2 cups water
1-1/2 cups 2% milk
1/2 teaspoon salt
2 cups old-fashioned oats
1/2 cup butter, cubed
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
Dash ground ginger
Dash ground nutmeg
2 medium firm ripe bananas, sliced
1/2 teaspoon vanilla extract
1/2 teaspoon rum extract
Optional toppings: Cinnamon sugar, sliced ripe bananas and sweetened whipped cream

Steps:

  • In a large saucepan, bring water, milk and salt to a boil. Stir in oats; cook 5 minutes over medium heat, stirring occasionally. Cover and let stand., In a small heavy saucepan, melt butter over medium heat. Stir in brown sugar and spices; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes or until slightly thickened. Add bananas; cook, stirring gently, until bananas are glazed and slightly softened, 1-2 minutes., Remove from heat; stir in extracts. Stir banana mixture into oatmeal. Spoon oatmeal into serving bowls; add toppings of your choice.

Steps:

  • Cook oatmeal with water, salt & rum extract according to package directions.
  • Slice banana lengthwise and again in half. You will have four slices. Brown the banana slices using nonstick spray in a nonstick pan.
  • Sweeten oatmeal to taste. Top with sauteed bananas.

1 can (13.66 ounces) coconut milk
1 cup packed brown sugar
1 cup water
1/4 cup molasses
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon apple pie spice
1/4 cup butter, cubed
3 large ripe plantains, cut into 3/4 inch slices

Steps:

  • Spoon 6 tablespoons cream from top of coconut milk and set aside. Pour remaining coconut milk into a large saucepan. Stir in brown sugar, water, molasses, vanilla, salt and pie spice. Bring to a boil. Reduce heat; simmer, uncovered, until reduced by half, 25-30 minutes. Meanwhile, in a large cast-iron or other skillet, melt butter over medium-low heat. Add plantains. Cook, stirring gently, until glazed and slightly softened, 3-5 minutes. Divide plantains among 6 bowls; drizzle with syrup. Top with reserved coconut milk cream.

Oh wow! If you like 99 bananas schnapps liquoer, and you like Banana's foster... you're gona LOVE this oatmeal! If there is only two of you... cut the recipe in half, but its so good you'll want to have friends in for brunch! This is my creation, and I do believe it is my all time best creation yet! If you don't have divinci's syrup, I'm sure it will still be great without it. The amount of water is the amount that works for my oatmeal.. so use the amount required for your particular oatmeal.

1 3/4 cups water
1/4 cup brown sugar cinnamon syrup (Divinci's)
1/2 cup brown sugar (brown sugar blend works also)
3 tablespoons butter
1 large banana
1/4 cup Coffee-Mate cinnamon vanilla liquid creamer (for correct flavor it must be this)
banana Schnapps
chocolate whipped cream (must be chocolate..it makes the dish comes in a can)

Steps:

  • cook oatmeal in amount of water called for on your oatmeal, and add the divinci syrup.Slice the banana into the oatmeal so it can cook into the oats.Cook,over low heat,for 6-8 minutes, stirring frequently.
  • Add rest of ingredients, except the whipped topping. Bring to a gentle boil, and remove.
  • Top with a generous serving of chocolate flavored whipped topping which will melt into the oatmeal giving it a delicate but delicious chocolate flavor.
