SCRAMBLED EGG MUFFINS
I got this recipe from a magazine. It's very easy to make and is great for any meal. Kids love them.

Steps:
- Brown sausage; drain well.
- Preheat oven to 350°.
- In a bowl, beat eggs, then add onion, green peppers, salt, pepper and garlic powder.
- Stir in sausage and cheese.
- Spoon 1/3 cupfuls into greased muffin cups.
- Bake at 350° for 20-25 minutes or until a knife inserted comes out clean.

- Preheat oven to 350°. In a large skillet, cook sausage over medium heat until no longer pink; drain., In a large bowl, beat eggs. Add onion, green pepper, salt, garlic powder and pepper. Stir in sausage and cheese., Spoon by 1/3 cupfuls into greased muffin cups. Bake until a knife inserted in the center comes out clean, 20-25 minutes.Freeze option: Cool baked egg muffins. Cover and place on waxed paper-lined baking sheets and freeze until firm. Transfer to freezer container; return to freezer. To use, place in greased muffin pan, cover loosely with foil and reheat in a preheated 350° oven until heated through. Or, microwave each muffin on high 30-60 seconds or until heated through.

- Preheat oven to 400 degrees. Spray a baking sheet with nonstick cooking spray; place bacon on prepared baking sheet and transfer to oven. Bake until crisp, 10 to 15 minutes.
- Meanwhile, in a small bowl, whisk together egg whites, egg, chickpeas, and milk. Coat 4 cups in a 6-cup standard muffin tin with nonstick cooking spray. Divide egg mixture evenly among prepared cups. Remove bacon from oven and cut with kitchen shears or thinly slice into 1/2-inch pieces. Sprinkle bacon over eggs and top each with 1 teaspoon Parmesan.
- Transfer to oven and bake until eggs puff and are cooked through, 12 to 15 minutes. Remove egg muffins from muffin pan and let cool slightly before serving.
ENGLISH MUFFIN WITH SCRAMBLED EGG AND HAM
Scrambled egg on toast is a real english breakfast/snack thing, and this is just a variation on that. I like anything on english muffins! They're my comfort food. I like to have this when my husband's not home for dinner and I don't feel like doing 'real' cooking.

- Crack the eggs into a bowl. Whisk lightly and season with salt and pepper.
- Put your muffins in the toaster, ready for action.
- Melt half the butter in a small saucepan over a medium heat until bubbling, then tip in the eggs.
- Stir eggs continuously with a wooden spoon, getting right into the edges. Cook until the runny egg starts to thicken.
- Turn the heat off when the eggs are still slightly undercooked - they will keep on cooking in the warm pan while you're toasting and buttering your muffins.
- Split muffins in half and place in your toaster. Toast to your preferred doneness.
- Place the buttered muffin halves onto four individual plates and cover each one with a spoonful of scrambled egg.

- Grease 6 tin muffin tin.
- Whisk 8 large eggs in bowl with water.
- Add Salt and Pepper to taste.
- Pour in equal amounts into muffin tins.
- Bake 15 minutes.
- Remove from oven.
- Crumble 1/2 of a wedge of Laughing Cow LIGHT Swiss cheese on each muffin, sprinkle tops with bacon bits.
- Return to oven for an additional 10 minutes, or until egg mixture is finished.
- To reheat place in microwave on a microwave safe plate for 45 seconds.

- Heat the oven to 200C/180C fan/gas 4. Brush half the oil in an 8-hole muffin tin. Heat the remaining oil in a frying pan and add the broccoli, pepper and spring onions. Fry for 5 mins. Set aside to cool.
- Whisk the eggs with the milk, smoked paprika and half the cheese in a bowl. Add the cooked veg. Pour the egg mixture into the muffin holes and top each with the remaining cheese and a few chives, if you like. Bake for 15-17 mins or until golden brown and cooked through.
