1 lb dry navy beans (or pinto beans)
6 cups water
2 tablespoons salt
1 tablespoon vegetable oil
1/2 lb uncooked bacon (diced)
2 cloves garlic (minced)
1 medium onion (diced)
1/4 cup tomato paste
1/4 cup dark molasses
1/4 cup coconut sugar (or brown sugar)
2 tablespoons balsamic vinegar
1 tablespoon Worcestershire sauce
2 teaspoons chili powder
Salt and pepper to taste

Steps:

  • Place dry beans in a large pot. Pour water over top and stir in salt. Cover the pot and allow the beans to soak overnight.
  • The next day, drain beans reserving 4 cups water. Rinse beans and set aside.
  • Meanwhile, heat oil in a large saucepan over medium-high heat until shimmery. Add diced bacon, garlic, and onion to pan and stir frequently until bacon begins to crisp, about 8-10 minutes.
  • Reduce heat to medium and whisk tomato paste, molasses, sugar, vinegar, sauce, and chili powder into mixture. Bring to a simmer, stirring constantly and then stir in rinsed beans and 4 cups reserved water.
  • Cover beans and bring to a low boil over medium-high heat. Remove from heat and transfer to a 4-qt slow-cooker. Cook beans on high 4-5 hours until beans are soft and sauce begins to thicken. Keep beans in slow-cooker on "warm" until ready to serve. (beans will thicken up even more the longer they sit)

2 smoked ham hocks (about 1/2 pound each)
2 cups water
1 medium onion, chopped
2 teaspoons garlic powder, divided
2 teaspoons onion powder, divided
1 cup barbecue sauce
3/4 cup packed brown sugar
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 teaspoons hot pepper sauce, optional

Steps:

  • Rinse and sort beans; soak according to package directions. Drain and rinse beans, discarding liquid., In a 4-qt. slow cooker, combine beans, ham hocks, water, onion, 1 teaspoon garlic powder and 1 teaspoon onion powder. Cook, covered, on low 8-10 hours until beans are tender., Remove ham hocks; cool slightly. Cut meat into small cubes, discarding bones; return meat to slow cooker. Pork and beans are cooked together in a slow cooker for mutually beneficial results (If you don't have a slow cooker, you can do it in a pot in the oven.) As the pork shoulder and barbecue sauce braise in the oven, the sauce soaks up the pork juices while the pork tenderizes. Then, beans are added to soak up the deeply concentrated sauce. The recipe uses store-bought barbecue sauce enhanced with the smoky heat of canned chipotles in adobo and brown sugar, which helps glaze the pork. Because every barbecue sauce is different, taste and adjust yours as needed. (For a more acidic sauce, add apple cider vinegar with the beans, or you can increase the sweetness with added sugar.) To serve, slice the pork or shred it into pulled pork.

Steps:

2 tablespoons kosher salt
1 pound small dried beans, such as great northern, navy, or pinto beans, picked over and rinsed
8 ounces sliced bacon, cut into 1/2-inch strips
1 1/2 cups finely minced yellow onion (about 1 large onion)
2 tablespoons finely diced seeded jalapeño (about 1 medium pepper)
1/4 cup finely diced green bell pepper
1 tablespoon minced garlic (about 3 medium cloves)
2 cups chicken stock or low-sodium broth
1 1/2 cups ketchup
1/2 cup dark brown sugar
1/4 cup honey
1/4 cup molasses
2 tablespoons yellow mustard
2 tablespoons apple cider vinegar
1 tablespoon barbecue rub
1 tablespoon hot sauce

Steps:

  • In a large container, whisk together 2 quarts water and salt until salt has dissolved. Add beans, cover, and let stand overnight at room temperature. Drain and rinse beans.
  • Place a large dutch oven over medium-high heat. Add bacon and cook until fat has rendered and bacon has crisped, 7-10 minutes. Transfer bacon to a paper towel-lined plate, leaving as much fat in dutch oven as possible.
  • Add onion to dutch oven and cook, stirring occasionally, until onion softens and begins to brown around the edges, about 7 minutes. Stir in green pepper, jalapeño, and garlic and cook until fragrant, about 1 minute. Stir in 3 cups of water, chicken stock, reserved bacon, and beans. Bring to a boil, then reduce heat to low and simmer for 1 hour. Preheat oven to 300°F while beans are simmering.
  • Stir in ketchup, brown sugar, honey, molasses, mustard, vinegar, barbecue rub, and hot sauce. Cover and transfer to oven. Cook beans for 4 hours, stirring occasionally. Remove cover and cook until beans are tender throughout and sauce has thickened, about 1 hour longer. Remove from oven and let cool for 15 minutes. Season with salt. Serve immediately; alternatively, store in an airtight container in the refrigerator for up to 1 week, or freeze. Reheat before serving.
