BACON AND CHEDDAR WAFFLES

Steps:
- Preheat a waffle iron.
- In a small bowl, whisk the eggs until fluffy; reserve.
- Next, in a large bowl, mix together the flour, baking powder, sugar and salt. In a third bowl, whisk together the milk, oil and vanilla extract. Add the wet ingredients into the dry ingredients and mix just until combined. Add the bacon, Cheddar and reserved whisked eggs and mix until combined.
- Spray the waffle iron with nonstick spray. Pour in 1/4 cup of the batter and cook the waffles until golden brown. (The waffles can be kept in a low oven to keep warm while the others cook.) Repeat with the remaining batter. Serve the waffles with butter, syrup and/or fried eggs.
CORNBREAD-CHEDDAR WAFFLES WITH SCRAMBLED EGGS
Steps:
- Whisk the flour, cornmeal, sugar, baking powder, 1/2 teaspoon salt and 1 cup of the grated cheese in a large mixing bowl. In a separate mixing bowl, whisk 2 eggs, then whisk in the buttermilk and vegetable oil. Incorporate the wet ingredients into the dry ingredients and mix just until combined.
- Preheat a waffle iron and coat with cooking spray. Pour some of the batter into the waffle iron and cook until golden brown, about 5 minutes. Transfer the waffles to a wire rack set on a baking sheet. Repeat with the remaining batter.
- Meanwhile, whisk the remaining 8 eggs with the scallion in a large bowl. Melt the butter in a medium nonstick skillet over medium heat. Add the beaten eggs and gently stir with a rubber spatula until just set, about 5 minutes. Remove from the heat; cover to keep warm.
- Just before serving, preheat the broiler to low. Scatter the remaining 1 cup grated cheese over the waffles and broil just until the cheese melts, about 1 minute. Top the waffles with the scrambled eggs.

- In a medium bowl, beat 1 egg.
- Add: milk, sour cream, melted butter or margarine
- Stir in Bisquick baking mix, mix well.
- Fold in: cooked and crumbled bacon strips and cheddar cheese
- Spoon batter onto a hot waffle iron.
- Close waffle iron and cook until golden brown. (Will be done when steaming stops -- 4-5 minutes).
- Serve drizzled with: maple syrup OR fruit-flavored syrup.

- Spray electric waffle iron with cooking spray. Heat iron to medium heat.
- Meanwhile, combine first 4 ingredients in large bowl. Whisk remaining ingredients until blended. Add to flour mixture; stir just until blended. (Do not overmix.)
- Pour amount of batter directed by manufacturer onto grids of waffle iron. Close lid quickly. (Do not open until waffle is done.) Cook according to manufacturer's directions. When done, lift waffle off grid with fork. Repeat with remaining batter.
