6 ounces spumanti, Astt, to taste
1 ounce peach schnapps, to taste
frozen peaches, sliced
ice

Steps:

  • Add a few frozen peach slices and liquor to blender and puree. The mixture should be taking on a slushy type texture.
  • Taste and add more liquor or peaches as needed. Add ice and continue to blend until a nice frozen texture is acquired. Pour into glasses and garnish with peaches.

1 tablespoon freshly squeezed lemon juice
1 teaspoon sugar
1 bottle chilled prosecco sparkling wine

Steps:

  • Place the peaches, lemon juice, and sugar in the bowl of a food processor fitted with a steel blade and process until smooth. Press the mixture through a sieve and discard the peach solids in the sieve. Place 2 tablespoons of the peach puree into each Champagne glass and fill with cold prosecco. Serve immediately.

Steps:

  • If using fresh peaches, remove the pit from all 3 peaches. Dice 2 of the peaches and add to the bowl of a food processor. Add the sugar and puree until smooth, then press through a fine mesh sieve. Chill until ready to use.
  • Thinly slice the remaining peach.
  • Place 1 to 2 tablespoons of peach puree into each of 4 champagne flutes. Top the glasses with prosecco and drop in a peach slice before serving.

1/4 cup superfine sugar, plus more for garnish
1/4 cup water
1 bottle Prosecco (750 ml or 3 1/3 cups), chilled

Steps:

  • With a box grater, grate peaches into a pitcher. Add the sugar and water to the peaches and place pitcher in refrigerator until chilled and sugar has dissolved, or until needed.
  • When ready to serve, pour the superfine sugar on a plate and invert a chilled Champagne glass in the sugar to coat rim. Pour about a 1/8th of the peach mixture into the prepared glass and top off with Prosecco. Stir gently and serve.

1/4 c sugar
3 c frozen or fresh peach slices
1 bottle prosecco or champagne chilled

Steps:

  • 1. Microwave the water and sugar on high for 1 minute or just long enough to dissolve the sugar. Let it sit and cool for about 15 minutes if using fresh peaches or 5 minutes if using frozen peaches.
  • 2. Using a food processor or blender pulse the peeled peaches on high until pureed; drizzling in the sugar/water mixture as you go.
  • 3. Place 2 heaping tablespoons of the pureed peaches in a champagne flute. Pour the same amount of the chilled champagne into the glass. Using a cocktail stirrer stir just enough to combine.

2 large peaches, cut into chunks
1/2 cup sugar
2 teaspoons lemon juice
1 bottle champagne or 1 bottle sparkling wine
1 large peach, cut into 6 slices
6 sprigs mint

Steps:

  • Combine peach chunks, sugar, and lemon juice.
  • Allow to sit 30 minutes.
  • Bring to a boil, stirring in sugar until dissolved.
  • Reduce heat to low, cover and cook 15 minutes.
  • Remove from heat and allow to cool.
  • Pour through a strainer, pressing solids to extract flavor and juices.
  • Chill and discard solids.
  • Place about 1 tbsp of the peach syrup in a flute and fill with champagne.

This fantastic jam recipe originally came from a Better Homes and Gardens canning magazine, as did the tip about making peach bellini floats with it. I added the butter to help tame the foaming. Use your tallest stockpot for this recipe - even with the butter it foams up a lot! Do not increase the amount of butter as this could lower the acidity of your recipe too much and make it unsafe for canning. Bottled lemon juice has a more consistent acid level then fresh lemon juice and is the preferential choice for canning recipes. Cooking time listed is processing time and this will vary depending on your altitude (consult a trusted source such as the Ball Blue Book for an altitude adjustment chart).

7 1/2 cups sugar
3 cups finely chopped peeled and pitted peaches
1 cup prosecco (or any sparkling white wine)
2 tablespoons bottled lemon juice
3 ounces liquid pectin
1/2 teaspoon butter

Steps:

  • Combine sugar, peaches, Prosecco and lemon juice in a very large stockpot. Bring to a full rolling boil, stirring constantly until the sugar dissolves.
  • Quickly stir in the pectin and return to a full rolling boil, stirring constantly. Boil hard for 1 minute, stirring constantly.
  • Remove from heat and stir for 5 minutes to eliminate the foam and help evenly distribute the fruit throughout the jam.
  • Fill hot, sterilized half pint canning jars, leaving 1/4-inch headspace.
  • Process jars in a boiling water bath canner for 5 minutes, adjusting for altitude.
  • The jars may need to sit for up to 2 weeks before full gel is acheived.
  • *To make a peach bellini float stir some of this jam into soda water and top with vanilla ice cream!

Milestone's has this wonderful peach bellini (kind of like a slushy) that is full of flavour. We think we have come up with a perfect combination. I use a blender but a slushy machine would be awesome. I freeze a bunch of batches of the 7 Up/Peach mixture and take them out when they are almost frozen but still slushy.
