1 fully cooked boneless ham (4 to 5 pounds)
3/4 to 1 cup water
1/4 cup orange marmalade
1/4 cup prepared mustard
1/4 teaspoon ground ginger

Steps:

  • Place ham in a shallow roasting pan; add water to pan. Bake, uncovered, at 325° for 1 hour. , In a small bowl, combine the marmalade, mustard and ginger. Brush some over the ham. Bake 1 hour longer or until a thermometer reads 140°, brushing occasionally with glaze.

½ cup Kentucky Bourbon
½ cup orange juice concentrate
¼ cup mayonnaise

Steps:

  • 1.Bake ham per package directions.
  • 2.For the glaze: combine rest of ingredients and mix well.
  • 3.When ham has 20 minutes left to cook, remove from oven and brush on glaze; allow to cook for 10 minutes, then brush on a second layer of glaze and allow to cook for another 10 minutes. Remove from oven and let rest 10 minutes before serving.

Take your Christmas ham up a notch with Michael Weldon's marmalade and mustard glaze. This sweet and tangy glaze caramelises the ham to golden perfection.

480g jar marmalade
1/4 cup (70g) wholegrain mustard
1 tbs dijon mustard
1/2 cup (125ml) orange juice
1 tsp orange zest
1 tbs apple cider vinegar
4.5kg half leg ham (bone in)
5 rosemary sprigs, leaves picked

Steps:

  • Preheat oven to 180°C (160°C fan-forced). Place the ham on a clean work surface. Use a small sharp knife to cut through the rind 8cm from the shank. Run a thumb under the rind to separate from the fat. Peel back, sliding your fingers under the rind to remove. Score the fat, diagonally, at 1.5cm intervals to form a diamond pattern (don't score the fat too deeply as it can slide off during cooking).
  • Combine the marmalade, combined mustard, orange juice, orange zest and vinegar in a small bowl. Brush half the marmalade mixture over the ham. Transfer the ham to a roasting pan. Bake for 1 hour, basting with the remaining glaze every 20 mins.
  • Sprinkle rosemary over the ham. Bake for a further 45 mins or until the ham is heated through and caramelised. Set aside for 10 mins to rest.
  • Transfer the ham to a large serving platter. Cut into slices to serve.

1 raw gammon ham, smoked or unsmoked, approx 5-6kg/11-13lb 3oz with bone in
454g jar good quality orange marmalade
300g light muscovado sugar
jar whole cloves

Steps:

  • Heat oven to 180C/160C fan/gas 6. Put the ham into a large roasting tin, then tip in 500ml water. Cover the whole thing loosely with greaseproof paper, then cover with a large sheet of foil, scrunching and sealing it around the edge of the tin. Make sure you leave some room around the ham. Put it in the oven, then turn the heat down to 160C/140C fan/gas 3 and leave to cook for 5 hrs. Meanwhile, mix the marmalade with the sugar and 50ml water in a small pan, bring to the boil, then set aside and leave to cool.
  • Take the ham from the oven. Be careful when you lift the foil as there will be a good amount of steam, which can burn. Once the ham has cooled just a little, remove the rind by gently prising the skin from the fat and lifting it away. Try to keep as much fat on the leg as you can as this will keep the ham moist as it roasts. Drain off most of the liquid (this is very good ham stock - keep it and use it for soup), leaving a little in the tin. Turn the oven up to 200C/180C fan/gas 6.
  • Score lines into the fat with a knife to make large diamond shapes, with the lines about 4cm apart. Brush a third of the marmalade glaze over the joint, really pushing it into the creases and cuts. Now stud the ham with the cloves by poking a clove into the corner of each diamond.
  • Put a trivet into the roasting tin (if you don't have one, a few halved carrots will do), then sit the ham on top. Roast the ham, uncovered, for 45-50 mins, brushing with the remaining glaze a few times during cooking, until caramelised and delicious. Carve hot or cold.

1 (12 ounce) jar orange marmalade
1/4 cup Dijon mustard

Steps:

  • Preheat oven to 350°F Line a large baking pan with heavy-duty aluminum foil. Place ham cut side down in center of pan.
  • Trim any rind or excess fat from ham with a sharp knife. Score outside of ham with a sharp knife in a decorative diamond pattern (as shown) and insert a whole clove into each diamond point. Cover pan and ham with more heavy-duty aluminum foil. Bake ham for 1 1/2 hours.

cloves whole
1 cup orange marmalade (or plum jam (even strawberry jam, you can use your favorite))
1/2 cup stone ground mustard
1/2 cup ginger ale (Sprite or 7-up, use a clear soda)
2-3 tbsp Sriracha Sauce

Steps:

  • Preheat the oven to 325 degrees
  • Place the ham in a heavy bottom pan. Using a sharp knife, score the ham first one way, then the other to make a diamond pattern in the skin. Poke the cloves into each diamond all over the ham. Cover tightly with tin foil and put in the preheated oven for 1 1/2 hours.
  • While it is baking, prepare the glaze. Combine the remaining ingredients in a sauce pan on the stove. Heat over medium heat, stirring until all of the ingredients are well combined, reduce heat to low and simmer for 10 minutes. Set aside when complete.
  • After 1 1/2 hours, remove the ham from the oven and remove the foil. Baste it with the sauce. Return it to the oven uncovered.
  • Baste every 15 minutes over the next hour, three or four times. You'll bake it for about another hour until it is heated thru. It will be glossy and gorgeous and oh so delicious!
  • If desired, finish it under the broiler for 3-5 minutes to caramlize the glaze.
  • Remove it from the oven. While it's resting remove the cloves, cover with foil and allow to rest for 15 minutes.
  • Now here's the hard part.....just slice and eat!

1 cup water
1 cup cream sherry
1/2 teaspoon ground ginger (or 1 t. grated fresh ginger)
1/2 cup orange marmalade
1/2 cup Bourbon

1/4 cup brown sugar, firmly packed

Steps:

  • Preheat oven to 425°F.
  • Line a large roasting pan with foil.
  • If necessary, trim the rind and fat from the ham, leaving only 1/4" layer of fat.
  • Place the ham in the roasting pan.
  • Score the ham in a diamond pattern, with a sharp knife.
  • Stick one whole clove into the center of each diamond.
  • Combine water, sherry and ginger in a small bowl, then pour over ham.
  • Bake 5 minutes per pound.
  • Combine the marmalade, bourbon and mustard in a small saucepan and cook over medium heat until warm, about 5 minutes.
  • Stir occasionally.
  • Increase oven temp to 450°F.
  • Brush the glaze over the cooked ham, then sprinkle with the brown sugar.
  • Bake until ham reaches a rich brown color, about 20 minutes.
  • Spoon off the fat from the pan juices.
  • Transfer the pan juices to a saucepan, and boil until thick, about 10 minutes or so.
  • Serve the ham with the pan juices.
