quick weeknight dinners work for me! 3/25/08- this was made for freezer tag in the OAMC forum and they asked me to post the following, "To freeze: Prepare recipe as directed through step 3. Place chicken in a freezer bag and seal. Pushing out as much air as possible. Allow sauce to cool and place in its own freezer bag. Place both bags inside one large bag, seal, label and freeze. To serve: Thaw in fridge. Cook as directed in recipe. The cooked chicken can be frozen as well. Just allow to cool, then place in a freezer bag."

1/4 cup hoisin sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
2 teaspoons cornstarch
2 teaspoons water
1 pinch salt
1 pinch garlic powder

1 pinch five-spice powder
1 pinch black pepper
4 boneless skinless chicken breasts

Steps:

  • Preheat broiler. combine hoisin, honey, vinegar, sesame oil, in a saucepan, bring to a boil.
  • Combine cornstarch and water and add to mixture, stirring.
  • Cook 1 minute, remove from heat and set aside. mix spices and rub evenly over both sides of chicken. Spray a broiler pan with non stick spray, add chicken, broil 5 minutes.
  • Brush with hoisin mixture and cook for 5 minutes more. turn over and brush with sauce, broil 5 minutes, basting often, until done.

2 tablespoons oil
2 cloves garlic, minced
3 oz. (85 g) broccoli florets
4 oz. (115 g) chicken breast meat, sliced into thin pieces
4 shiitake mushrooms, sliced
1/4 small carrot, peeled and sliced
1 pinch salt and sugar, to taste
1/2 teaspoon shaoxing rice wine or rice wine
1/2 teaspoon corn starch
1 tablespoon hoisin sauce
1 teaspoon soy sauce
1/2 teaspoon sesame oil
3 dashes white pepper
1/2 teaspoon corn starch
4 tablespoons water

Steps:

  • Marinate the chicken with the Marinade for about 10 minutes. Mix all the ingredients in the Sauce in a small bowl, stir to combine well.
  • Heat up a wok with the oil. When the wok is heated, add the garlic and stir-fry until aromatic. Transfer the broccoli into the wok and do a few quick stir. Add the chicken and continue to stir-fry. Add the mushroom, carrot, and the Sauce (stir it before using) and stir to mix well with the other ingredients in the wok.
  • When the sauce thicken and the chicken is cooked, add a pinch of salt and sugar to taste (optional), dish out and serve immediately with steamed rice.

Here at our local warehouse store they sell chicken breast halves in a large bag. I can take out however many I need and fix this recipe without even having to thaw them out. It is a terrific time saver. If you have fresh chicken, just start at the point where you spread hoisin mixture on chicken and enjoy!

1/4 cup hoisin sauce
1/4 cup apricot jam
4 boneless skinless chicken breast halves (right from freezer, no need to thaw)
1/4 cup minced fresh cilantro
1/4 cup minced green onion
1 tablespoon lemon, rind of, minced

Steps:

  • Mix hoisin sauce and jam.
  • Place chicken in a single layer in a 9- by 13-inch pan.
  • Bake in a 400 degree F oven for 15 minutes.
  • Remove pan from oven; spread hoisin mixture onto chicken.
  • Return pan to oven and continue baking until meat is no longer pink in center of thickest part (cut to test), about 10 to 15 more minutes.
  • Baste once with juices.
  • Meanwhile, mix cilantro, onions and lemon peel.
  • Transfer chicken breasts to serving platter.
  • Sprinkle cilantro mixture over and around chicken.

Hoisin sauce is a popular Chinese condiment made from fermented soybean paste and seasonings such as garlic, chile peppers and sesame. Here, it's combined with other pantry staples like soy sauce, rice wine and Sichuan peppercorns and used to marinate and then baste roast chicken, dialing up the savory richness of the meat and infusing it with a wonderfully sweet yet salty flavor.

1/4 cup low-sodium soy sauce
2 tablespoons Chinese rice wine
2 tablespoons hoisin sauce
2 tablespoons honey
2 tablespoons peanut oil
1 star anise pod, broken into points
1/2 teaspoon Szechuan peppercorns, crushed with a knife
2 tablespoons chopped fresh cilantro (stems and leaves)
3 scallions, finely chopped
3 cloves garlic, coarsely chopped
2 quartered chickens (3 to 3 1/2 pounds each)

Steps:

  • Heat the peanut oil in a large skillet over high heat. Add the star anise and peppercorns; cook, stirring, until toasted, about 10 seconds. Add the cilantro, scallions and garlic and cook 30 seconds. Add the soy sauce mixture and simmer over medium heat until slightly reduced, 2 to 3 minutes. Transfer to a large bowl and let cool, then add the chicken and toss. Cover and refrigerate 4 hours.
  • Transfer the chicken to a rack set in a roasting pan (reserve the marinade). Refrigerate the chicken, uncovered, about 3 hours to dry out the skin.
  • Position a rack in the upper third of the oven; preheat to 400 degrees F. Pour 1/4 inch of water and the reserved marinade into the roasting pan. Roast the chicken 20 minutes. Baste with the pan juices, then reduce the oven temperature to 350 degrees F and continue roasting until the skin is glazed and a thermometer inserted into a breast registers 160 degrees F, 20 to 25 more minutes. Transfer the chicken (on the rack) to a board. Pour the pan juices into a skillet; simmer over medium-high heat until reduced by half, about 5 minutes. Drizzle over the chicken.
  • Whisk the soy sauce, rice wine, hoisin sauce and honey in a bowl; set aside.

Steps:

  • Prepare the chicken: Preheat a grill to medium on one side. Combine the hoisin sauce, scallions, garlic, ginger, jalapeno, lime zest and juice, vinegar, and salt and pepper to taste in a mini food processor or blender; process until almost smooth. Season the chicken with salt; toss with the hoisin mixture in a large bowl.
  • Make the salad: Bring the vinegar, sugar and 1 1/2 teaspoons salt to a boil in a small saucepan, stirring. Remove from the heat; stir in 1/4 cup ice cubes until melted. Toss the cucumber and red onion in a serving bowl with the vinegar mixture; place in the refrigerator.
  • Grill the chicken over direct heat until the skin is crisp, 5 minutes per side, basting with extra marinade. Transfer to the cooler side of the grill; cover and grill until cooked through, 10 to 15 more minutes. Serve with the cucumber salad and lime wedges.

3/4 cup boiling water
4 green onions (green parts only), thinly sliced
2 tablespoons toasted sesame oil
6 to 8 boneless skinless chicken thighs (about 450 grams/1 pound)
Kosher salt
1 1/2 teaspoons Chinese five spice
2 teaspoons toasted sesame oil
1 teaspoon canola oil
1/3 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
2 tablespoons grated fresh ginger
2 garlic cloves, grated
3 tablespoons toasted sesame seeds
3 tablespoons rice wine vinegar
1 tablespoon honey
2 teaspoons fish sauce
1 teaspoon soy sauce

Steps:

  • For the pancakes: Combine the flour and salt in a large bowl and make a well in the center. Pour in the boiling water and stir with a wooden spoon until a shaggy dough forms. Turn the dough out onto a lightly floured work surface and allow it to cool slightly. Knead the dough until smooth, about 2 minutes, adding more flour if needed. Cover with a clean kitchen towel to rest for 30 minutes.
  • For the chicken: Meanwhile, preheat your oven to 375 degrees F (190 degrees C). Place a large nonstick skillet over medium-high heat. Pat the chicken dry with a paper towel. Season with salt and scatter with the five spice. Add the sesame and canola oil to the pan and sear the chicken for 3 to 4 minutes per side, or until golden brown. Remove the chicken from the skillet and transfer to a sheet pan.
  • Meanwhile, whisk together the hoisin, soy, vinegar, ginger, garlic and toasted sesame seeds in a small bowl. Drizzle over the chicken then transfer to the oven. Cook for 15 to 18 minutes, or until the glaze has thickened and the internal temperature of the chicken is 165 degrees F (75 degrees C).
  • For the pickles: Whisk together the vinegar, honey, fish sauce, soy sauce, sesame oil and sesame seeds in a large bowl. Add the carrots, cucumbers and green onions. Toss to coat and set aside.
  • For the pancakes, place a stainless steel or cast-iron skillet over medium-high heat. Lightly dust a work surface with flour. Cut the dough into 16 equal pieces, and cover with a clean kitchen towel to keep moist.
  • Slightly flatten a piece of dough into an oval approximately 10 centimeters by 5 centimeters (about 4 by 2 inches) and scatter about a teaspoon of green onions to cover the surface. Roll the dough up starting at one long side to form a tight cylinder. Coil the cylinder into a tight spiral, resembling something like a tiny cinnamon bun and gently press the dough in your hand again to form a small disc. Return the now green onion-filled dough under the towel to rest, while you prepare the other pieces in the same way.
  • Roll out a disc into a very thin circle on the floured work surface, approximately 12 to 14 centimeters (5 to 6 inches) round. Lightly oil both sides with sesame oil.
  • Add to the heated pan and cook for about 30 seconds per side. Transfer to a plate and cover with a clean kitchen towel to keep warm while you continue to roll and cook the remaining pancakes.
  • To serve, slice the chicken into 1 centimeter (about 1/2-inch) thick slices and transfer to a platter along with the pickles and green onion pancakes.

1 teaspoon finely grated peeled fresh ginger
4 garlic cloves, minced
1/2 teaspoon dried hot red pepper flakes
1/2 teaspoon Asian sesame oil
1 tablespoon soy sauce
1 tablespoon rice vinegar (not seasoned)
8 chicken thighs with skin and bones (2 3/4 pounds)

Steps:

  • Preheat oven to 500°F.
  • Whisk together all ingredients except chicken, then coat chicken all over with sauce. Arrange thighs, skin sides up in 1 layer without crowding, in a foil-lined large shallow baking pan (1 inch deep). Roast in upper third of oven until chicken is cooked through and glaze is brown, 20 to 30 minutes.

SPICY HOISIN MARINADE FOR CHICKEN

1 tbsp dry sherry
1 tsp cornflour
1 tbsp light soy sauce
2 tbsp hoisin sauce
½ tsp sugar
5 tbsp chicken stock
1 tbsp sunflower oil
1 large garlic clove , crushed
3 spring onions , chopped, green separated from white, plus 1 shredded for garnish
200g minced chicken
220g can water chestnut , drained and chopped
2-4 tbsp chopped fresh coriander
3 Little Gem lettuces , each broken into 8 individual leaves

Steps:

  • In a bowl, mix the sherry and cornflour to a smooth liquid. Add the soy and hoisin sauces, sugar and stock. Set aside.
  • Heat the oil in a wok or large frying pan, toss in the garlic and whites of the spring onions and stir fry for 2-3 minutes. Tip in the chicken and stir fry over a high heat until it colours, using the back of a spoon to break up any big lumps. Tip in the water chestnuts and stir fry for a further 1-2 minutes.
  • Push the chicken mixture to one side of the wok. Pour the sherry mixture into the empty part and stir for 1-2 minutes until it bubbles and thickens. Combine thoroughly, then leave to simmer for 5-10 minutes. Season and stir in the green spring onions and coriander.
  • Lay the lettuce leaves on serving plates, spoon in the warm mixture without overfilling, and scatter with the shredded spring onion. Suggest your guests roll the lettuce up around the filling to make a shape that's easy to eat as finger food.
  • Prepare ahead; you can cook the filling the day before, leave to cool and store in a plastic container in the fridge overnight. Reheat it well for 5-10 minutes until hot, stirring all the time and adding a splash of hot water if it's too dry.

Based on a recipe from my Chinese Cooking Class Cookbook. I think this is a great recipe that I sometimes serve over steamed rice. Regarding the TECHNIQUE TO CUT CHICKEN CHINESE-STYLE, it is recommended to use either a cleaver or poultry shears or a sharp knife to make easy work of it.

1 broiler-fryer chicken (3 to 4 pounds)
1 tablespoon cornstarch
1 cup water
3 tablespoons dry sherry
3 tablespoons cider vinegar
3 tablespoons hoisin sauce
4 teaspoons soy sauce
2 teaspoons instant chicken bouillon granules
1/2 cup cornstarch
vegetable oil (for frying)
2 teaspoons minced fresh ginger
2 medium onions, chopped
8 ounces fresh broccoli, cut into 1-inch pieces
1 red peppers or 1 green pepper, chopped
2 (4 ounce) cans button mushrooms, drained
vermicelli (optional)
red pepper, cut into matchstick pieces, for garnish

Steps:

  • TECHNIQUE TO CUT CHICKEN CHINESE-STYLE:
  • Rinse chicken.
  • On heavy cutting board, set chicken breast side up.
  • Cut in half lengthwise, veering slightly to one or other side of breastbone and backbone; you will have separated the chicken completely in half.
  • Remove and discard backbone (optional).
  • Raise each leg up slightly from breast section; cut through ball and socket joint to remove each leg. Cut through knee joint of each leg separating drumstick and thigh.
  • Pull each wing away from breast, cutting through the joint next to breast.
  • Cut each drumstick, thigh and breast piece crosswise into three pieces, cutting completely through bones.
  • Cut each wing into two pieces.
  • You should end up with 22 small serving-size pieces.
  • HOISIN CHICKEN:.
  • In small bowl, combine 1 tablespoon cornstarch, water, sherry, vinegar, hoisin sauce, soy sauce and bouillon granules; mix well. Set aside.
  • Add remaining ½ cup cornstarch in large bowl. Add chicken pieces and stir to coat well.
  • In large skillet or wok, heat oil over high heat to 375°F Add 1/3 of the chicken pieces, one at a time, to the hot oil; cook until no longer pink in center, about 5 minutes. Drain chicken on paper towels. Repeat until all chicken is cooked.
  • Discard all but 2 tablespoons oil from skillet. Add ginger and stir-fry 1 minute. Add onions and stir-fry for another minute. Add broccoli, red pepper and mushrooms and stir-fry for 2 minutes.
  • Stir cornstarch mixture and add to skillet. Cook and stir until sauce boils and thickens.
  • Return chicken to skillet. Cook and stir until chicken is thoroughly heated, about 2 minutes.
  • Serve over hot Vermicelli and garnish, if desired.
