PORK CHOPS WITH CHEESY SCALLOPED POTATOES
Pork chops, bacon and cheesy scalloped potatoes make a simple, family pleasing dinner in one dish.

Steps:
- Heat oven to 400°F. Heat 10-inch nonstick skillet over medium heat. Sprinkle pork chops with pepper; brown 3 minutes on each side.
- Spray 2 1/2-quart casserole with cooking spray. Stir sauce mix (from potato box), boiling water and half-and-half with whisk in casserole. Stir in cheese, potatoes (from potato box), green onions and thyme. Stir in 3 slices crumbled bacon.
- Place pork chops on potatoes in casserole.
- Cover; bake 25 minutes. Uncover; bake 5 to 10 minutes or until potatoes are tender, pork is no longer pink in center, and meat thermometer inserted in center of pork reads 145°F. Sprinkle with remaining bacon and, if desired, additional sliced green onions.

CHEESY POTATO GRATIN
Steps:
- Preheat the oven to 300 degrees F.
- Melt 4 tablespoons of the butter in a large, oven-safe high-sided skillet over medium-high heat. When the foam subsides, add the flour and cook, stirring constantly, until it has the consistency of wet sand, about 3 minutes. Remove from the heat and whisk in the milk, little by little.
- Put the saucepan over high heat and bring to a boil, whisking constantly. Lower the heat and whisk in 2 cups of the Cheddar, 2 cups of the Gruyere, the garlic, pepper and salt. Whisk until the cheese is melted, then stir in the nutmeg. Add the sliced potatoes to the pan. Scatter the remaining 2 tablespoons butter and the remaining 1 cup Cheddar and 1 cup Gruyere over the top.
- Bake in the oven for 45 minutes, then increase the oven temperature to 400 degrees F., and bake until the potatoes are fork-tender and the top is bubbly and golden brown, about 15 minutes more. (Cover the dish with foil if the top becomes too dark before the potatoes are tender.) Scatter the chopped parsley over the top, and serve.

- Preheat the oven to 400 degrees F. Butter a 9-by-13-inch baking dish with the butter.
- Dice the potatoes and place in the prepared baking dish.
- Combine the cream and milk in a bowl. Add the flour, salt and pepper. Whisk together until the flour is incorporated. Pour the cream mixture over the top of the potatoes.
- Cover with foil and bake for 20 minutes. Uncover and top with the cheeses. Bake for an additional 30 minutes. Remove from the oven and allow to sit for 5 minutes. Sprinkle over the chives and serve.

- Place cream of onion soup, milk and Kraft Velveeta cheese in a saucepan. Warm until cheese is melted.
- In a 13x9x2 pan, place sliced potatoes in bottom of pan. Pour soup and cheese mixture over potatoes. Arrange pork chops on top.
- Cover with foil paper and bake for 1-1/2 hours in a 350 degree oven.

- Preheat oven to 350 degrees F (175 degrees C).
- Place the sliced potatoes and sliced onion in a greased 9x13 inch baking dish; mix gently. Cover the potatoes and onions with cheese. Fill dish with milk halfway. Place butter in several places on top of the cheese. Place the pork chops on top. Salt and pepper to taste. Bake 60 minutes or until potatoes are tender. Turn pork chops over halfway through cooking.

- Preheat the oven to 375 degrees F.
- Melt the butter in a large saucepan over medium heat. Add the onions, then season with salt and cook until the onions are soft and very aromatic, 5 to 7 minutes. Add the garlic and cook for another 2 to 3 minutes. Whisk in the flour and cook until the roux is the consistency of wet sand, 3 to 4 minutes. Whisk in the milk, bring to a boil and cook for 5 to 6 minutes. Turn off the heat and whisk in the mustard and cheeses. Season with salt to taste to make sure it is delicious!
- Place a quarter of the potatoes in the bottom of a 9-by-13-inch baking dish. Ladle a quarter of the cheese sauce evenly over the potatoes. Repeat this process 3 or 4 more times with the remaining potatoes and sauce, pushing down the potatoes between each layer and topping with the sauce. Place the baking dish on a sheet tray lined with foil. Bake, rotating the dish halfway through, until the potatoes are soft when poked with a fork, 50 to 60 minutes. Tent with foil if the top is getting too brown.
- Let sit for 15 to 20 minutes before serving.
- Hot cheesy potatoes!
