" at all. I use just a sprinkle of cayenne, no Tabasco. The seasoning comes from the Chorizo.

- In a large skillet, brown sausage and ground beef, breaking up meat as it cooks.
- Add onion and garlic; cook until onion is tender.
- Drain well, as chorizo is quite greasy.
- Cut the chilies into strips length-wise.
- Line a 9x9" square baking dish with half of the chilies; top with 1 1/2 cups of cheese.
- Add browned meat mixture then top with remaining chilies; set aside.
- Beat together eggs and flour until smooth; add milk, salt, and Tabasco or cayenne pepper.
- Pour egg mixture over casserole.
- Bake, uncovered, in a 350F oven for about 35 to 45 minutes, or until a knife inserted around the center comes out clean.
- Sprinkle remaining 1/2 cup of cheese over the top of the hot casserole.
- Let stand for 5 minutes before serving.
CHORIZO & CHICKEN CASSEROLE
This all came about because my Sister Introduced me to a locally made Chorizo from a mercado (market) in the barrio across the river. I started useing it in every recipe I could think of. Then I started inventing recipes I could use this wonderful chorizo in. This is my first "new" recipe. It turned out pretty good, all false modesty aside. The times are, of course, a guess.

- Preheat oven to 325°F.
- Heat frying pan over med-high heat.
- Brown and crumble Chorizo.
- Drain.
- Set aside.
- Brown Chicken.
- Set aside.
- Saute (stir fry) Onion, Bell Pepper, and Celery'til Onions are translucent.
- Combine Rotini, Chorizo, Chicken, Onion mixture, Sour Cream/Yogurt Cheese, Cream of Chicken Soup, and Milk-Egg mixture.
- Mix well.
- Spoon into un-greased casserole dish.
- Bake for 25 minutes.
- (If you wish to freeze for later use, cool, divide into serving sized portions in sandwich size ziplock freezer bags at this time. To serve, thaw, add Parmesan, heat).
- To serve immediately, cover with Parmesan.
- Bake another 10 minutes.
- Let rest 20 minutes before serving.
