I don't usually like 'baking' with the microwave, but this recipe works great. The topping comes out crispy on top, moist inside, and delicious all around. It's a wonderful dessert that's quick and easy to make. Best served warm with vanilla ice cream or whipped topping.

4 large Granny Smith apples - peeled, cored and sliced
½ cup butter, melted
¾ cup packed brown sugar
¾ cup quick cooking oats
½ cup all-purpose flour
1 teaspoon ground cinnamon
½ teaspoon allspice

Steps:

  • Spread the apples evenly in an 8 inch square glass baking dish. A deep dish glass pie plate will also work. In a medium bowl, mix together the melted butter, brown sugar, oats, flour, cinnamon and allspice. Sprinkle this topping evenly over the apples.
  • Cook on full power in the microwave for 10 to 12 minutes, until apples can easily be pierced with a knife. Enjoy!

6 tart apples
1 cup sugar
1/4 teaspoon ground cloves
1/2 teaspoon cinnamon
2 teaspoons lemon juice
3/4 cup sifted flour
1/8 teaspoon salt
6 tablespoons butter
1/4 cup chopped nuts
Whipped cream or ice cream

Steps:

  • Preheat oven to 350 degrees. Peel, core and slice apples into a bowl. Add 1/2 of the sugar, the spices and lemon juice. Mix lightly and pour into buttered 1 1/2 quart casserole. Blend the remaining sugar, flour, salt and butter to a crumbly consistency. Add the nuts and sprinkle over the apple mixture. Bake 45 minutes or until the apples are tender and the crust is nicely browned. Serve with whipped cream or ice cream.

I envy all those that have access to REAL cooking apples! Pies, tarts etc. in Japan are made with sweet eating apples and don't come CLOSE to anything gran or mom made! Once in a GREAT while, you can find cooking apples here for maybe two weeks...Such was the case recently and I bought a CASE! I've been making all kinds of goods with them...Baked Apples, Apple Pie, Apple Brown Betty...Things I don't DARE tell my Doc about! LOL I was in a hurry yesterday and wanted to make a quick dish...It doesn't get any quicker or easier than this!!!

4~5 - cooking apples
1 cup(s) pillsbury oatmeal cookie mix
3~4 tablespoon(s) softened butter
1 teaspoon(s) apple pie spice or just cinnamon
1 pinch(es) salt

Steps:

  • Peel, core and slice the apples. Put in water w/ a little lemon juice while you make the crisp.
  • Cut the softened butter into the Oatmeal Cookie Mix. (You can add some chopped nuts here, if you like)
  • Mix the apples with the spice and you can sprinkle a little brown sugar over them, if you like...I did and thought it was a little sweet.
  • Load the apples into an un-greased 8x8 Pyrex baking dish and evenly distribute the cookie mix on top.
  • Into the microwave for 9min on high (Mine is 1000w) Check the apples with a wooden skewer and if still too firm, give them an additional minute, at a time...
  • Let it cool and it does NOT get any easier!!! LOL
  • You can substitute frozen peach slices,mango chunks thawed and drained or other fruits such as berries or pears.

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking dish.

Try this moreish apple crisp. 'Crisp' is the American version of a crumble, with the topping a mix between a nutty flapjack and a traditional British crumble.

100g plain flour
50g rolled oats
50g flaked almonds or chopped pecans
100g butter, cut into cubes
50g light muscovado sugar
½tsp ground cinnamon
vanilla ice cream or custard, to serve
8 Cox's or Russet apples, peeled, cored and sliced into 5mm-thick rounds
50g golden caster sugar
½ lemon, zested and juiced

Steps:

  • Put all the topping ingredients and a pinch of sea salt in a bowl and rub together with your fingers until combined into a crumb-like texture - this can also be done in a food processor. Chill until needed. Will keep chilled for up to two days.
  • Toss the apples with the sugar and lemon zest and juice until evenly coated, and tip into a 23cm round baking dish that's at least 5cm deep, or a 20cm square dish. Flatten down with your hand and scatter over the topping. Will keep covered and chilled for a day.
  • Heat the oven to 190C/170C fan/ gas 5. Sit the crisp on a baking tray and bake for 40 mins until the topping is a deep golden and the fruit is bubbling at the edges. Leave to cool for 10 mins, then serve with ice cream or custard.
