FUDGY PEANUT BUTTER BROWNIE CAKE

Steps:
- HEAT oven to 350 degrees F. Coat bottom of an 8-inch round cake pan lightly with no-stick cooking spray.
- PREPARE brownie mix as directed on package using oil, water and egg. Stir in almond extract, peanut butter and peanuts until blended. Spread batter evenly into prepared pan.
- BAKE 40 to 42 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes. Remove from pan to wire rack to cool completely.
- PLACE cake on serving platter. Stir fudge topping until smooth. Spread over cake, covering top and sides. Place the tip of a frosting knife at the center of cake, pulling the knife toward the outer edge in a slight arc. Turn cake a notch counter clockwise. Repeat knife pull several times to form a pattern around entire cake. Garnish center of cake with mint, if desired.

Wonderfully delicious peanut butter cake best with chocolate frosting, If you make with Reese's Peanut Butter and a milk chocolate frosting, it's very much like a Reese's Peanut Butter Cup. This recipe makes a smaller 8x8 cake. If you make a triple batch it is enough for one layer in a 12" cake pan with a dozen cupcakes. I also recommend that you use a creamy peanut butter simply because if there is some left over the nuts well get "soggy" in the cake.

- Preheat oven to 350 degrees F. Grease and flour a 8x8 inch pan.
- Sift together the flour, baking powder and salt. Set aside.
- In a large bowl, cream together the peanut butter, butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in vanilla.
- Beat in the flour mixture alternately with the milk, mixing just until incorporated.
- Pour batter into prepared pan.
- Bake in the preheated oven for 35-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

- Heat oven to 325°F. Grease bottom and side of 12-cup fluted tube cake pan with shortening; lightly flour. Sprinkle nuts evenly in bottom of pan. In medium bowl, mix flour, sugar, baking powder and salt; set aside. In large bowl, beat 1/2 cup butter and 3/4 cup peanut butter with electric mixer on medium speed until smooth, scraping bowl occasionally. Beat in eggs. On low speed, beat in milk and vanilla. Beat in flour mixture just until blended, scraping bowl occasionally. Spread in pan.
- Bake 55 to 65 minutes or toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 2 hours.
- In 1-quart saucepan, heat chocolate chips, 2 tablespoons butter and corn syrup over low heat, stirring frequently, until chocolate chips are melted. Cool about 10 minutes. Stir in hot water, 1 teaspoon at a time, until glaze is smooth and has the consistency of thick syrup. Spoon over top of cake, allowing glaze to run down side.
- In small microwavable bowl, microwave 3 tablespoons peanut butter on High 20 seconds or until it can be stirred smooth and is drizzling consistency. Drizzle over top of chocolate glaze.

- Add cake mix, peanut butter, and brown sugar to a mixing bowl.
- Beat on low speed until crumbly.
- Set aside 1/2 cup crumb mixture.
- Add water, eggs, and oil to remaining crumb mixture; beat on low speed until moistened.

- Cream butter and sugar until light.
- Beat in eggs, one at a time, beating well after each.
- Add vanilla, beat in peanut butter slowly.
- Sift flour with baking powder and salt.
- Stir into butter mixture, a little at a time, until well blended.
- Grease a tube pan; pour batter in and bake 45 minutes at 350°F; reduce heat to 325°F and bake until cake tests done, 15 to 20 minutes longer.
- Cool in pan on rack 10 minutes before removing to rack to cool completely.
- If desired, sprinkle chopped peanuts on cake towards the end of baking while batter is still soft to give it a crunchy topping.

- Butter 2 x 20cm non-stick sandwich tins and line with circles of baking paper. Heat oven to 180C/fan 160C/gas 4. Using electric hand beaters, beat the butter, 3 tbsp peanut butter, eggs, sugar and yogurt together until smooth and creamy. Fold in the flour, then split the mix between the tins, using a spatula to get every last bit. Bake for 30 mins until risen and golden.
- Meanwhile, toss the salted peanuts and icing sugar with ½ tsp water until well coated and claggy. Spread over a non-stick baking sheet. When the cakes are ready, leave them to cool for 5 mins in the tin, then turn onto a cooling rack to cool completely. Turn the oven up to 200C/fan 180C/gas 6, then roast the nuts for 10 mins, tossing them a couple of times until golden and coated in a shiny caramel. Tip onto a lightly buttered plate. Make the topping while you wait: melt the chocolate and milk together in a pan over simmering water or microwave on High for 1 min, then stir to melt. Leave to cool.
- Put one of the sponges onto a plate, spread with 2 tbsp peanut butter (or more), then dot with the dulce de leche and spread with a palette knife. Sandwich the second sponge on top, then spread with the chocolate topping. Scatter with the caramelised peanuts to serve.

- Make the cake: Preheat the oven to 350°.
- Butter and flour a 9-by-13-inch cake pan.
- In a large bowl, whisk the sugar, flour, cocoa, baking powder, baking soda and salt.
- In a medium bowl, whisk the eggs, milk, oil and vanilla.
- Whisk the wet ingredients into the dry ingredients.
- Whisk in the boiling water.
- Pour the batter (it will be thin) into the prepared pan and bake for about 50 minutes, until a toothpick inserted in the center comes out clean. Let cool.
- Invert the cake onto a work surface.
- Working carefully, slice the cake horizontally.
- Reduce the oven temperature to 325°.
- Make the filling: Trace a 9-by-13-inch rectangle onto a sheet of parchment paper and lay it on a large baking sheet.
- In a food processor, pulse the almonds with the confectioners' sugar until they're finely ground.
- In a bowl, using an electric mixer, beat the egg whites at medium speed until soft peaks form.
- Add the granulated sugar and beat until the whites are stiff and glossy, about 2 minutes.
- Using a rubber spatula, fold in the almond mixture.
- Spread the meringue on the parchment to fill the rectangle.
- Sprinkle the chopped peanuts on top.
- Bake for about 20 minutes, until lightly browned and firm. Let cool.

- Spread one-third of the ganache over the cake.
- Invert the filling onto the cake and peel off the paper.
- Spread half of the remaining ganache over the filling, then top with the second cake layer.
- Refrigerate until firm, at least 1 hour.
- Using a serrated knife, trim the edges.
- Spread the remaining ganache over the top and sides of the cake and refrigerate to set.
