Steps:
- In a large skillet over medium-high heat combine potatoes, green beans, thyme, pepper, Worcestershire sauce and 3/4 cup of broth. Bring to a boil; reduce heat to medium-low, cover and simmer 15 to 20 minutes or until vegetables are tender.
- In a small bowl blend remaining broth and cornstarch. Stir in parsley; add to potato mixture. Cook, stirring, until bubbly and thickened.

Steps:
- Wash the potatoes under cool running water. Set aside.
- Place a couple inches of cold water in your sink. Add the green beans.
- Swish the beans around to wash them, removing any leaves or debris.
- Lift the beans out of the wash water. Place in a colander to drain.
- One at a time, snap the ends off the beans, removing any strings as you go.
- Discard the end pieces.
- Snap each bean into bite sized pieces.
- Place the beans in a large stock pot and cover with water by about 3 inches.
- Add the red potatoes. Cut them into quarters if preferred.
- Add the bacon grease.
- Add the sugar.
- Place on stove top over Medium High heat and bring to a boil.
- Reduce the heat to Medium and let cook for one hour.
- Add the black pepper.
- Add the salt. Stir well.
- Continue to cook the beans and potatoes until done as desired.
- Enjoy!
GREEN BEANS AND POTATOES

- Combine all ingredients in a large pot, bring to a boil, then turn to medium low and cook about 1 1/2 hours until potatoes are done and water has cooked down. You can also do this in the crockpot and let cook on low 6 to 7 hours or high 4 hours.
WARM DIJON POTATO SALAD WITH GREEN BEANS
Steps:
- Place the potatoes in a large pot and cover with cold water by at least a couple inches. Salt the water generously, bring to a boil and cook until the potatoes are fork tender, about 20 minutes. Drain and rinse under cold water.
- Bring another pot of salted water to a boil and throw the beans in just for a minute or two until they turn bright green. Strain them and run them under cold water to stop the beans from cooking.
- In a mixing bowl combine the remaining ingredients and whisk until smooth.
- Cut the potatoes in half lengthwise and then into roughly 1 inch chunks. Cut beans in half. Toss the potato chunks in the dressing and then toss in the green beans and the parsley.

Steps:
- Lightly scrub potatoes.
- Cut bacon into a small dice and brown in skillet on medium-low heat. Do not cook to a full crisp.
- While bacon is cooking, slice potatoes into small rounds about 1/4 inch think.
- When bacon is done remove with slotted spoon. Drain skillet of all but 1 tsp bacon fat. Add oil and increase heat to medium-high.
- Add potatoes and toss to coat. Saute while tossing occasionally until potatoes are slightly cooked. Approximately 5 minutes.
- Add fresh beans and toss lightly. Cover and reduce heat to medium-low. Cook for 4 minutes more.
- Uncover, add balsamic vinegar & reserved bacon. Toss and serve immediately.

COUNTRY STYLE GREEN BEANS WITH RED POTATOES
These green beans and potatoes are a spectacular dish. I have been making them for years in large quantities for special events at my church. The smoked turkey tails make an excellent broth that is seasoned beyond words. Let the meat cook until it falls off the bone for the ultimate flavor, at least 2 hours.

- Place the turkey tails and onion into a 4 quart Dutch oven and fill half way full with water. Season with salt, pepper and garlic powder. Bring to a boil, then cover and simmer over low heat until meat falls off the bones, about 2 hours. Remove the bones and skin; return the meat to the pot. Discard bones and skin.
- Add the green beans to the Dutch oven and simmer for 20 minutes, then add the potatoes. Simmer for 10 to 15 minutes more, or until they can be easily pierced with a fork.

GREEN BEANS WITH NEW POTATOES
This is a Paula Deen recipe, but it is the way I learned to cook beans nearly 50 years ago. Usually I cut my potatoes in half instead of peeling the strip from them because its faster and easier. This makes such good beans that you'll be wiggling like a speckled pup.

- Remove the ends from the beans. Snap the beans in 2 pieces, place into a colander, wash, and set aside to drain.
- Meanwhile, in a large cast iron Dutch oven, lightly brown the salt pork in the bacon grease over medium heat, turning often, for approximately 10 minutes. Toss the green beans into the pot, stirring them with a wooden spoon to coat well with the pork fat. Add the broth, salt, pepper and garlic powder. Cook over medium-low heat, covered tightly, for approximately 30 minutes, or until the beans are half done.
- While the beans are cooking, peel a center strip from each new potato with a potato peeler. At the end of 30 minutes, add the potatoes and onion to the beans; add 1/4 cup more broth, if needed. Cook, covered tightly, until the potatoes are tender, approximately 25 to 30 minutes, periodically checking the pot to make sure a small amount of liquid remains. When the potatoes are tender, tilt the lid slightly, off to the side of the pot, and continue to cook until the green beans are wilted, approximately 15 minutes. While cooking, add the butter and season with more pepper if needed.

Steps:
- Preheat oven to 400 degrees.
- Spray a 13 x 9 inch casserole with non-stick cooking spray and set aside.
- Brush mushrooms clean and trim the ends of the stems.
- Cut the mushrooms in half through the stem.
- Cut potatoes into 1-inch pieces.
- Cut the onion into wedges approximately 1/2 inch thick.
- Seperate the garlic into cloves and peel.
- Trim ends from green beans, wash and break into 1-inch lengths.
- Set green beans aside.
- In prepared casserole, combine the mushrooms, potatoes, garlic and onion.
- Drizzle with olive oil, tossing to coat evenly.
- Roast vegetables until they begin to brown on the edges, about 30 minutes.
- Add the broken green beans to casserole dish and carefully turn and rearrange vegetables in an even layer.
- Sprinkle with 1/4 teaspoon salt and a few grinds of pepper.
- Return to oven and continue to roast until the vegetables are browned and tender when pierced with a knife, about 15 minutes longer.
- Sprinkle the grated Parmigiano-Reggiano and thyme over the vegetables.
- Return to oven and cook for 5 minutes longer to melt the cheese.

Couldn't find the ready-made frozen version in the grocery store so I came up with these roasted potatoes with green beans and mushrooms myself. Even my eight-year-old likes it.

- Preheat the oven to 450 degrees F (230 degrees C). Grease a shallow baking dish.
- Mix soup mix and 1/4 cup olive oil together in a large zip-top bag. Add potatoes and coat well. Transfer to the prepared baking dish.
- Roast in the preheated oven, uncovered, for 30 minutes. Mix in green beans and portobello mushrooms. Sprinkle in carrots and drizzle with remaining 1 tablespoon olive oil. Continue to roast until beans and potatoes are tender, about 10 minutes more.
