2 lbs white fish fillets, cut in portions
1/2 cup orange juice
3 tablespoons butter, melted
1 teaspoon grated orange rind
1/2 teaspoon parsley

Steps:

  • Preheat oven to 400F degrees.
  • Place fish in baking pan.
  • Mix orange juice and butter.
  • Pour half this mixture over the fish.
  • Sprinkle the rind over.
  • Bake for 10 minutes.
  • Pour remaining orange mixture over.
  • Bake another 10 minutes.
  • Sprinkle with parsley.

6 fish steaks, such as halibut or salmon, each about one-half inch thick with skin on and center bone left intact, about 2 1/4 pounds total weight
1/2 cup flour
Salt to taste, if desired
Freshly ground pepper to taste
1/2 cup olive oil
1 large clove garlic, peeled
1/2 cup freshly squeezed orange juice
1 tablespoon vinaigrette sauce (see recipe)
Avocado slices for garnish
Maltaise sauce (see recipe)

Steps:

  • Dredge each fish steak on both sides in flour seasoned with salt and pepper. Shake off excess.
  • Heat the oil in a skillet large enough to hold the steaks in one layer without crowding. Crush the garlic and add it. Add the fish steaks and cook on one side until nicely browned, about two to three minutes. Turn the pieces and cook about two to three minutes or until the steaks are cooked through.
  • Transfer the steaks to a serving dish.
  • Combine the orange juice with the vinaigrette and stir. Pour over the fish steaks and let stand at room temperature. Arrange the avocado slices around the fish steaks, spooning the orange juice mixture over the slices.
  • Serve with maltaise sauce on the side.

¼ cup orange juice
¼ cup soy sauce
2 tablespoons olive oil
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
1 clove garlic, minced
½ teaspoon chopped fresh oregano
½ teaspoon ground black pepper
4 (4 ounce) tuna steaks

Steps:

  • In a large non-reactive dish, mix together the orange juice, soy sauce, olive oil, lemon juice, parsley, garlic, oregano, and pepper. Place the tuna steaks in the marinade and turn to coat. Cover, and refrigerate for at least 30 minutes.
  • Preheat grill for high heat.
  • Lightly oil grill grate. Cook the tuna steaks for 5 to 6 minutes, then turn and baste with the marinade. Cook for an additional 5 minutes, or to desired doneness. Discard any remaining marinade.

4 salmon steaks (a total of about 2 pounds)
2 tablespoons olive oil
3 tablespoons fresh tarragon leaves
Freshly ground pepper
2 tablespoons unsalted butter
2 shallots, minced
2 ripe tomatoes, peeled, seeded and diced
1/2 cup freshly squeezed orange juice
1/2 cup dry white wine
Coarse salt to taste

Steps:

  • Wipe the steaks dry with paper towels and sprinkle with olive oil, one tablespoon tarragon leaves and pepper. Leave to marinate for one hour.
  • Meanwhile, preheat broiler to high.
  • Melt the butter and soften the shallots without browning. Add the tomatoes, orange juice and white wine and reduce by half, over high heat. Season to taste with salt and pepper and set aside.
  • Broil the fish for three to five minutes on each side. Place on a heated platter and pour the sauce on top. Sprinkle with remaining tarragon and serve.

Grilled Swordfish Steaks With Orange Thyme Sauce image

2 swordfish steaks (about 2 to 2 1/2 pounds in all)
3 tablespoons olive oil
2 tablespoons unsalted butter
1 shallot, minced
1 clove garlic, minced
2 medium-ripe tomatoes, peeled, seeded and chopped
1/4 cup fresh thyme leaves
2/3 cup fresh orange juice
1/4 to1/2 cup dry white wine
Coarse salt and freshly ground pepper to taste

Steps:

  • Wipe the swordfish steaks dry with paper towels. Coat on both sides with two tablespoons olive oil. Set aside.
  • Heat the remaining olive oil in a skillet with one tablespoon butter. Add the shallots and garlic and cook until soft. Add the tomatoes and thyme and cook for three minutes.
  • Add the orange juice and white wine and reduce slightly, cooking for five more minutes. Season with salt and pepper and set aside until the fish is about to be grilled.
  • Preheat coals for grilling. Cook the fish about five minutes on each side, depending on the thickness of the steaks. Meanwhile, bring the sauce to a boil. Off heat, stir in the remaining butter. Pour the sauce over the steaks and serve.

1/2 cup orange juice
1/4 cup honey
1/4 cup soy sauce
2 tablespoons fresh lemon juice
1 teaspoon garlic powder
1/2 teaspoon ground ginger
4 6-ounce swordfish steaks (each about 3/4 inch thick)
Cooked white rice

Steps:

  • Combine orange juice, honey, soy sauce, lemon juice, garlic powder and ginger in 8x8x2-inch glass baking dish and stir. Add fish and turn to coat. Let marinate at room temperature 1 hour, turning occasionally.
  • Preheat broiler. Remove fish from marinade; place on broiler rack. Transfer marinade to small saucepan and boil 1 minute. Broil fish until just opaque in center, basting occasionally with marinade, about 4 minutes per side. Transfer fish to plates and serve with rice.

3/4 cup orange juice
1/4 cup honey
1 tablespoon lime juice
1 tablespoon soy sauce
1 teaspoon minced garlic

1 beef flank steak (1 pound)

Steps:

  • In a small bowl, combine first six ingredients. Reserve 1/2 cup mixture for serving. Add oil and ginger to remaining orange sauce; pour into a shallow dish. Add flank steak and turn to coat. Cover and refrigerate at least 1 hour or overnight. Cover and refrigerate reserved marinade., Drain and discard marinade from steak. Place steak on a broiler pan. ½ cup fresh orange juice
1 tablespoon grated fresh ginger
2 teaspoons sesame oil
2 tablespoons light soy sauce
1 tablespoon cornstarch
2 tablespoons water

Steps:

  • In a non-reactive shallow dish, combine the swordfish with the orange juice, ginger, sesame oil, and soy sauce and marinate for 30 minutes.
  • Prepare an outside grill with an oiled rack set 6 inches above the heat source.
  • Drain and reserve the marinade. Grill the swordfish for 6 to 7 minutes per side until the swordfish is opaque in the center.

1 large orange roughy fillet (mine was a little over 1/2 pound)
pepper
1 cup orange juice
2 tablespoons dried lavender
2 carrots, peeled and cut into julienne stripes
3 scallions, sliced into julienne strips
1 teaspoon peanut oil
1 cup white wine
2 tablespoons orange liqueur (I skipped the liqueur) (optional)

Steps:

  • Pepper both sides of the fish.
  • Pour orange juice in a measuring cup (I used ready-made but imagine freshly squeezed from 2 oranges will be so much better), stir in lavender and white wine and set aside.
  • Heat peanut oil (or use unsalted butter) in small skillet, stirring to coat until tender (5 minutes).
  • Meanwhile in a large skillet, suitable for poaching fish, add orange juice mixture and bring to a boil over medium high heat. Add fish and lower heat to a simmer until fish is tender and flakes with a fork (10 - 15 minutes). Remove fish to a platter and keep warm.
  • Add orange liqueur, if using, to pan and turn up heat and reduce by half. Return fish to pan until heated through.
  • Place fish on plates and top with vegetables, spooning sauce over fish.

Steps:

  • Whisk 2 tablespoons orange juice and cornstarch in small bowl to blend. Heat 1 tablespoon oil in medium nonstick skillet over medium-high heat. Add onion, ginger, lemongrass, garlic and crushed red pepper; sauté until onion is light golden, about 3 minutes. Add 3/4 cup orange juice, stock and soy sauce and boil until reduced to 3/4 cup, about 4 minutes. Whisk in cornstarch mixture; boil 1 minute. Remove from heat. Season sauce to taste with salt and pepper. Brush tuna steaks with olive oil. Coat each side of each tuna steak with 1 teaspoon sesame seeds, pressing gently to adhere.
